    To Assemble

    • Place the shiso leaves on a serving plate and set aside. Place a cookie cutter on top of a shiso leaf after dipping it in a dish of water (to prevent the rice from sticking to it).     • Fill the cucumber-wrapped sushi with your preferred toppings and serve immediately. I use a cucumber cup to hold amaebi (sweet shrimp), and I arrange a few of pieces from the outside corners to the center so that it resembles a flower.
    • Sashimi-grade fish should be sliced perpendicular to the muscle (the white line seen on the fish) and placed a few pieces in the cucumber cup.
    • Fill the cucumber cup halfway with the tuna mixture. Add lemon slices and kaiware daikon radish sprouts to finish the meal. Serve as soon as possible.

    I don’t advocate storing sashimi-grade fish and shrimp for more than 24 hours in the refrigerator. Keep them refrigerated until you’re ready to serve them.
