  • The following ingredients are required: 1 large pizza dough
  • 2 tablespoons extra-virgin olive oil

  • 1/3 cup freshly grated Pecorino Romano or parmesan cheese
  • 1/8 teaspoon dried oregano, dried thyme

Optional Arugula topping:

  • Arugula leaves (about 2 cups)
  • 1 tablespoon lemon juice
  • a sprinkling of salt and pepper
  • Take the pizza dough and roll it out to the desired size. Prebake for 5 minutes at 425 degrees F in the oven
  • remove from oven and brush with olive oil and chopped garlic
  • serve immediately.
  • Combine the ricotta, salt, pepper, and herbs in a small mixing bowl until well combined. Spread the mixture onto the pizza in a thin layer across the surface. Thin slices of fresh mozzarella and half of the pecorino cheese should be layered on top.
  • Bake for 10-15 minutes at 425 degrees F, or until the cheese is melted and bubbling
  • Bake for 15 minutes, then remove from the oven and top with the remaining pecorino and crushed red pepper flakes, if preferred.
  • Optional: Toss the arugula with the lemon juice, salt, and pepper to taste and serve. Just before serving, place the toppings on the pizza.
