  • Bread Flour: A high protein flour is important for bagels. We’re looking for a dense and chewy texture, rather than something soft and airy like cinnamon rolls. The only answer is to use bread flour.
  • Baked goods are sweetened with barley malt syrup, which can be difficult to come by
  • however, brown sugar works just as well as barley malt syrup in bagel dough.
  • Flavor is represented by the salt.

A saucepan of boiling water must be used to cook the bagels for 1 minute on each side. This is the most critical step in the entire recipe, in my opinion. Why?

  1. The process of boiling the bagels gives the bagels their wonderful sheen. However, appearances aren’t everything
  2. this sheen is really the consequence of the starches in the dough gelatinizing, which results in a crisp, lustrous covering. This is something I learnt from Cooks Illustrated.
  3. When you boil bagels, you are cooking the outside layer of dough, which ensures that they will maintain their shape in the oven.

Fill the water bath halfway with honey or barley malt syrup. Why? The sugar enhances the caramelization and crispiness of the dish. The similar effect may be achieved by brushing egg wash onto boiled bagels. Don’t forget to include that as well!

Homemade Bagel Varieties

  1. Plain Bagels: Prepare them according to the instructions provided below.
  2. Cinnamon Raisin Bagels: Make cinnamon raisin bagels according to my recipe.

  • With this tried-and-true dough recipe, you can make fresh bagels in your own kitchen. Never miss the water bath or egg wash since they both contribute to a more chewy and golden brown crust. a cup and a half (360ml) warm water (between 100-110°F, 38-43°C)
  • 2 and 3/4 teaspoons instant or active dry yeast*
  • 4 cups (520g) bread flour (spoon & leveled), plus more for the work surface and hands*
  • 1 teaspoon granulated sugar or packed light or dark brown sugar (or barley malt syrup*)
  • 2 teaspoons salt
  • a teaspoon of baking powder
  • a teaspoon of baking soda
  • a teaspoon of
  • Nonstick spray or 2 teaspoons olive oil for coating the bowl
  • 1 egg white beaten with 1 Tablespoon water for egg wash
  • nonstick spray or 2 teaspoons olive oil for coating the bowl
  • Prepare 2 quarts of water
  • 1/4 cup (60g) honey (or barley malt syrup)*
  • and 2 quarts of baking soda.
  1. Prepare the dough as follows: In the bowl of a stand mixer fitted with a dough hook attachment, whisk together the warm water and yeast until well combined. Allow for 5 minutes of resting time after covering.
  2. Combine the flour, brown sugar, and salt in a mixing bowl. 2 minutes at a low pace is sufficient. The dough will be quite stiff and appear to be rather dry when finished
  3. Prepare a lightly floured surface for the dough to be turned out on. Using lightly floured hands, knead the dough for 4-5 minutes until smooth and elastic. Due to the weight of the dough, the mixer cannot properly knead it.
  4. Lightly lubricate a large mixing bowl with olive oil or nonstick spray to prevent sticking. Place the dough in the basin and swirl it around to coat it with oil on both sides. Cover the bowl with aluminum foil, plastic wrap, or a clean kitchen towel to keep the bacteria from growing. Wait 60-90 minutes, or until the dough has doubled in size, at room temperature before continuing with the recipe.
  5. Prepare two big baking sheets by lining them with parchment paper or silicone baking mats.
  6. Bagels should be shaped after the dough has been punched down to liberate any trapped air bubbles. Separate the dough into eight equal pieces. (Use your best judgment–it doesn’t have to be flawless!) Form each piece into a ball by rolling it between your hands. Make a 1.5 – 2 inch diameter hole in the middle of each ball by pressing your index finger into the center of each ball. For a visual demonstration, please see the movie above. Place a loosely folded kitchen towel over the formed bagels and set them aside for a few minutes while you prepare the water bath.
  7. Preheat the oven to 425 degrees Fahrenheit (218 degrees Celsius).

  9. 2 quarts of water should be added to a big, broad saucepan. In a separate bowl, whisk together the honey and lemon juice. Bring the water to a boil, then decrease the heat to medium-high to keep it warm. Float the bagels in the water one at a time, making sure they have enough area to float about. The bagels should be cooked for 1 minute on each side
  10. using an egg wash brush, paint the tops and sides of each bagel with a light coating of the egg wash. Place 4 bagels on each baking sheet that has been prepared. Place the pan in the oven for 20-25 minutes, flipping it halfway through. The bagels should be a dark golden brown color when finished baking. Immediately remove from the oven and let the bagels to rest for 20 minutes on the baking sheets before transferring them to a wire rack to cool fully
  11. Whatever you want, slice, toast, or top it with!

Notes

  1. Instructions for making the dough ahead of time: Prepare the dough through step 4, but place it in the refrigerator overnight rather of allowing it to rise at room temperature for 60-90 minutes as directed. The flavor of the bagels is enhanced by the long rising process. After removing the dough from the refrigerator in the morning, allow it to rise for 45 minutes at room temperature before using it. Step 5 should be followed. Making the bagels the night before is not recommended since they may puff up excessively the next day, according to me.
  2. Freezing Instructions for Preparing Ahead: Baked bagels keep well in the freezer! Prepare ahead of time and freeze for up to 3 months, then defrost over night in the refrigerator or at room temperature, then heat until desired temperature is reached You may also freeze the bagel dough once it has been made. As soon as you have finished pounding the dough down in step 6, cover it securely in plastic wrap and then a layer of aluminum foil. Freeze for a maximum of three months. Allow the dough to thaw overnight in the refrigerator before punching it down again to expel any air bubbles. Step 6 should be completed in its entirety.
  3. Stand mixer with a dough hook attachment, large baking sheets (I use these), large pot (I use my 5.5 quart dutch oven), pastry brush
  4. Yeast: Use quick or active dry yeast to get the best results. If you are using active dry yeast, the rise time might be as long as 2 hours or more. Because 1 regular package of yeast is approximately 2 and 1/4 teaspoons, you will use somewhat more than 1 packet of yeast.
