How Papa John’s Pizza Is Really Made

    1. Photograph courtesy of Joe Raedle/Getty Images It is said that John Schnatter started Papa John’s in a broom closet behind his father’s restaurant, in Jeffersonville, Indiana, in 1984.

    5. It has gone through a number of transformations, the most significant of which being the departure of founder and CEO John Schnatter from his position as chairman and CEO.
    6. Several months later, towards the end of 2019, Schnatter complained that the pizza under the new management wasn’t up to scratch.

His comments to a Kentucky television station were as follows: ″The method they’re creating the pizza is simply not core to what constitutes a Papa John’s pizza.″ Then there’s the matter of what precisely goes into making a Papa John’s pizza in the first place. This is the genuine way that Papa John’s pizza is created.

The Papa John’s pizza recipe hasn’t changed

    1. Photograph courtesy of Joe Raedle/Getty Images New CEO Rob Lynch replied to claims made by Papa John’s founder and former CEO John Schnatter, who claimed that the pizza from the restaurant he founded was no longer of the same quality as it had been years before.
    2. As new Lynch said to CNBC’s Squawk on the Street (as reported by Thrillist), ″we haven’t made any changes to the way we create it or what goes into our goods.″ ″Mr.

    4. We’re concentrating on completing the tasks that will help the company grow in the future.″ According to CNBC, certain items on the menu have altered, including the introduction of the company’s first new pizza dough taste in more than 35 years.
    5. Following the first report, Schnatter stated that he did not consume 40 pizzas in the span of 30 days.
    6. In an interview with MarketWatch, the deposed CEO explained his comments, stating, ″When I said I had a pizza, this indicates I’m inspecting,″ added Schnatter.

He was fired from his position as CEO in December.″I’m not going to eat every pizza; I’m going to eat pieces of certain pizzas.″

How Papa John’s makes the original dough pizza crust

    1. Shutterstock When it comes to making a fantastic pizza, it all starts with a strong base.
    2. If you’ve ever wondered what goes into making the ideal Papa John’s base, you can find out by visiting the Papa John’s website, which lists all of the components used to make the fresh dough.
    3. In order to make a conventional hand-tossed pizza, you’ll need the following ingredients: unbleached enriched wheat flour, water, sugar, soybean oil, sodium bicarbonate, yeast, and a variety of spices.
    4. But what exactly do they do with those components in order to transform them into the famous Papa John’s crust that we all know and adore?
    5. On pizzarecipes101.com, one supposed Papa John’s employee provides a wealth of information regarding the process of making their pizza base, stating that they let the dough firm until it’s ″approximately three inches thick″ before baking it.
    6. In addition, they suggested using a dough docker (spiked roller) to roll out the pizza dough and make it into the correct shape, then pressing their fingers into the border of the pizza to form the crust.

According to the employee, they make a crust that is around 1/4-inch thick in thickness. There’s also a gluten-free pizza dough available, but it’s not available at their local pizza joints at the moment. Those crusts are ″made in a separate, gluten-free facility before being transported to shops,″ according to a press statement from Papa John’s (via Extra Crispy).

Nonetheless, they warn that those with gluten sensitivity should exercise caution while visiting pizza restaurants since they may be exposed to glutens.

Papa Johns uses a lot of sauce

    1. Shutterstock It is not enough to have a wonderful crust to make pizza; it is also not enough to make bread, which is delicious but not what Papa John’s is all about.
    2. Naturally, tomato sauce is an essential component of a good pie recipe.
    3. So, what exactly is in Papa John’s renowned tomato sauce?
    4. Fresh vine-ripened tomatoes (from a can), salt, garlic, spices, oils, and sugar are all listed on the company’s website as the components to look for.
    5. In addition, there may be a lot of sugar.
    6. This is according to a former manager who participated in an AMA on Reddit, who stated that the sauce is ″loaded of sugar.″ The lowdown on how much sauce is necessary comes from another claimed Papa John’s employee (via pizzarecipes101.com), who says they ″spread the tomato sauce to one inch from the border of the pizza.″ However much you enjoy the sweet sauce that Papa John’s serves on its pizza, it may have been resting on the pie for a longer period of time than you realize.

According to a Redditor claiming to be a Papa John’s employee, the pizzas are partially pre-made on days when the company expects to be busy.″They’re sauced and topped, but there’s no cheese on them.″

Papa John’s probably uses the same cheese as other chains

    1. Shutterstock A good crust and sauce are only half of a good pizza.
    2. Then there’s the cheese.
    3. However, this is one area where Papa John’s does not distinguish itself much from its competition.
    4. Your two options are either Parmesan/Romano or a Three Cheese Blend.
    5. According to the company’s website, the Three Cheese Blend is made up of Provolone, Fontina, and Asiago cheeses, which is useful to know but doesn’t provide a lot of more information.
    6. In accordance with Forbes, the cheese used by Papa John’s is supplied by Leprino Foods, the same firm that supplies cheese to Domino’s, Little Caesar’s, and Pizza Hut, among other pizza establishments.

