Description

These easy pepperoni pizza rolls are crispy on the exterior and soft and chewy on the inside, and they’re stuffed with pepperoni and cheese before being baked till bubbling. This is a surefire hit with the crowd!

For the pizza dough:

  • Three hundred and fifty grams all-purpose flour
  • six grams salt
  • two hundred and fifty grams water
  • three grams instant yeast, four grains sugar, and fifteen grams extra-virgin olive oil

For the filling:

  • 1 cup pizza sauce, either handmade or purchased
  • 1 + 12 cups shredded mozzarella cheese
  • 2 oz. pepperoni slices (approximately 24 pieces)
  • 14 cup cornmeal (optional)
  • 1 + 12 cups shredded mozzarella cheese
  • 1-tablespoon extra-virgin olive oil (optional, for brushing over top)
  • 2-tablespoons grated Parmesan cheese
  • 1-tablespoon fresh parsley, coarsely chopped (for garnish)
  • 1-tablespoon salt

Make the Pizza Dough:

  1. In a large mixing basin, whisk together the flour and salt until well combined. In a small mixing bowl, whisk together the water, yeast, sugar, and olive oil. Pour it into the flour mixture once it has been whisked to dissolve.
  2. With a silicone spatula, mix the ingredients thoroughly until no dry flour is visible in the bowl. With the spatula, scrape along the edges of the bowl to ensure that everything is evenly distributed. Allow the dough to rest for 10-15 minutes to allow spontaneous gluten development.
  3. Knead the dough with your hands until it is smooth and elastic, about 7-10 minutes.
  4. Set aside the dough for 1 hour or until it has doubled in size.

Shape the Pizza Rolls:

  1. Preheat the oven to 400 degrees Fahrenheit.
  2. Use a rolling pin to carefully flatten the pizza dough into a 10×14-inch rectangle on a lightly floured surface, then transfer to a baking sheet. Pizza sauce should be spread on top. After that, equally distribute the mozzarella and top with pepperoni slices (or any other chosen toppings)
  3. Using your hands, tightly roll up the dough lengthwise into a log, pinching the ends together to seal.
  4. Making use of a knife or a bench scraper, cut the rolled dough into 12 equal pieces that are each approximately 1-inch wide
  5. Cornmeal should be placed on a shallow dish, and the bottom of each roll should be dipped into the cornmeal. The use of cornmeal is optional, but highly encouraged. In addition, it prevents the rolls from sticking to the baking sheet and aids in the creation of an extra crispy bottom.

Bake the Pizza Rolls:

  1. Using a large half-sheet baking tray lined with parchment paper, arrange the rolls flat on the pan with the cornmeal side down. Rolls with crispier crusts should be brushed with a small amount of oil.
  2. Cook for 20 minutes, or until the top is golden brown. Allow the pizza rolls to cool for 5-10 minutes before serving.
  3. Place a sprinkle of Parmesan cheese and parsley on top and serve immediately with pizza sauce or marinara sauce on the side.

Notes

  • Preparation tip: Roll the pizza dough with the toppings and cover securely in plastic cling wrap to store in the refrigerator (before slicing). Refrigerate for up to one day after making the dish. When you’re ready to bake, cut the roll into slices and bake it according to the recipe directions. How to store: Once the pizza rolls have been allowed to cool, place them in an airtight container and keep in the refrigerator for up to 3-4 days. How to freeze: Once the pizza rolls have been allowed to cool, place them in an airtight container or freezer bag. For up to 3 months, you may keep it in the freezer. Heat for up to 10 minutes at 350 degrees Fahrenheit until warmed through, in the air fryer for up to 5 minutes, or for up to 25 minutes if reheating from frozen, depending on how much time you have.
