    Fathead Pizza

This Fathead Pizza is a low-carb option to satisfy your pizza cravings while on a ketogenic diet, or if you just want to reduce your carb intake. The dough is surprisingly easy to work with, and it tastes absolutely fantastic!Fathead Pizza was the first place I went when I went on a Keto diet for the first time around a year ago. When I mentioned to a friend how much I missed my comfort foods, she informed me that I had to try Fathead pizza, which I did.

    1. That’s not a name you’re likely to forget, hehe!
    2. I was pleasantly delighted by how tasty it was and how close it tasted to ″normal pizza″ to my family and me.
    3. There is no doubt that this isn’t a true Semolina Pizza Dough, but with the cheese and toppings, you won’t notice the difference.

Why This Recipe Is So Great

The fathead pizza crust is superior to other alternative crusts — I’ve tried every uncommon flour-free crust recipe out there, from cauliflower crust to chicken crust, and I believe this fathead pizza crust to be the finest by far.Several rounds of recipe testing were completed — I experimented with different ratios and ingredients from the original for a whole year. This is the final version, which has become a rather regular treat for my family due to the order in which I combine the ingredients and the method by which I bake the cake.Making the dough is simple — it has a surprise crust-like texture and is easy to roll out.

    1. Because measuring is a bit simpler when using a scale (affiliate link), I’ve included the weights for all of the ingredients in case you don’t have one.

    Step by Step Overview:

In a microwave-safe dish, combine the shredded mozzarella cheese and cream cheese and microwave in 30-second intervals, stirring after each. The photo on the left below shows the result after one 30-second interval, and on the right, you can see that it doesn’t appear to be coming together, but believe me, it will eventually do so!After two or three 30-second microwave intervals, the cheese should be smooth and well-combined, as seen in the following: To make the dough, combine blanched almond flour, garlic powder, salt, and nutritional yeast in the following order: It is entirely optional to include garlic powder and nutritional yeast, but I prefer to use both for their taste.Stir it around, and you’ll see on the left-hand side of the shot below that it will probably get difficult to stir at a certain point.

    1. At that point, put the dough back in the microwave for another 15-30 seconds, just long enough to soften the cheese again (as shown on the right in the photo above).
    2. Finally, add one beaten egg to the dough as follows: At first glance, it will appear that the egg will not be incorporated, but if you knead the dough for approximately 30 seconds, either with a hard spatula or by hand, the dough will accept the egg.
    3. This is now the time to lay out the fathead pizza dough and cut it into whichever shape you like!
    4. You may either make a large rectangle or a large circle, or even many circles for individual pizzas, depending on your preference.
    5. If you want to roll out the dough, sandwich it between two sheets of parchment paper and roll it with a rolling pin.
    6. It should be noted that parchment paper is required.

Even when using wax paper, the dough has a tendency to stay together.Prick the dough all over with a fork to prevent the pizza from bubbling up during the baking process: When the crust has been in the oven for 7 minutes, it should be somewhat golden on the bottom and just beginning to color around the edges. It will still appear a little raw on the top, which is perfect in my opinion.

    • Toss the pizza on its side: Apply sauce, cheese, and any additional toppings you choose now that the bottom has become the top of the sandwich.
    • Today’s pizza toppings are tomato sauce, cheese, and pepperoni, but you could also try Buffalo Chicken Pizza toppings or Caramelized Pear with Gorgonzola Pizza on top if you like something a little different.
    • Upon further baking for 5 minutes in the oven, you’ll see that the more ″raw″ side from earlier will now brown properly, and the cheese on top should have melted: Zucchini Ribbon Salad and Charred Broccoli are excellent side dishes to provide as a light and healthful alternative to the main course.
    • Enjoy!

