    • Sushi Rice:  It is one of the key ingredients. If you want your sushi to taste and have texture like the sushi from your favourite Japanese restaurant, use high quality short-grain sushi rice and cook it the right way. I like Saitaku, Blue dragon and Tamanishiki Super Premium short grain rice. You can buy it in Asian section of your local supermarket or order online.
    • Rice Vinegar: Any rice vinegar will work well. I like to add ½ teaspoon of sugar to make homemade sushi vinegar.
    • Shrimp tempura: You can use pre-cooked shrimp tempura or make it at home. Imitation crab sticks (kani) will work well too.
    • Avocado: Be sure to use ripe avocado that is firm enough and won’t get mushy. Alternatively, you can substitute avocado for cucumber.
    • Nori: You can find nori sheets in the Asian aisle of your supermarket or purchase online.
    • Panko bread crumbs:  I don’t recommend to use regular breadcrumbs. You won’t achieve that crunchiness.
    • Olive oil: Any vegetable oil will work well. I tried to fry the bread crumbs in butter, they added an amazing buttery flavor. So use whatever you have on hand.

    How to make crunchy roll sushi

    Let’s make it at home for a fraction of the cost and impress our loved ones!

    1. Make sushi rice- Rinse and cook rice according to the package instructions. The amount of water may vary, depending on the brand. I usually cook sushi rice on the stove or in my Instant pot.  If you have rice cooker, use it to get the perfectly cooked rice. When it is cooked, add rice vinegar (combined with sugar) and mix. Allow to cool completely.
    2.  Cook shrimp tempura-If using pre-cooked shrimp, preheat your oven to 450F|235C. Bake shrimp for 10-15 minutes.
    3. Make panko topping-Heat oil in a skillet over medium heat. Add panko bread crumbs and cook until golden brown, stirring continuously. Transfer to a plate to stop cooking. Allow to cool down.
    4. Assemble sushi- Cover the bamboo mat with a piece of plastic wrap to prevent rice from sticking to it. Place half of the nori sheet on the mat, shiny side facing down. Spread about ¾ cup of sushi rice over the nori evenly. Flip it over. Place shrimp tempura and avocado slices on the nori. Roll it up tightly.
    5. Roll in panko breadcrumbs-Roll each sushi roll in the toasted breadcrumbs. Slice crunchy roll sushi and enjoy!

    I love to serve it with soy sauce, spicy mayo, yum yum sauce and a side of kani salad.

    • I usually cover bamboo mat with plastic, spread the breadcrumbs over it and roll each sushi roll in them.

    The Best Crunchy California Roll (Tips)

    1. Rinse rice. Don’t skip this step! Use a fine-mesh strainer, rinse with cold water until the water runs clear.
    2. Keep a bowl filled with water or Tezu water (water +vinegar) when working with rice.  This helps to prevent rice from sticking to hands.
    3. Allow panko bread crumbs to cool down before adding to crunchy sushi roll.

    Variations

    • Boston Roll: It is also a maki roll made with poached shrimp, avocado and cucumber, topped with masago or tobiko.
    • You can substitute masago with toasted panko crumbs.
    • Shrimp tempura roll: It contains crispy shrimp tempura, imitation crab sticks, avocado and cream cheese.
    • You don’t need to cut nori sheets in half when making this roll.
    • Spicy roll: You can make spicy California roll by adding spicy mayo to the filling.
    • Spread it on shrimp tempura or imitation crab sticks.

    For the Sushi Rice:

    • Sushi rice- 1 ½ cup
    • Water-1 ½ cup
    • Rice vinegar-2 tablespoons, optional
    • Sugar-½ teaspoon
      For the Shrimp Tempura California Roll:

    • Pre-cooked shrimp tempura or imitation crab- 8
    • Avocado (ripe but still firm, sliced)-1
    • Nori sheets (cut in half to make 4)-2

    For the Crunchy Topping:

    • Panko breadcrumbs-1 cup
    • Olive oil- 2-3 tablespoons

    For Serving:

    • Spicy Mayo
    • Soy sauce
    • Yum Yum sauce
    • Kani salad

    Sushi Rice

    • Cook sushi rice according to the package instructions. Once cooked, add rice vinegar(mixed with sugar)  and  allow to cool down slightly. 

    Shrimp tempura

    • Preheat your oven to 450F|235C. Bake the frozen pre-cooked shrimp tempura for 10-15 minutes (depends on the size of the shrimp). Keep aside.

    Crunchy topping

    • Meanwhile, heat oil in a medium skillet over medium heat.
    • Add the panko bread crumbs and cook for 2-3 minutes until golden, stirring constantly. Allow to cool completely.