This indicates that all of these chains sell cheese from the same source and of similar quality, but it does not imply that the cheese is identical. Each business employs a proprietary blend of cheeses that is exclusively available via them.Given its market dominance and commitment to product quality (Leprino is one of the few dairy companies to never have had to recall a product), Leprino cheese is an excellent match for Papa John’s pizzas, as seen by its recent acquisition of the company by Papa John’s.

    3. This recipe calls for only seven ingredients and is made in a pan rather than by hand-tossing the dough.

    6. This required restaurants to invest in specialized equipment for their kitchens, and in certain cases, two ovens.

The outside edge of the pan pizza is described as having ″less crust and more of a caramelized crisp″ by Business Insider, which sounds as delicious as it is in taste.

    4. In another thread on Reddit, an alleged employee shared some more behind the scenes information.
    5. He claimed that because so few people order anchovies, the leftovers are sometimes forgotten and end up on a pizza.
    6. He also described a meat lovers pizza that appears on the menu from time to time and gets a ″sprinkle of’meat flavor’ at the cut table,″ and chicken topping that comes in a bag and has a chemical smell.

Papa John’s reveals exactly how it makes its newest pizza

    1. Papa John’s is introducing a new menu item that the company is touting as its most significant launch in more than a decade.
    2. Earlier this week, Papa John’s introduced pan pizza, a form of pizza that is currently available at Domino’s and Little Caesar’s restaurants.
    3. Customers, operators, and franchisees used to bombard us with inquiries like, ″Why don’t you have pan?″ ″We used to receive questions all of the time.″ Sean Muldoon, the chief ingredient officer of PapaJohn’s, spoke with BusinessInsider.
    4. ″We believe that with our debut, we will attract new consumers who are avid pan enthusiasts,″ says the company.
    5. ″It took us a year and a half,″ Muldoon recalls of the time it took Papa John’s to design a pan pizza that met the company’s ″cheesy, buttery, crispy″ taste profile.
    6. Business Insider went behind the scenes at a Papa John’s store in Manhattan to observe firsthand what it takes to create the new pan pizza option on the menu.

    Here’s what we learned:

The pizza prep starts with thedough, which contains just seven ingredients and needs to berolled out with a spiky docker to prevent bubbles.

Then it’s off to the oven. One of Papa John’s biggest roadblockswhen developing the pan pizza was that it bakes at a differentspeed than thin crust and tossed crust pizza, requiring locationsto add special equipment or install two separate ovens.

    Review: Papa John’s Pan Pizza

    1. With a fresh ″hearty″ tomato sauce and a thick and crispy dough topped with cheese to the edges, Papa John’s Pan Pizza is sure to please.
    2. If you’re wondering, the $10 pizza included three toppings: spicy sausage, onions, and mushrooms (in case you’re still curious).
    3. The new sauce has a stronger tomato flavor and is less sweet than Papa John’s standard sauce, and it also has a significant amount of herb flavor.
    4. It reminded me a lot like spaghetti sauce, which I liked, but it wasn’t my favorite.
    5. Toppings were plenty, and the combination I chose had a lot of punch in terms of taste.
    6. The cheese, on the other hand, was a touch haphazard.

This pan pizza had a thin coating of cheese around the perimeter, not a thick, evenly distributed layer like Little Caesars or Domino’s, and it didn’t have nearly the same delicious caramelized crispiness as those pizzas from Little Caesars or Domino’s.

    Undercooked under the toppings.
    1. However, although the toppings and sauce were excellent, the crust itself was lackluster.
    2. It had a crispy texture on the outside but was dry on the inside, like toast.
    3. I’d think that they don’t use a lot of oil or butter to brush it on before frying it.
    4. Both olive oil and butter (or buttery spread, to be more precise) would have been beneficial in the taste aspect as the food was somewhat bland in that department as well.
    5. Not to mention that it was undercooked and doughy just beneath the topping and sauce, which definitely didn’t help matters.
    6. It was more cooked through at the edges, where the airy, spongy dough had become more defined but was still rather plain in the middle and center.
Fortunately, cooked through at the edges.

In general, I found Papa John’s Pan Pizza to be really disappointing. The crust lags substantially below identical pan pizzas from its three major competitors in terms of quality. Fortunately, the toppings and sauce made eating it a simple process……………………..

    1. Chicago-style pizza is a type of pizza cooked according to numerous different styles created in Chicago, and is sometimes referred to as deep dish pizza owing to the way it is baked in a deep dish oven.
    2. The pan in which it is baked gives the pizza its distinctively high edge, which allows for generous amounts of cheese and a generous amount of chunky tomato sauce to be incorporated into the dish.
    3. Chicago-style pizza can be made in a deep-dish style or as a filled pizza, depending on your preference.

