    Roasted Sweet Potato Sushi

    Sweet potatoes are roasted up with maple syrup and sesame oil, rolled in rice coated nori sheets and sprinkled with toasted sesame seeds to make these flavorful sweet potato sushi rolls. Prep Time 15 minutes Cook Time 30 minutes Total Time 45 minutes Servings 3 Calories 456 kcal

    For the Roasted Sweet Potato Filling

    • 1 tablespoon vegetable oil
    • 1 tablespoon maple syrup
    • 1 teaspoon sesame oil
    • 1 big (1 pound) sweet potato
    • 1 tablespoon sesame oil

    For the Rice

    • 1 cup sushi rice
    • 1 13 cups water
    • 12 tablespoons rice vinegar
    • 34 tablespoons salt
    • 1 cup sushi rice

    For Rolling and Serving

    • 1 cup toasted sesame seeds
    • wasabi
    • pickled ginger
    • soy sauce 3 sheets nori 2 scallions toasted sesame seeds wasabi pickled ginger soy sauce
    1. Preheat the oven to 375 degrees. Using parchment paper, line a baking sheet.
    2. In a small mixing bowl, whisk together the oil, maple syrup, and sesame oil.
    3. Peel the sweet potato and cut it lengthwise into strips that are slightly under 12 inches thick, as if you were preparing sweet potato fries, as shown in the photo above. Rub the meat with the oil and maple syrup mixture, or set it in a dish and toss it around to coat it well. Strips should be laid out on a baking sheet. Bake for 25 minutes, or until the vegetables are soft, gently turning halfway through.
    4. Place rice in a fine mesh strainer and rinse under cold, running water for 1-2 minutes while the sweet potatoes are baking.
    5. Place the rice in a small saucepan together with the water, vinegar, and salt and bring to a boil. Place the pan on a high heat setting. Stir a few times to ensure complete incorporation. Increase heat to a low setting and cover the pan. Allow the mixture to cook for about 20 minutes, or until the liquid has been absorbed completely, stirring occasionally. Allow for a 10-minute resting period before uncovering.
    6. A bamboo mat should be laid out on the work surface, with a small dish of water nearby for soaking your hands. Place one of your sheets on the bamboo mat to serve as a base. Cover the nori with a thin layer of rice, applying pressure with damp palms. One-third of the sweet potato strips should be placed in a single line over the width of the nori, about one inch away from you. Place a few onion pieces directly next to the sweet potato strips to complete the look.
    7. Using the bamboo mat and nori end closest to you, firmly coil the fillings around the mat and nori end. Tuck the end of the nori into the roll and continue rolling, pressing your roll firmly against the mat as you go. Once the roll has been completed, cut it into eight pieces.
    8. Repeat the process with the remaining nori sheets and fillings.
    9. Serve with soy sauce, wasabi, and pickled ginger on the side, then sprinkle with sesame seeds.
