    How to Use the Ooni

    • You will find that using the Ooni pizza oven is much simpler than you believe!
    • It was far less difficult than I had anticipated.
    • It’s as simple as turning on the propane tank and letting it heat for 20 minutes once it’s been connected to the stovetop.
    1. Afterwards, reduce the heat to low, add your pizza, and let it cook for a couple of minutes.
    2. My boyfriend and I were both pleasantly delighted by how simple the Ooni is to operate, as well as how entertaining it is to watch the pizza cook!
    3. This oven only has flames on the rear and left sides, which means the front right side is the cool region, which allows you to have greater control over how the pizza is cooked.

    The Learning Curve

    • I’ll admit that I was a little apprehensive about the learning curve that would come with cooking with the Ooni.

    Cooking Tips

    • Grease and lightly flour the work surface on which you will be assembling the pizza. Also, gently dust the pizza peel before using it. This will make it easier to transfer the pizza to the pizza peel and then into the oven later on in the process. If possible, use semolina flour, but we’ve had no problems with all-purpose flour. Don’t make the crust too large unless you’re really comfortable with the procedure of moving it about. After assembling the pizza, you’ll need to transfer the finished product on a pizza peel before sliding it into the oven. The smaller the pizza, the less difficult it is to make. The larger the pizza, the greater the likelihood that you will wind up with a tangled mess. Despite the fact that the 16″ Koda can handle a 16″ pie, we still keep them between 10″ and 12″. I usually divide a one-pound ball of dough in half and use the other half to roll out two pizzas
    • don’t overwork the dough at this point. The key to achieving that distinctive pizza crust is to handle the dough as little as possible throughout the baking process. As it turns out, I got quite lucky since my spouse used to work in the pizza industry and is, in essence, an expert. He suggests that you use your fingers to gently press the dough into the crust while rotating it in a circle around your hands. then smacking it back and forth between your hands/forearms until it grows to a sufficient size. In an ideal situation, the dough should be thicker around the edges and very thin in the middle. Using this method, you will achieve the unique wood fired pizza oven texture that you are searching for. If the dough is too thick in the centre, the pizza will not cook through completely
    • avoid piling on too many toppings on your pizza. Another approach to guarantee that your pizza is fully cooked is to top it with only the bare minimum of toppings. I’d recommend using half of the ingredients you’d typically use for a pizza that’s going to be baked in a conventional oven. Because of the number of toppings on the pizza, the transfer is a bit difficult, and the more toppings you have, the more difficult it is. As a result, keep it basic and apply a little layer of cream on top. This is not the time to whip up your famous extra extra cheese pizza, as you may think!
    • Don’t allow yourself to become distracted. When you’re making pizza in the Ooni, you want to devote all of your attention to that particular pizza. Due to the high temperatures inside the oven (over 900 degrees), it’s critical to keep a close eye on the pie since it may go from perfectly done to perfectly charred in a matter of seconds.

    Flavor

    I’ll admit that I was both eager and doubtful that the flavor would be as close to that of a wood-fired pizza oven as it turned out.And holy cow, I was completely taken aback!Despite the fact that it is made solely with gas, the flavor is remarkably comparable to that of wood-fired pizza.You get those wonderfully charred small pieces all over the pizza, the dough is delicate on the inside and very crunchy on the outside, and the cheese melts into an ooey-gooey melty mess in only a few of minutes!I could go on and on about how great the pizza is, but I’ll just say that you’ll be shocked at the difference between the pizza you make in your Ooni and the pizza you make in your oven after you taste it.

    Which Dough to Use

    Actually, we buy dough from the grocery store 9 times out of 10 for this recipe. In the Ooni, they have a wonderfully excellent dough that is both affordable and cooks exceptionally well. We do, however, use my No-Knead Pizza Dough or my Quick Pizza Dough when I’m in the mood for something more traditional and handmade.

    Ooni Accessories

    • 16″ Pizza Peel – The 16″ pizza peel is one of our favorites! The long handle makes it simple to place the pizza directly into the oven
    • nevertheless, it is not recommended.

The outside will obviously need to be cleaned from time to time as dust collects on it, but other than that, there is no need to clean!

    Storage

    Its a complicated business these days, so I’ve put this little guide together as even though I thought I had made all the information on my website as clear as possible, I still get phone calls to clarify a number of issues that arise when choosing buying pizza ovens for home use.

