    I just use half of a sheet of nori for my recipe, and that is plenty to roll everything up. If you find that the nori is a bit too short, you can shorten the filling a little. Continue to practice, and you should be able to determine the optimal rolling ratio.

    • Starting from the bottom end, roll the nori sheet tightly and firmly over the filling using the bamboo mat until the bottom end touches the nori sheet. Roll over on the bamboo mat by lifting it up.
    • Using the side of a knife, gently press down on the avocado to ensure that it is evenly distributed.
    • After you’ve wrapped the roll in plastic, place the bamboo mat on top of it. Squeeze the sushi roll tightly until the avocado slices completely round the roll. Make sure to handle the avocado slices gently so that they do not shatter.
    • Using a knife, cut the roll into eight equal pieces. After each cut, wipe the knife down with a moist cloth. If the sushi roll becomes a sloppy mess while being sliced, tightly crush the sushi roll with the bamboo mat once more. Removing the plastic wrap from the sushi and placing it on a serving plate is recommended.
    • Place tobiko on top of each piece of sushi and drizzle with spicy mayo before finishing with black sesame seeds. Place some unagi sauce on a serving tray so that you may dip the sushi in it if you like. Enjoy!