    Fathead Pizza Crust

    • 3 portions (servings) Preparation time: 5 minutes Preparation time: 10 minutes Time allotted: 15 minutes This Fathead Pizza is a low-carb pizza delight that can be topped with any of your favorite pizza toppings. 1/2 teaspoon salt
    • 2 tablespoons nutritional yeast optional**
    • 1/2 teaspoon garlic powder optional
    • 1 big egg beaten
    • 1.5 cups part-skim shredded mozzarella cheese (168g by weight)
    • 1 ounce full-fat cream cheese (28g by weight)
    • 3/4 cup blanched almond flour* (84g by weight)
    • 1/4 teaspoon salt
    • Preheat the oven to 425 degrees Fahrenheit.
    • Combine the mozzarella and cream cheese in a microwave-safe bowl until well combined.
    • Using 30 second intervals and stirring in between, microwave the cheeses until they’re completely smooth. It should take no more than 2-3 intervals in total.
    • Combine the almond flour, salt, nutritional yeast (if using), and garlic powder (if using) in a large mixing bowl until well combined. If the dough is too stiff to stir, microwave it for an additional 15-30 seconds to soften it again
    • if the dough is still too stiff, repeat the process.
    • Add the egg to the mixing bowl and knead it into the dough either with a firm spatula or by hand (the dough shouldn’t be too hot, but if it is, allow it to cool somewhat before continuing). At first glance, it may appear that the egg will not integrate, but after around 30 seconds of kneading, it should.
    • Spread a layer of parchment paper*** between two pieces of dough and stretch it out into the desired shape (circular, rectangle, etc.) until it is about 1/8′′ thick. Transfer the dough to a baking sheet while keeping it on the parchment paper

    • this is my preferred method.
    • Bake the pizza for an extra 5 minutes to ensure that the cheese on top is completely melted. Serve and take pleasure in it

It’s important to use blanched almond flour rather than ″almond meal/flour,″ which is much less finely powdered.I really enjoy the flavor of nutritional yeast, so I use it to flavor the dough as well as to strengthen it with vitamins (I use Bragg’s brand nutritional yeast).*** Wax paper, on the other hand, does not function as well. The dough is going to stay together.

    1. Make certain you use parchment paper.
    2. Leftovers can be stored in the refrigerator for up to 5 days or in the freezer for up to 2 months after preparation.
    3. To keep the slices from sticking together, I recommend inserting sheets of parchment paper between them.
    4. Heating instructions: Microwave for approximately 30 seconds, or until the cheese is melted.
    5. Alternatively, bake for about 5 minutes at 350 degrees Fahrenheit, or until the cheese is melted.

    1. When I first learned about this high-protein, ketogenic, gluten-free fad, I was both confused and perplexed by it.
    2. Is it possible that this crust will be as crisp and crave-worthy as a traditional gluten-filled pizza dough?
    3. The response is a resounding yes in the most emphatic way!
    4. Faster and easier to make than standard pizza crust, fathead pizza crust bakes up crispy and flavorful, and it’s really tasty.
    5. If you’re looking for a low-carb pizza recipe, you’ve come to the right place.
    6. Find out how to make this fantastic pizza crust substitute with only four ingredients by following the instructions below.

What the Heck Is Fathead Pizza Crust?

The precise question my husband said as he grabbed for a third slice of pizza came to mind.Originally inspired by the Fat Head documentary, in which Tom Naughton investigates the possibility that a low-carb, high-fat diet may cure everything from cholesterol to heart disease, the Fathead pizza crust was developed in 2010.Fathead, along with Atkins and other low-carb diets, was a predecessor to the currently popular ketogenic diet, which was developed in the 1980s.Avoid getting too caught up in the history of this pizza crust, since even if you’re not following a low-carb diet, this pizza dough is really clever and tasty.

    1. Rather than simply making this pizza dough when I’m out of flour for traditional pizza dough or feeding gluten-free visitors, this is something I’d do on a daily basis.
    2. There are several various quantities of almond flour and coconut flour in the recipes below, as you’ll see below the recipe.
    3. As a first choice, almond flour is used since it gives the pizza a flavor that is more similar to traditional pizza crust.
    4. Coconut flour is a fantastic substitute since it is affordable and, more importantly, it is safe for people who are allergic to nuts.
    5. Because it is substantially more absorbent, you will use significantly less of it.
    6. Additionally, coconut flour will produce a crust that is significantly sweeter and more coconut-flavored.