    California Sushi Rolls

    • Cover the bamboo mat with plastic wrap to prevent rice from sticking.
    • Place the nori on the mat, shiny side down.
    • Spread about ¾ cup of cooked rice over the nori evenly. Keep a bowl filled with water to dip  your hands when you are working with rice.
    • Flip it over so the rice is facing down.
    • Place 2 pieces of shrimp tempura and 2 slices of avocado on the nori. Roll it up tightly. Remove the plastic wrap. Repeat with the remaining nori sheets.
    • Place the panko bread crumbs on sushi mat, covered with plastic. Roll each sushi roll in the toasted breadcrumbs. Remove the plastic and slice sushi using a sharp knife.
    • Serve and enjoy!

    • The California crunch roll is probably one of the most classic sushi rolls.
    • Luckily it is easy to make at home!
    • This recipe tastes great and you won’t believe your taste buds when something you make at home tastes just like the one you get in your favorite restaurant.
    • The imitation crab, avocado and cucumber with nori, rice, spicy mayo, eel or oyster sauce and french fried onions are what constitute this recipe.
    • You can of course add anything to this for a fun spin on the classic.
    • I like to add cream cheese, peppers or teriyaki sauce sometimes.

    Here is my 9 step guide to rolling your own sushi:

    *I am showing you my sushi rolling steps on my creamy crab sushi roll and my spicy tuna sushi roll, so the fillings will look different but the rolling method is the same.1 – Lay down plastic wrap on your work surface then add rice.2 – Press down the rice with your hands the best you can in the shape of the nori seaweed wrapper, then place another piece of plastic wrap over top of the rice and use a rolling pin to compress the rice so it’s thin and evenly compressed.3- Remove the plastic wrap from the top of rice.if using a large nori sheet, cut so it’s the size of the sushi rolls diameter you want, I usually cut it into 3/4th and discard the remaining 1/4 of the sheet.

    Lay the nori seaweed wrap with the rough side down on the rice.*Once it’s down, it will immediately stick to the rice.If you have any spots that need more rice, you can tuck a little rice under it the best you can.4 – Trim the sides of the rice around the nori, leaving a little space of rice showing.5 – Add filling, then lift up the sides of the plastic wrap on each side and bring roll together so the ends meet in the middle or slightly overlap.

    Turn roll on it’s side and with the plastic wrap still on the roll, use your hands to gently press the roll together.6 – Use a sushi mat or towel to press your roll together so it’s nicely compressed and secure.Remove plastic and trim the loose ends of the roll.7 – If adding sauces and toppings you can add them now or you can slice first, again this is preference.8 -Slicing the sushi roll can be intimidating but if you use a serrated knife that is dipped in either rice vinegar or water between each slice it is easy to do.Gently and slowly saw through the roll, so you get through the nori wrap without pulling it out and messing up your roll.

    9 – Plate and enjoy.Try these steps again and see how good you can get a making homemade sushi!The beauty of sushi is that you can make each roll your own.

    1. I included estimated measurements down below but you might end up using more or less, depending on how full you want to fill your rolls, the exact size of nori wraps you use (different brands of nori wraps seem to vary slightly in size).
    2. Sometimes I pack mine super full and other times I keep them small.
    3. So don’t stress about measurements just do what looks good to you and have fun with it.

    makes 1-2 rolls – depending on the size of nori wrap you buy

    • ~1 cup cooked sushi rice or brown rice – cooled
    • 1-2 seaweed nori wraps – wraps vary slightly in size per brand, *try to go for a smaller wrap size or cut the wraps to ~3/4 the size with scissors if using a large wrap.
    • imitation crab meat – ~3 sticks of imitation crab
    • avocado – sliced into thin slices – ~1/2 avocado
    • cucumber – sliced into thin slices – ~1/2 cucumber
    • spicy mayo– ~2 tablespoons
    • eel or oyster sauce – can be found in the Asian food isle. – ~1 tablespoon

    Instructions

    1. Prep all of your fillings by slicing them into thin and long of strips.
    2. Lay down a piece of plastic wrap over your sushi mat.
    3. Add cooked sushi rice or brown rice.
    4. Lay another piece of plastic wrap over the top and roll out with a rolling pin until it’s in a large enough rectangle to lay the nori wrap over and about 1/2 inch thick.
    5. Remove the plastic wrap from the top.
    6. Add nori wrapper over the top with the shiny side up.
    7. Add imitation crab meat, avocado, cucumber a little spicy mayo and eel or oyster sauce.
    8. Pull both sides of the underlying plastic wrap up so the roll goes together.
    9. Use the sushi mat, a towel or your hands to press the roll into a long cylinder.
    10. Add the spicy mayo, eel or oyster sauce, French fried onions and optional panko bread crumbs.
    11. Slice the roll by using a sharp or serrated knife, dripped in rice vinegar or water so it doesn’t get sticky.