    There are quite a few brands on the internet now, all competing for a slice of the relatively small UK market, with different price points and consequent quality of build. Some are ready-made whilst others are in modular form requiring assembly on site, some are high mass heavy heat-resistant concrete(chamotte), others are lightweight stainless steel with very little mass to retain heat.

    To make sense of all of the often bewildering options, I believe it is better to break down what is available without identifying specific companies in order to try to make sense of what is out there.Despite this, some individuals continue to make purchases without considering the consequences until it is too late.Examples include purchasing an oven that is tough to move or not being able to get it through a yard gate.Before I go into the specifics of selecting and purchasing pizza ovens, please keep in mind a few basic criteria that apply to practically anything you purchase: Purchasing something at a discount price is a good idea since it is a bargain for a reason!Normally, this is due to the fact that it has been sitting about for a long time since no one wants it, but occasionally, it may be damaged and/or badly constructed, resulting in an early breakdown.

It may well be a new product where marketing is essential but generally low cost /highly marketed products only sell themselves because of low cost.

    The Details– logical but simple questions to ask oneself before ordering:

    Space available– What space do I have and is it large enough for the finished installed oven?- check finished sizes of ovens with supplier and recommended base dimensions. Shown here is a tech sheet with the dimensions including insulation but remember to add up to 60mm or more all around for final finishes like renders or tiles or a shelf at the front.

    Access– Can I get the oven I want into my garden- check overall dimensions of delivered goods if ready-made and unit sizes of modules if in kit form. Always measure the narrowest point in any pathway/corridor/doorway and make sure there’s enough gap for hands without injuring oneself!

    Weight– Can I lift what I’ve ordered? – many ovens especially high mass concrete or brick ovens are very heavy. Ready-made ovens are especially difficult to lift and manoeuvre without moving equipment and/or several helpers.

    I had a friend who purchased a cheap ready-made oven online, and it dutifully arrived a couple of days afterwards and was craned off to the curbside.Following a two-day slog down a side passage and around the back of the home with five fatigued neighbours, the oven was finally moved.That was the straightforward part.It suddenly dawned on them that they would have to hoist upwards of 400kg up onto the metre-high foundation that had been constructed in advance of their arrival.This was hard to raise as a dead weight even for four strong men, so they had to improvise by wedging up each side in turn, blocking up a little higher each time until they reached the proper height.

    After all of that, the foundation was so inadequately insulated that it was practically difficult to maintain a temperature suitable for baking pizza.″

    Size- When choosing buying pizza ovens, surprisingly a lot of people want to order an oven that is too large, assuming that because they want to cook 3-4 (or more) pizzas at a time, they need the space to do that.

    Even the most experienced pizza makers seldom cook more than that in industrial ovens, especially when they are running extremely hot at 450-500 degrees Celsius, like they do in Napoli.In a home oven, most individuals would be unable to manage more than two loaves at a time for the simple reason that the dough cooks extremely quickly and will burn if not handled regularly.Cooking three at the same time is like juggling with your eyes closed; it’s nearly impossible unless you’re using a high-temperature oven (300-350 degrees Celsius) to allow yourself extra time.I would recommend a 700mm or 800mm internal diameter oven for the majority of house setups, with 950mm or larger ovens being used only in exceptional circumstances.If you do a lot of bread baking, as many people who start micro bakery businesses from home do, I would say it would be justified because the additional fuel required to heat the larger oven is negligible, but the financial benefit of baking more loaves in a single firing makes the investment worthwhile.

    “ I was working on a contract to create a unique hand-made brick oven and outdoor kitchen for a client, and throughout the course of the project, I began forming a 1 metre internal diameter dome out of firebricks that had been split in half.I was about three or four dishes into the meal when he returned from work and reminded me of a conversation we had about the oven I had built at home, which had an interior width of 1.2 meters.He stated that he wanted it to be the same size as mine, despite the fact that I had previously stated that I believed what I had built was too huge for my own usage.The next day, I dismantled everything I had done so far and rebuilt it in a larger space, completed the project, and turned over the oven and outdoor kitchen to the client.