    Deep-dish pizza

    • It is not possible to tell with confidence who originated Chicago-style deep-dish pizza, says Tim Samuelson, the city’s official cultural historian. ″There is not enough documentation,″ says Samuelson. Many people believe that Ike Sewell, the founder of Pizzeria Uno in Chicago, was the one who first developed Chicago-style deep-dish pizza in 1943 at his establishment. As reported by the Chicago Daily News in 1956, Rudy Malnati was the creator of the recipe, and according to Michele Mohr of the Chicago Tribune, Rosati’s Authentic Chicago Pizza has served deep-dish pizza since it first opened its doors in 1926. One of the most significant differences between deep-dish pizza and most other types of pizza is that the crust is quite deep, resulting in an extremely thick pizza that resembles a pie rather than a flatbread. Deep-dish pizza is also more expensive than most other types of pizza. Despite the fact that the entire pizza is fairly thick, the crust on typical Chicago-style deep-dish pizzas is thin to medium in thickness. Pizza made in a deep dish is baked in an iron skillet or a circular, steel pan that is more closely related to a cake or pie pan than to a traditional pizza pan. The pan is greased to make removal from the oven easier as well as to give the crust a fried appearance on the exterior of the crust. Other ingredients, such as cornmeal, semolina, or food coloring, can be added to the dough to give the crust a characteristic yellowish hue. The dough is pushed up against the edges of the pan, making a bowl that will be covered with a very thick layer of toppings later. If you use a thick layer of toppings on your deep-dish pizza, you’ll need to bake it for a longer period of time (usually 30-45 minutes), which may cause cheese or other toppings to burn if they’re utilized as the top layer of your pizza. As a result, the toppings are arranged ″upside-down″ from the way they would normally be arranged on a pizza. Following the cheese (usually sliced mozzarella), different meat alternatives such as pepperoni or sausage, the latter of which is occasionally in a solid patty-like layer, are placed on top of the pizza dough to create a pizza pie. Onions, mushrooms, and bell peppers are among the other ingredients that may be found on the pizza. The last layer is topped with an uncooked sauce, which is normally made from crushed canned tomatoes
    • however, a dusting of Parmesan cheese may be added for additional taste. When ordering pizza for takeout or delivery, it is customary for the pie to be served sliced. This avoids moisture from the sauce and toppings from soaking into the dough and causing the pie to get soggy. The pizzas from several Chicago deep-dish eateries are shipped to customers throughout the continental United States after they have been half cooked and frozen. The deep-dish pizza, which is a Californian version of the Chicago-style deep-dish pizza, is a delicacy.

    Stuffed pizza

    1. Giordano’s offers a stuffed pizza.
    2. By the mid-1970s, two Chicago-based companies, Nancy’s Pizza, established by Rocco Palese, and Giordano’s Pizzeria, managed by brothers Efren and Joseph Boglio, had begun experimenting with deep-dish pizza and had developed the filled pizza as a result of their experiments.
    3. Using his mother’s recipe for scarciedda, an Italian Easter pie from his birthplace of Potenza as inspiration, Palese created his own version.
    4. The dish gained popularity as a result of stories in Chicago Magazine that featured Nancy’s Pizza and Giordano’s loaded pizza.
    5. When it comes to depth, stuffed pizzas are frequently even deeper than deep-dish pizzas, but otherwise, it is difficult to tell the difference until the pizza is sliced into.
    6. A filled pizza often has a significantly higher density of toppings than any other form of pizza on the market.

Similarly to deep-dish pizza, a thick layer of dough is formed in a high-sided pan, and the toppings and cheese are then put on top of the dough. Then, a second layer of dough is applied on top of the first and pushed against the sides of the crust. It is at this point that the thin dough top takes on a rounded, domed shape.

Pizza makers frequently pierce a small hole in the top of the ″lid″ to enable air and steam to escape while the pizza is being cooked, largely to prevent the pizza from exploding during cooking. Before the pizza is baked, the tomato sauce is usually ladled over the top crust, however this is not always the case.

    Thin-crust pizza

    1. Chicago-style thin-crust pizza with a party-cut crust There is also a type of thin-crust pizza that can be found in Chicago and across the rest of the Midwest that is called Chicago Style.
    2. In contrast to New York-style pizza, the crust of this pizza is thin and solid enough to have a discernible crunch.
    3. It is sliced into squares rather than wedges, which is known as ″tavern-style″ or ″party cut″ in the pizza industry.
    4. Several sources, including GrubHub and Chicago Pizza Tours, have found that thin-crust pizza outsells the more commonly recognized deep-dish type among Chicagoans.
    5. Technomics food industry expert Darren Tristano has raised concerns about GrubHub’s conclusion based on demographics of its users, and NPR has observed that the data would not include information on some deep-dish businesses that are not already on the delivery service.

    Toppings

    1. The typical toppings commonly found on pizzas throughout North America (i.e.
    2. sausage, pepperoni, onions, mushrooms, etc.) are also standard in Chicago-area pizzerias; however, a survey conducted in 2013 revealed that while pepperoni is the most popular pizza topping throughout the rest of the United States, Italian sausage is the most popular topping in Chicago.
    3. As an alternative to the conventional toppings, several local pizzerias also offer Chicago-specific toppings such as Italian Beef and giardinera, among other things.
