Don’t Hold The Anchovies

• The characters in the 1980s animated series ″Teenage Mutant Ninja Turtles″ and ″Bill & Ted’s Excellent Adventure″ use a very distinctive phrase whenever they decide to order a pizza, and everyone who grew up watching these shows will remember it.
• This statement, I believe, may be heard in ″E.T.″ when Eliot’s brother invites some friends over for a game of poker, as well as in an episode of ″Facts of Life″ where Blaire learns the dangers of being too superficial.
• In any case, the term is evocative of its era and is not something you hear very frequently nowadays.

″Hold the anchovies,″ says the statement in question.The fact that it’s a term that was so typical, that it included so much of the conversation between a pizza orderer and a toppings chooser, is that it never occurred to me that anchovies were a topping that anybody could conceivably desire on a pizza was amusing to me at the time.That is, until I decided to relocate to Brooklyn.Now that I reside in Park Slope, I can walk out my front door and get two terrific pizza alternatives.The first, Franny’s, is a hidden gem of a pizza place in Park Slope.With two stars from the New York Times and a varied, appealing clientele, it attracts a steady stream of customers who line up outside the door, eager to get their hands on one of the outstanding pizzas that come out of the wood-burning oven.

Alternatively, we recently discovered Peperoncino, a restaurant right here on 5th Avenue that we’d walked past a million times but had never entered until the blurbs taped to the door (from publications such as The Village Voice, New York Magazine, and Time Out New York) convinced us to give it a shot.The pizzas are wonderful, too, albeit they are not as polished as Franny’s.They are likewise made in a wood-burning oven, and they are somewhat less expensive than Franny’s.

• The outstanding pizza at both establishments, however, has that dreaded ingredient, that slimy, hairy, fishy curl of gray that used to strike fear into the hearts of 80s movie characters: squid ink.
• That’s correct, anchovies are used on the tastiest pizzas in this area.
• What is it about anchovies that makes them so delicious on a Park Slope pizza?
• (The anchovy pizza at Peperoncino is seen in the photo at the top of this page.) For starters, I believe it has something to do with the quality of the anchovies used: these aren’t the mealy, fatty varieties seen in jars.
• My best guess is that these anchovies have been salt-packed, which preserves the structural integrity as well as the flavor profile of a fresh anchovy during the packaging process.
• Second, the anchovies aren’t spread all over the pizza; there are just four of them on the pizza seen at the top of this piece.

In this way, the anchovies may do their strong work without overpowering the pie.Finally, as you can see in that photograph, the anchovy is paired with additional robust flavored components, including a generous amount of slivered garlic, capers, and, of course, peperoncino (pepperoncino).With the bombast of its backing vocalists, it becomes even more forceful, similar to Beyonce’s performance with Destiny’s Child.Alternatively, Diana Ross and The Supremes.

1. I know many of you will post comments like ″sick″ or ″I hate anchovies″ or ″guy, where’s my car?″ but think about it: why would characters in 80s movies have to say ″hold the anchovies″ unless there was a period when people were genuinely ordering a lot of anchovies on their pizza?
2. When seen in this light, anchovies harken back to a simpler period, a happier time, a time when people weren’t worried about foul breath or hairy fish on their pizza, among other things.
3. Maybe it’s time to go back in time, to a time before the Ninja Turtles and time-traveling phone booths were introduced.
4. Instead of responding with ″hold the anchovies,″ perhaps it’s time for folks to say: ″Four anchovies, please″ when someone calls in to order a pizza.

″Add salt to them as well,″ says the author.That would be ″righteous,″ in the words of a Ninja Turtle.