    After a pizza party one weekend, he called me and expressed regret for not following my advice, stating that the smaller oven would have been sufficient and that it had taken a significant amount of wood to get the large oven up to temperature, and that he had burned a few pizzas due to his inexperience in cooking large quantities of pizza at the same time,″ he continued.

    Price- this is often the hardest part of the process to get right when buying choosing pizza ovens. As a rule, the more you spend when choosing and buying the better the quality but the price/quality equation tends to plateaux out at a certain point amongst the best ovens made in the EU.

    Many are constrained by a limited budget that may or may not be realistic, but the equation is clearly distorted by the abundance of low-cost ovens that make well-made and long-lasting ovens appear to be prohibitively expensive.This is frequently exacerbated by impatience: rather than saving up the extra money to get a high-quality oven, I occasionally receive complaints about how costly my ovens are, and even accusations that I do not have an oven in their price range.In choosing a particular brand of oven to offer, we did so because they are exceptionally well manufactured and well thought out, and they have a big enough variety to meet the demands of both household and commercial customers alike.From a business standpoint, we don’t want to be forced to return to tasks that are hundreds of miles away due to a material failure.We are certain that our Grand-Mere ovens will outlive my clients and, in theory, would survive for centuries.

    Mass- The ovens mass more or less dictates how long it will retain heat for. Old bakery ovens had a very high mass, often two or three bricks thick coupled with relatively poor insulating properties. In practice this meant long firing times of a day or two using stacks of dry wood until the brick mass was saturated with heat.

    Once the dough was saturated, the baker could control the internal temperature by leaving the oven door open until he or she was satisfied that the dough was ready to be baked.By enhancing the efficiency of the insulation, oven manufacturers have been able to minimize bulk (and hence cost and weight) in recent years, with the result that with the finest ovens, fire time is reduced to an hour or less and heat loss is just a few degrees per hour on average.This raises the question of whether or not you require the high mass for household use.This is very dependent on what you do with the oven in the first place.Because heat is lost at a very slow rate, the temperature remains considerably more stable than in an electric home oven, making it ideal for baking bread and other doughs such as pizza dough.

    The slowly cooling oven may be used for a variety of different types of cooking, ranging from high heat pizza baking to low and slow cooked roasts and stews at the opposite end of the spectrum.The final chilling stage is ideal for drying and smoking food products.Recently, it has been fashionable to decrease the bulk of an oven to nearly nothing and to utilize thick stainless steel plate in conjunction with excellent insulation to create an oven that warms up rapidly (sometimes in minutes), but cools down quickly.Because of the innovation, you no longer have to wait long for the oven to heat up when baking high heat pizza, and because of the reduction in fuel costs, you no longer have to feel guilty about walking away from the oven after your cooking session and wasting all of the heat you’ve lovingly built up in your high mass oven.

    It somehow feels more tied to an earlier time-rich practice, the ritual of creating the fire and getting to know the habits of a high mass oven,″ says the author.This method allows you to savor the food that comes out, the richness of slow cooking, and the smoky bitter flavor of slightly scorched edges,″ says the author.

    Hearth height- When building your base try and aim for a working hearth height of around 1200mm unless you’re particularly short or tall. It saves your back from straining and makes it much easier to slide your food in and out when you can see what you’re doing. Many ovens in the middle east are set on the floor as women sit cross-legged while prepping and baking but in the west we generally stand for almost all activities!

    Dome Height- Traditionally the dome height (DH) was set by its relation to the entry arch (EA) for efficiency of burn. The equation would be DHx66%=EA so a dome height of 450mm would have an entry arch of 297mm

    Specifically, this is no longer true for all ovens, notably bakery ovens, which have a lower dome height than other ovens.If you compare French ovens to Italian ovens, the dome height is typically lower; for example, it’s rather normal to have a 73 percent relationship, 297mm dome height to 217mm entry arch on compact ovens that nonetheless perform well.A variety of dome heights is available, including a low standard height and a raised option that is 75mm higher than the usual height.This is accomplished by raising the base height by 75mm with the use of a ring and placing the regular dome on top of the raised base.It is particularly handy when roasting large game such as geese, since the regular height would be too near to the meal.″

    Insulation- Next to mass, good insulation is the key to a properly working efficient oven. Imagine your house without insulation or going out in winter without a coat and you’ll soon realise that if one tries to pump heat into a structure and its losing it at the same rate then it will never heat up.
