- From the time I started working at Weber, I’m willing to wager I’ve grilled at least 500 pizzas. There just isn’t anything not to like about pizza. Carbohydrates combined with tomatoes and cheese equals nirvana. In the past, I used to remark, ″I could eat pizza every day and never grow weary of it.″ Well, I’ve pretty much put that notion to the test over the previous several months and it turns out to be correct. I haven’t gotten sick of pizza yet. Pizza, especially grilled pizza, is a favorite. If you haven’t tried pizza on the grill yet, I strongly advise you to do so. It’s very wonderful! You may either use a pizza stone or just lay the dough on the grill’s grates, depending on your preference. It’s more convenient for me to do it on the grates. To ensure that the crust does not burn, it is necessary to use some skill during the baking process. However, once you have mastered this technique, the flavor and texture are well worth the effort. I prefer creating my own pizza dough from scratch, but I don’t always have the time to devote to it. Normally, I get fresh, pre-made dough from the grocery store, and it works just as well as homemade dough. The toppings are dictated by what I have on hand at the time. Pesto, Roma tomatoes, mozzarella, Parmesan, pine nuts, and kalamata olives were the ingredients I utilized for this pizza. You may use any toppings you like, but this is one of my all-time favorite combinations. RECOMMENDATIONS:Make certain that the grates of your grill are extremely clean. - Check the dough to see if there are any air bubbles: After 2 minutes, open the grill and check below the dough to see whether it has browned. If it has, continue cooking for another 2 minutes. Cook for another minute after rotating the dough 90 degrees with a spatula or tongs if it is brown on one side but not on the other, as described above. Continue to cook for another minute at a time until the bottom has began to brown. If the bottom has not begun to brown, cover the grill and continue to cook. If you have a hot grill, it should only take a couple of minutes to prepare. It will begin to bubble up with air pockets on the surface of the pizza dough.
- Remove the cooked dough off the grill and place it on a cookie sheet: Once the pizza dough has gently browned on one side, transfer it to a baking sheet or pizza peel to cool before removing it from the oven. Toss the dough with a spatula to turn it over so that the grilled side is now facing up. Cover the grill to ensure that the heat is retained for the following step.
- Toss with olive oil and top with your favorite ingredients: Using an extra virgin olive oil brush, coat the surface of the pizza with 1 ladle of sauce — no more, or you’ll have a soggy pizza. Assemble your toppings in layers, finishing with Mozzarella cheese (if using). If you’re using meat, arrange it on top of the cheese. To avoid your pizza becoming heavy and mushy from too many toppings, keep them to a minimum.
- Slide the pizza with the toppings back onto the grill: Reduce the heat on your gas grill if you’re using one. Use a charcoal barbecue and block the vents almost completely to prevent smoke from entering the grill. Cover with a cover and continue to simmer for another 2 to 3 minutes, or until the bottom begins to burn and the cheese is bubbling. Pull the grating off the grate onto a cutting board or other flat surface with a spatula and set aside for a couple of minutes before slicing. Cut into slices and serve!
