    Sushi rice is traditionally cooked using white short-grain rice, but if you’re in a hurry, you may use white medium-grain rice.Rice is composed of two types of starches: amylose and amylopectin, which are both sugars.The higher the concentrations of amylopectin in a grain of rice, the stickier the texture of the cooked grain of rice will be.