4 Crucial Points to Remember When Making the Best Fathead Pizza

    1. Melt the cheese and thoroughly combine it. This pizza crust is commonly made in the microwave, where the cream cheese and mozzarella are heated together until the dough is formed. It is possible to complete this stage without the use of a microwave by cooking in a nonstick pan on low heat. A beaten egg and almond flour are added to the cheese once it has cooled down enough to touch. You want to combine these ingredients well by mixing and kneading them together. Don’t be concerned about overworking the dough
    2. the idea is to get the consistency of Silly Putty.
    3. Don’t roll, instead press. You’ll need to grease your hands before handling this dough since it’s really sticky. It is not recommended to use a rolling pin to roll out the dough since it will stick. As an alternative, pat the dough into a very thin, uniform layer on a sheet of parchment paper.
    4. Make some openings for the air to flow through. Docking is the term used by professional bakers to describe this process. Use the tines of a fork to poke holes in the dough so that enormous air bubbles don’t ruin your pie’s crust.
    5. Bake first, then add the topping. Bake the crust for eight to ten minutes before adding the toppings to ensure a crisp crust. You will get soggy crust and overdone toppings if you try to top the pizza before it has had a chance to turn golden brown and wonderful.

    Topping and Serving Fathead Pizza

We’ve eaten this cheese-based crust topped in a variety of ways, from the standard tomato sauce and mozzarella to this garlic cream and broccoli variation below, which we’ve included below.Keep the toppings to a basic sauce and one to two extra toppings, like as cheese and pepperoni, for maximum flavor. It’s also important to remember that if you’re attempting to make this pizza keto-friendly, you’ll want to choose a topping that is rich in fat (like the one below) and low in sugar (think: tomato paste instead of pizza sauce). No matter how you dress it up, you’ll never believe how amazingly tasty this cheese-based crust actually is until you give it a try for yourself.

    1. It’s extremely amazing.
    2. Fathead pizza crust is a high-protein, Keto-friendly, and gluten-free alternative to classic pizza dough that’s also high in protein.

    Ingredients

    For the crust:

    • 3 tablespoons shredded part-skim mozzarella cheese (about 8 ounces)
    • 1 ounce cream cheese (about 2 tablespoons), sliced into 4 pieces
    • 2 cups shredded part-skim mozzarella cheese (about 8 ounces)
    • 3/4 cup almond flour or 1/3 cup coconut flour
    • 1 big egg, lightly beaten
    • 1 tablespoon olive oil
    • 1 tablespoon honey

    For the toppings:

    • 1 cup grated Parmesan cheese
    • 1/2 cup heavy cream
    • 1 clove minced garlic
    • 1 cup broccoli florets, chopped into bite-sized pieces
    • 1/2 cup shredded part-skim mozzarella cheese
    • 1 cup broccoli florets, cut into bite-sized pieces

    Instructions

    1. Preheat the oven to 400 degrees Fahrenheit, as well as the baking sheet. Placing a rack in the lowest position of the oven is a good idea. Invert a rimmed baking sheet and set it on a rack in the oven while preheating the oven to 400°F. Prepare a sheet of parchment paper
    2. melt the cream cheese and mozzarella in a separate bowl. Microwave the mozzarella and cream cheese in a large, microwave-safe mixing bowl until melted, about 90 seconds total. Stir regularly while heating. (Alternatively, melt the cheeses in a nonstick pan over medium-low heat until melted and smooth, then transfer the melted cheeses to a large mixing bowl. Make use of a rubber spatula to gently swirl the melted cheeses together until they are mainly smooth and cold to the touch.
    3. Using your hands, knead the dough until it is smooth. Stir in the flour and egg until everything is well-combined. Gently massage the dough until it is smooth and somewhat springy, coating your hands with olive oil as you go. The aim isn’t a completely smooth dough, but rather a homogenous dough with no apparent pockets of cheese or egg.
    4. On a piece of parchment paper, roll out the dough into a 10-inch circle. Transfer the dough to the parchment paper and flatten it into a 10-inch circle with your well-oiled hands, if necessary. If the dough is very sticky, cover it with another piece of paper and spread it out into a circle with a rolling pin to make it less sticky. Use a fork to poke and ″dock″ the dough all over to prevent bubbles from forming in the baking pan.
    5. Preheat the oven to 350°F and bake the crust for 8 minutes. Transfer the pizza crust on the parchment paper to the heated inverted baking sheet and bake for another 5 minutes. Preheat the oven to 350°F and bake for 8 minutes. During the time the crust is baking, prepare the garlic sauce.
    6. Make the garlic sauce according per package directions. To make the Parmesan Cream Sauce: Place all of the ingredients in a small saucepan over low heat and bring to a boil. Cook, stirring often, until the sauce has thickened, approximately 3 minutes
    7. remove from heat.
    8. Place the toppings on top of the pizza. Take the crust out of the oven and set it aside. Distribute the cream sauce, broccoli florets, and the remaining shredded cheese on top in an even layer.
    9. Bake for another 5 to 7 minutes, or until the top is brown. Return the pizza to the oven and bake for 5 to 7 minutes, or until the crust is a deep golden brown and the cheese on top has melted.
    10. Allow to cool before slicing. Toss the pizza with a wire rack and let it cool for 5 minutes before cutting and serving.

