    Prepare any meats ahead of time. Prepare the red bell pepper by cutting it in half and placing it on a grill pan. Prepare the vegetables by chopping and slicing them and keeping them near by and ready to go into the pizza dough.

    FIRE UP THE GRILL:

    • Start by lighting the charcoal chimney and allowing it to heat up.
    • As soon as the coals are hot, place them on the grill.
    • Using long tongs, shift all of the coals so that they barely cover half of the grill surface area.
    • This will provide you with both a direct and an indirect heat source.

    Preheat the grill on medium heat for approximately 10 to 15 minutes, or until the temperature reaches 350 to 400 degrees F.

    FIRE ROAST THE PEPPERS:

    Roasting any veggies that you wish to include on your pizza is the best time to do it while the grill is getting ready to go. Cook the bell pepper over direct fire for 15 minutes, or until it is charred and blistered, depending on how large it is. After the pepper has been roasted, set it in a bowl and cover with plastic wrap for about 5 minutes before slicing and dicing the vegetables.

    GRILL THE CRUST:

    • Using a rolled-up towel and tongs, oil the grill, then gently place the dough on the side of the grill that will be exposed to direct heat.
    • Grill for approximately 2 minutes, or until the top is bubbling and the bottom is charred on the bottom.
    • Turn the chicken over with tongs and cook until the second side is lightly charred.
    • Remove the dough from the grill and transfer it to a baking sheet; repeat the process with any residual dough if there is any.

    You never know what form the dough will take if you don’t use a pizza peel, but it won’t matter since once you eat it, you’ll forget all about the shape!

    ADD THE GRILLED PIZZA TOPPINGS:

    As you work on the baking sheets or platters, cover the crusts with sauce, meats, vegetables, and cheeses, alternating between them. Take some time to experiment with different grilled pizza combinations, such as this one made with half Mexican cheese, jalapenos, scallions, and bacon, and the other half without the green onions but with pepperonis.

    FINISH THE PIZZAS: 

    • Return the pizzas to the side of the grill that receives indirect heat.
    • Cover the grill and cook for 2 to 3 minutes, or until the cheese is melted.
    • In approximately 3 minutes, remove the chicken from the grill and serve it.
    • Please keep in mind that while grilling pizza, it is critical to complete all of the preparation work ahead of time.

    8 Ways To Make Pizza On A Weber Charcoal Grill

    • If you have a lot of experience with backyard barbeque, you’ve undoubtedly cooked a pizza or two.
    • In case you haven’t already, welcome to a whole new world of low-cost outdoor pizza-making possibilities!
    • You don’t need to spend $6,000 on a wood-fired pizza oven for your patio to serve delicious pizza at your next backyard gathering.
    • Due to the impending arrival of summer, I decided to investigate the most effective method of cooking pizza on a charcoal grill.

    According to the results of our research, there are several methods for making pizza on a Weber charcoal barbecue!Here are eight approaches that I discovered, each with its own set of pros and disadvantages.Which ones have you tried, and how did they turn out for you?If not, what do you find to be effective?

    Minimalist

    Bare Grill Grates

    • To your surprise, you may cook a pizza directly on the Weber barbecue grates.
    • Be careful to ensure that the dough is thick enough so that it does not fall through!
    • However, much like with preparing pizza on gas grills, the vast majority of the time you’ll be fine.
    • Because the grates are rather hot, your dough will get lovely and crispy on one side first before becoming more tender on the other.

    After the first side has crisped up, turn the dough over and cook the opposite side until golden brown.From there, you may customize your pizza by adding sauce, cheese, and toppings.I recommend having your toppings ready to go, unless you plan on heating them up after you’ve finished.Raw bacon, for example, will not fully cook in this manner.However, something like pepperoni is OK because it does not require heating in order to be eaten.

    1. As you can see in the image above, it is important to distribute the coals thinly on the bottom of the grill in order for your pizza to cook evenly and without becoming too hot.
    2. We don’t want to burn the crust on the bottom of the pan!
    3. Alternatively, you might move the coals to one side and cover the pot with a lid to cook with ambient heat temperature rather than direct heat generated by the coals.
    4. These two approaches are both effective!

    Cordierite Pizza Stone

    • If you want to go one step further than the no-preparation method demonstrated above, you may invest in a pizza stone that can be used on the grill.
    • Not all pizza stones are designed to withstand the direct heat and high temperatures of grills, so be sure to get a pizza stone that has been authorized for use on a grill.
    • I’m currently putting up a list, and I’ll update the link when I’m finished.
    • In the case of a pizza stone, begin by heating it gradually.

    I’d start by putting it on the grill with the lid off, then flipping it over.Allow it to heat up for a few minutes before covering it with the lid to ensure that it is completely heated.When you believe it is ready to be cooked, splash some water over it.If the water congeals into a ball and begins to roll around, To prevent sticking to your pizza peel while you’re working with new dough, you may put a little amount of cornflour on it before you start baking.Even though it will burn a little on the pizza stone, it will not have any effect on the flavor of the pizza.

