    • 1/4 cup Chilli Flakes (optional)
    • 1 14oz/400g can of Good Quality Skinned Plum Tomatoes (roughly chop in can with knife)
    • 1/2 small White Onion, grated
    • 1-2 cloves of Garlic, grated/minced
    • 1 tbsp Tomato Puree (Tomato Paste in the US)
    • 1 tbsp Olive Oil
    • 1/2 tsp Dried Oregano
    • 1/2 tsp Dried Basil
    • In a medium-sized saucepan, heat 1 tablespoon olive oil over low-medium heat until shimmering. Add the grated onion and garlic and cook until the onions and garlic are just beginning to brown (careful, garlic burns quickly and goes bitter). Fry for a few minutes after adding 1 tablespoon tomato puree.
    • After you’ve added the tomatoes, swish the can around with a little water and add it as well. 1/4 teaspoon oregano, 1/2 teaspoon basil, sugar, and 1/4 teaspoon salt, black pepper, and chilli flakes to a large mixing bowl (optional). Bring it to a boil after giving it a thorough stir. Reduce the heat to low and continue to cook for 30-40 minutes, or until the sauce is lovely and thick, stirring regularly, with the lid on (slanted to allow some steam to escape).
    • If the sauce thickens excessively, thin it down by adding 1 tablespoon at a time of hot water. If the sauce is still runny, reduce the heat to low and leave the lid off while continuing to cook. Taste for seasoning and make any necessary adjustments. Alternatively, blend until smooth if desired.