    6. I was under the impression that there would be a lot of work involved in making the pizza, but it turned out to be much more than that.

The room was ready in 10 minutes, and after 20 minutes, I was ready to start smulling on the table.I was quite satisfied with the outcome. The pizza had a crisper than average crust and a deliciously ripe flavor.

Why is it called Fathead Dough?

As a general rule, fathead dough is a low-carb dough that is created using mozzarella and cream cheese as well as an egg and a variety of different types of flour (almond, coconut, or a combination.) Fat Head, a documentary directed by Tom Naughton and released in 2009, inspired the name of the band.Following Naughton for a month, the documentary shows how he manages to lose weight and lower his cholesterol while eating fast food on a tight carbohydrate restriction of 100 grams a day.Naughton then made a recipe from Cooky’s Creations, known as the Holy Grail Pizza Crust, widely popular.Since then, the low-carb pizza crust recipe has been altered into a slew of delicious keto-friendly pizzas, including this one.

Tips for Crispy Low Carb Chips

    • Make an effort to roll the dough as evenly as possible. During the baking process, thicker places will not get as crispy as thin ones, and thinner parts will burn.
    • Similarly, lay out the dough as thinly as you possibly can. Your low carb tortilla chips will be crispier if you roll out the dough as thinly as possible before baking.
    • If you want the greatest texture possible, use a superfine blanched almond flour.
    • Bake the chips a second time. To begin, bake the sheet of fathead dough for around 10 minutes to firm the dough. Then, using a pizza cutter, cut the dough into triangles to make the pizza. After that, cut the triangles apart. Add a few more minutes to the oven to help dry out the chips and make them more crispier
    • Keep the tortilla chips at room temperature in a well covered container. It is not recommended to store them in the refrigerator or freezer, as they are more prone to turn mushy

    Ingredients

    • 1-and-a-half cups shredded mozzarella
    • 3/4 cup almond flour
    • 2 tbsp cream cheese
    • 1 egg
    • 1/2 teaspoon salt (or to taste)
    • 1 teaspoon cumin, 1 teaspoon chilli powder, 1/2 teaspoon garlic powder, 1/4 teaspoon cayenne pepper, or to taste

    Instructions

    1. Preheat the oven to 350 degrees Fahrenheit (180 degrees Celsius). Prepare a baking sheet by lining it with parchment paper.
    2. Add the mozzarella and cream cheese to a large microwave-safe mixing bowl and mix well. Bake for 30 seconds at a time, stirring after each increment, until the cheese is melted and simple to stir. Stir everything together thoroughly.
    3. Add the almond flour, salt, spices, and egg to the same mixing bowl and mix well. Using a whisk, mix all of the ingredients. It may be necessary to knead the mixture with your hands if the almond flour and egg mixture are difficult to integrate. Allow 30 minutes to 1 hour for chilling.
    4. Place the cold dough between two pieces of parchment paper. Refrigerate for at least 30 minutes before using. Make use of a rolling pin to roll out the dough until it is extremely thin. Try to keep the thickness between 1/16in and 1/8in.
    5. Bake for 10-12 minutes, or until the dough is firm and golden brown, on the whole sheet of dough. The sheet pan should be carefully taken out of the oven.
    6. To cut the dough into triangles, use a pizza cutter or a sharp knife to score the surface. Carefully separate the triangles on the sheet pan, and then place the sheet pan back in the oven to bake for another 15 minutes. Bake for another 5-10 minutes, depending on the thickness of the slices, or until crisp.
