    • Baking time: 10 – 15 minutes @ 450 F, or until the crust is golden brown and the toppings are bubbling

    3. Spread the bbq sauce over the top of the dough in an equal layer, leaving a 1/2-inch border around the outside of the dough

    6. Remove from the oven and set aside.

    • One tablespoon of quick yeast
    • one teaspoon of salt
    • one tbsp rapeseed oil, with additional for greasing
    • 250g wholemeal flour, plus a little extra to make a kneading bowl (if required)

    • 1 tbsp rapeseed oil

    Method

    • STEP 1Preheat the oven to 220 degrees Celsius/200 degrees Celsius fan/gas 7. Place the flour in the bowl of a stand mixer fitted with a dough hook, or in a large mixing basin. Combine the yeast, salt, oil, and 200ml warm water in a large mixing bowl until a very soft dough is formed. Knead for approximately 5 minutes in a food processor, or for about 10 minutes by hand if you’re preparing it by hand instead of using a food processor. Even when the dough is sticky, avoid adding too much additional flour. While you are halving and slicing the peppers and onions, leave the mixture in the dish covered with a tea towel. The dough does not have to be proofed for a set amount of time
    • simply let it to rest while you prepare the topping.
    • Cook the peppers and onions for 15 minutes at 400°F, then stir them with the oil and fennel seeds to coat. Mix together the barbecue sauce and tomato purée with 5 tablespoons water while waiting for the barbecue sauce to cook.
    • STEP 3 Remove the dough from the bowl and push it onto the bottom and up the sides of a 25x35cm Swiss roll pan that has been lightly greased. You shouldn’t knead the dough at first because else it will become too elastic and will continue to shrink back. The chicken should be brushed with two-thirds of the barbecue sauce mixture, followed by the remaining, which should be mixed thoroughly to coat the chicken.
    • STEP 4 Remove the roasted pepper mixture from the oven and distribute it over the top of the pizza crust. Distribute the tomatoes on top, then spoon over the barbecued chicken in a uniform layer. Bake for 15 minutes, or until the cheese has melted. Serve with a salad or a nutritious coleslaw to round it off.

    BBQ Chicken Pizza

    Ingredients

    • 1 (1lb) raw pizza dough recipe, either store-bought or produced from scratch
    • 1 tablespoon extra virgin olive oil
    • 1 small red onion, thinly cut 1/4 inch thick
    • 1 teaspoon salt
    • 1 teaspoon pepper
    • 1/2 cup BBQ sauce, either store-bought or created from scratch
    • For the topping, mix together 1 cup chopped or shredded cooked chicken with 1 cup shredded mozzarella cheese, 1/2 cup chopped smoked gouda and/or pepper jack cheese, and 1/4 cup chopped fresh cilantro
    • set aside.

    Method

    1. Use refrigerated pizza dough purchased from a supermarket and let it to come to room temperature while you are preparing the caramelized red onions
    2. if you are using homemade pizza dough
    3. Heat the olive oil in a medium nonstick pan over medium heat until shimmering. When the oil is shimmering, add the red onions and simmer, turning regularly, until the onions are caramelized. If the vegetables are browning too rapidly, reduce the heat to medium-low. This will take around 45-60 minutes.
    4. Preheat the oven to 450 degrees Fahrenheit.
    5. Pizza dough should be prepared by rolling or stretching it out on a lightly floured surface until it is approximately 10-12 inches in diameter. Using a lightly dusted pizza stone or a lightly oiled baking sheet, transfer the dough on the baking sheet.
    6. Use your fingers to make little dentations in the dough’s surface to keep it from bubbling. 1/3 cup BBQ sauce should be placed on top of the dough and spread out evenly, making sure to allow 1 inch of room around the border for the crust.
    7. Half of the cheese should be sprinkled on top of the barbeque sauce. Toss the cooked chicken with the remaining BBQ sauce in a medium-sized mixing basin, then distribute it evenly on the pie. Combine the caramelized red onions and the remaining cheese cheeses in a large mixing bowl.
    8. Bake for 12-15 minutes, or until the center is cooked through and the bottom is browned on the bottom. Garnish with cilantro before serving
