While Tamagoyaki is seasoned in a variety of ways depending on the family, with some being more salty and others being more sweet, the egg used to make Sushi is almost certainly quite sweet. Although neither of us grew up eating sweet Tamagoyaki, we grew up eating Tamago Sushi, which was invariably served with a strongly sweetened fried egg. If you’ve ever had Tamago Sushi in a Japanese restaurant, you’re probably already aware that the combination of sweet egg and vinegary Sushi Rice is a delicious one. We are by no means sushi chefs, and when it comes to preparing Nigiri Sushi (tiny Sushi pieces as opposed to rolled Sushi), we are just as inexperienced as the rest of the population. Making outstanding sushi pieces requires a very specific and learned skill, which includes everything from molding rice to preparing fish. In order to successfully produce a Sushi rice ball, your hands must be sufficiently moistened so that the rice balls may be made without trouble (yes, we had to practice more than a few times). Rice will adhere to your hands if they are too dry. If they are too moist, the rice will lose its form and fall apart. Sushi chefs utilize a vinegary water called Tezu to prepare Sushi, and they use precisely the correct amount of it on their hands as they work to ensure that the sushi is as smooth as possible. Tezu will keep the rice from sticking together, but it will not alter the flavor of the Sushi Rice. If all of that is too much for you, you may get sushi molds, and you can make sushi balls simply by pressing them together. They are readily available in Japanese stores and on the internet. Following the preparation of Tamago Sushi (we used less than half of a single dish of Sushi Rice), you may choose to prepare other components or fillings for additional Nigiri Sushi or Hand Rolls in order to avoid wasting the leftover rice. After being refrigerated, sushi rice will become hard and bland, and it will lose its flavor.     • 1 recipe of Sushi Rice
    • 1/4 cup rice vinegar
    • 1/4 cup water
    • Soy sauce (optional)
    • Wasabi (optional)
    • 2 tablespoons water
    • 1 1/2 tablespoons sugar
    • 1 tablespoon Mirin
    • 1/4 teaspoon salt
    • 1/4 teaspoon rice vinegar
    • 4 eggs

    Instructions

    1. In a medium-sized mixing bowl, whisk together the water (2 tablespoons), sugar, mirin, salt, and rice vinegar (1/4 teaspoon). Mix until the sugar is completely dissolved. Add the eggs and combine thoroughly.
    2. Add oil to a pan that has been heated to a medium high temperature.
    3. It is preferable to use a rectangular Tamagoyaki pan, although a circular pan can also be used.)
    4. Pour a thin layer of the egg mixture into the pan, tilting the pan to ensure that the bottom of the pan is completely covered.
    5. Gently roll the thin egg into a log when it has begun to firm a little.
    6. When the bottom of the egg has set but there is still liquid on top, it is time to start rolling. You will not be able to roll the log properly if you allow the egg to cook too long. You should have a log at one end of the pan at this point. Oil should be added as needed. Again egg mixture should be added to the pan to cover the bottom once more, with the roll of egg at the end. As soon as the fresh layer has set, carefully roll the log back onto the set egg and roll to the opposite end of the pan.
    7. Continue to add egg to the pan and roll the pan back and forth until all of the egg has been used.
    8. Remove the pan from the heat and allow it cool fully.
    9. Using a sharp knife, cut the egg log in two.
    10. Slice 1/4″ thick (6-7 mm) vertical slices from there until you have at least 12 pieces.
    11. Remove from consideration.
    12. Nori should be cut into 5″ x 1/3″ (about 13 cm x 1 cm) strips. Remove from consideration.
    13. In a small mixing bowl, combine 1/4 cup vinegar and 1/4 cup water.
    14. Using the vinegar mixture, lightly moisten or dampen your hands, then take a golf ball-sized piece of Sushi rice (about 2/3 oz or 20 g) in your hand.
    15. Shape the dough into an oblong shape.
    16. Make a total of 12 pieces by repeating the process.
    17. Each rice ball should be topped with a piece of egg and wrapped in Nori strips all around. If desired, serve with dipping sauces such as soy sauce and wasabi.