    1. It will make it easier to transfer your pizza from the peel to the stone, and you will waste less ingredients as well as reduce the likelihood of spilling cheese crumbs on your stone.
    2. The cheese will quickly melt onto the stone, causing it to turn black.
    3. Even though black stains on your stone are relatively frequent, I like to prevent them wherever possible!

    Metal Pizza Pan Or Other Grilling Pan

    • There isn’t much to say about this approach because it is quite similar to the pizza stone method, but you do need to prepare your pan in a slightly different way!
    • There are several ways to place your coals, and it all depends on the sort of pan you’re using.
    • In order to avoid the dough from adhering to the metal pizza baking pan designed for the indoor oven, you may wish to wrap it with aluminum foil and spray it with nonstick spray before baking it.
    • Alternatively, you might want to place your coals on the sides of the grill to avoid directing too much direct heat into a pan that wasn’t intended for use on the grill.

    As a result, we’ll just use that pan as a pizza grilling pan from now on, because you’ll most likely destroy it anyhow.Alternately, you could use a cast iron pizza pan in conjunction with your Weber barbecue to produce some delicious pizza.When using this sort of pan, it is recommended that you toast it and season it with olive oil before placing your dough in it.I believe that this is a superior long-term approach of grilling your pizza because the pan will likely survive longer and may be used for a variety of other purposes in addition to pizza.Cast iron is an extremely durable material that may be used in a variety of camping conditions.

    1. You could even throw it over a campfire in direct flames and cook your pizza that way, just like a genuine mountain guy would do it (or woman).

    Fire Bricks

    • This approach is incredibly simple to set up, and it has the potential to alter the sort of pizza that you produce.
    • They say that they employ this approach to manufacture ″New York Style″ pizza, as opposed to Neapolitan style pizza, which they claim is superior.
    • The temperature at which the food is cooked and the distance between the food and the flame would be the differences.

    1. I’m guessing that the additional heat on top will also cook your items a little more.
    2. You can see in the video below that the sausages fry up quite nicely, despite the fact that they do not appear to have been precooked!
    3. Cooking time is around 20 minutes, including a 15-minute rest and a turn at the 15-minute mark.

    CampFire Style

    Skillet Pizza

    The pizza skillet is similar in appearance to the cast iron pizza pan seen above, but it is even more ″campfire-inspired.″ Look forward to my developing my own skillet pizza recipe in the near future! However, for the time being, the premise is very straightforward.

    1. Preheat your skillet over your Weber coal grill until it is hot to the touch.
    2. Use olive oil or another nonstick cooking oil to season the skillet.
    3. Using care, place the dough in your skillet.
    4. Toss in the sauce and garnishes
    5. Place the burgers back on the grill and shut the lid.
    • I think this is a pretty unique technique of cooking pizza on your charcoal grill since it opens the door to preparing things like thick crust pizza, deep dish pizza, filled crust pizza, and other ″thick″ pizza meals, all of which are currently unavailable on the market.
    • Would you like to try making a pizza pot pie, a skillet calzone, or a pizza lasagna?
    • If you choose a cast iron pan with higher walls on the side, you can get pretty creative with your campfire pizza meals.

    Weber Grill Inserts (True Pizza Oven Results!)

    • These grill inserts, which are designed exclusively for circular charcoal grills, will elevate your pizza-making experience to a whole new level.
    • I mention Weber grills because they have become synonymous with this kind of cooking, but these inserts will work with any 18.5 or 22.5 inch round charcoal barbecue that is 18.5 inches or larger in diameter.
    • They are designed to accommodate both large and small body types.
    • Even if you have a 27-inch grill, you may purchase an extension to accommodate your needs (26.75 exactly).

    The reason that these inserts work so well for producing real pizza is that they 1) use wood and 2) allow you to cook at a higher temperature than is normally possible.Because there is no need to remove the lid in order to insert the pizza, the temperature may be raised to roughly 800o and maintained at that level even while cooking numerous pizzas at the same time!The disadvantage of these accessories is that you must feed your grill with enough of wood in order to maintain the desired temperature.I was able to cook around 2-3 pizzas every wood-burning session, which was a good result.Because I’m testing a large number of them, I had to use a whole back of apple wood chunks, which I’m sure most people wouldn’t bother doing.

    1. If you buy them from a store like I do, they may be rather expensive, but if you have access to a decent source of wood to burn, you can reduce the cost significantly.

    KettlePizza

    Due to the fact that KettlePizza is the ″name brand″ of the group, it was the first one I purchased and tried.Despite the fact that I am still in the testing process, I was able to heat my grill to over 750 degrees in about 10-15 minutes.Simply lay your grilling grate in the center of the KettlePizza insert and close the lid.

    • Obtaining KettlePizza’s for-the-grill stone is a fantastic deal since not every stone is created for the grill, so getting KettlePizza’s for-the-grill stone is a smart move.
    • Any aluminum peel will most likely suffice, however based on the great quality of the insert’s substance, I think the peel will be of same grade.

    The PizzaQue Deluxe Kettle Grill Kit is exactly what it says it is: a ″kit.″ It includes the Weber grill insert, a pizza peel, a pizza stone designed specifically for grilling, and a charcoal fence, among other things.Although the ″fence″ isn’t strictly essential, as you can see in the photographs below, it prevents the embers from immediately scorching the bottom of the pizza.Traditionally, wood-fired pizza ovens operate in this manner.

    Starting with a small fire in the oven, the fire is gradually moved to the back of the oven when the wood fire dies down and transforms into extremely hot coals.It also means that you can pile on the coals and wood and reach temperatures of 800oF or higher.One commenter stated that they measured above 1000 degrees Fahrenheit!

    I’m pleased with the entire process, particularly the cooking on a pizza stone at the end.I have not, however, been able to get satisfactory results while using a pizza stone on a charcoal barbecue.I’ve spent a significant amount of time frying pizzas straight on the grate on my barbecue grill.

    How To Use a Pizza Stone on a Charcoal Grill

    This procedure produces a great pizza as a consequence.The main issue with this is that it does not have the classic New York style dough consistency that you would expect from a pizza.When you cook pizza directly on the grill grate, the bottom crust will be firm and have a crunch to it when you bite into it.

    A classic New York style pizza will have a beautifully colored crust with a bottom that is nearly floppy.People bending a pizza into a ″U″ shape to eat it are probably in your mind’s eye as you read this sentence.The majority of the time, this isn’t achievable when grilling pizza directly on a direct grate, unless it is slightly undercooked.

    This will result in a pizza that is uniformly baked.This is a more sophisticated grilling technique, so use caution.Please take a moment to consider what you are doing and proceed with caution.

    1. This is completely new territory!
    2. An important part of the strategy is to set a small amount of charcoal beneath the pizza stone and a bigger amount of coal under an area next to the pizza stone, as shown in the diagram below.
    3. In order to truly raise the temperature of the dome and give the pizza a true direct fire flavor, I recommend placing a basket of charcoal right on top of the grilling grate next to your stone next to the stone.

    Lighting the Charcoal

    Start by lighting a fully loaded charcoal chimney and allowing it to become hot.Fill a charcoal basket approximately halfway with unlit coal and set it aside.As soon as the coals are lighted and evenly distributed, you’ll place a couple of them directly on top of the unlit coals in the basket.

    1. It is important to remember that while using a pizza stone on a charcoal grill, it is important to maintain the majority of the charcoal under the region that is immediately adjacent to the pizza stone.
    2. If you place the charcoal immediately beneath the stone, the temperature of the stone will be around 800-900 degrees, and the temperature of the dome will be approximately 350 degrees.
    3. This is doomed to failure.
    4. Prepare the coals by piling them below the region away from the pizza stone, as seen in the photographs below:

    Using a Pizza Stone to Grill Pizza

    This photo was taken using a round pizza stone, but I have now upgraded to a square pizza stone that I really enjoy.Cooking on the stone begins with adding charcoal in the grilling basket, which is then moved to one side of the grill.Allow the stone to heat up to around 500 degrees before attempting to move the basket.

    This particular grilling grate features a convenient hinged piece that allows access to the coals beneath it.This grate area was definitely not intended to have the Weber charcoal basket sit on top of it, yet it works nicely in this situation.Long tongs should be used to carefully place some burning coals into the charcoal basket.

    1. Place the charcoal basket right up on the grate, adjacent to the pizza stone, so that it will be easily accessible.
    2. In the event that you do not have a hinged grate opening, you may still do this by adding heated coals from another grill or a chimney that has been lighted in a different spot.
    3. With the unlit coal in the basket, you may extend the length of time that the coals will burn.
    4. Later on, once the stone has been prepared, the basket will be sizzling hot to the touch.

    Let the Grill Heat UP

    3. This enables the entire pizza to be brought closer to the charcoal grill.
    4. Because the significant heat is emanating from one side of the pizza, it must be turned throughout the cooking process.

    Dome Temp For Grilling Pizza

    My dome temperature here was around 460 degrees, which resulted in the finest pizza of the night, according to my taste buds.Take a peek at the pizza after another 3 minutes has passed.If it has a lovely brown color to it, you are completed.

    If there is a portion that doesn’t appear to be entirely cooked, rotate it towards the charcoal basket to finish cooking it.It is likely that it will be completed in another 2 minutes.Check the bottom of the pizza as well; you don’t want the bottom to become burnt.

    1. This approach worked quite well for my pizza stone setup on a charcoal barbecue grill.
    2. Moving the charcoal basket to the grill grate at the top of the grill generated enough heat in the top dome of the grill to evenly cook the top of the pizza while the pizza stone cooked the bottom of the pizza.
    3. Sadly, I was unable to photograph the bottoms of these grilled pizzas, but I can assure you that they were not scorched or black on the bottom when I photographed them.

    Grilled Pizza using a Pizza Stone