    *To make your own spicy mayo add together 2 tablespoons mayo to 1-2 teaspoons sriracha depending on desired spiciness and mix until smooth. *Optional sauce I like to use on top of my rolls sometimes: 1 teaspoon oyster sauce to 2 tablespoons soy sauce and a large pinch of sugar, mix until sugar dissolves.

    What is Crunchy Roll Sushi?

    Crunchy roll sushi is a unique variation of the classic California Roll. It’s a type of maki sushi (rolled sushi) made with crispy shrimp tempura or imitation crab and tasty avocado. It’s an inside-out roll, meaning the rice is on the outside. What truly sets this roll apart is the crunchy topping of toasted Panko breadcrumbs.

    Ingredients & Substitutes

    • Sushi Rice: Use high-quality short-grain Japanese sushi rice for the best result. You can buy it online or in the Asian aisle of your supermarket.
    • Sushi Vinegar: You can purchase ready-made sushi vinegar or make your own by combining rice vinegar, sugar, and salt.
    • Shrimp Tempura: Using premade shrimp tempura is a short-cut for an easier and faster recipe. You can also make your own at home, or substitute imitation crab if you prefer.
    • Avocado: You’ll need a ripe avocado that is firm enough to be sliced with a sharp knife.
    • Nori/Seaweed Sheet: Purchase Nori in the Asian aisle of your supermarket.
    • Panko breadcrumbs: These breadcrumbs add crunch to your sushi roll. Panko breadcrumbs are my favorite to use in this recipe, but you may use any breadcrumbs you have.
    • Olive Oil: You’ll need to gently fry your breadcrumbs in oil to make them extra crispy. Substitute with canola, sunflower, or vegetable oil, or whichever you have in your kitchen.

    How to Make Crunchy Roll

    Step 1: Cook Sushi Rice

    Add the rinsed sushi rice and water to the rice cooker, and cook according to instructions. Once cooked, transfer the rice to a large bowl and let it cool down slightly. When it’s still very warm, stir in the sushi vinegar and mix gently.

    Step 2: Make the Crunchy Topping

    • Add olive oil to a large skillet over medium heat.
    • Add panko bread crumbs and mix them together.
    • Cook for about a few minutes or until the panko turns golden brown. Stirring constantly. Once cooked, let the toasted panko cool down.

    Step 3: Make Shrimp Tempura California Rolls

    • Cut the nori sheet in half using a pair of scissors, and place one piece on top of the bamboo mat, shiny side facing down.
    • Take about 3/4 cup of cooked rice and spread it over the nori sheet evenly.
    • Flip everything so that rice is facing down. Place shrimp tempura and avocado on top of the nori.
    • Place the thumbs underneath the bamboo mat and lift the edge up and over the filling.
    • Roll the bamboo mat away from you and apply some pressure to tighten it up. Keep rolling until the ends meet.
    • Peel off the plastic wrap and set the rolls aside.

    Step 4: Assemble

    • Spoon the toasted breadcrumbs on top of the sushi roll.
    • Then place a new piece of plastic wrap on top, and cover with the sushi mat. Squeeze gently to shape the bread crumbs around the roll.

    For the Sushi Rice

    • ▢ 1 ½ cup sushi rice (uncooked short-grain sushi rice)
    • ▢ 1 ½ cup water
    • ▢ 2 tablespoons optional sushi vinegar (or mixing 1 tablespoon of rice vinegar and 1/2 tablespoon of sugar)

    For the Tempura California Roll

    • ▢ 8 pre-cooked shrimp tempura (you can sub cooked shrimp or imitation crab)
    • ▢ 1 avocado (ripe but still firm, cut into thin slices. you can sub sliced cucumber)
    • ▢ 2 sheets nori (seaweed sheet)

    Cook Sushi Rice & Prepare Other Ingredients

    • Add the rinsed sushi rice and water to the rice cooker. Once cooked, transfer to a large bowl and let it cool down slightly. When it’s still very warm, stir in the sushi vinegar and mix gently.
    • Cook shrimp tempura. If you use premade frozen shrimp tempura, you’ll need to bake them at 450 F degree for 10-15 minutes depending on the sizes of the shrimp.

    Make the Crunchy Topping

    • Add olive oil to a large skillet over medium heat.
    • Add panko bread crumbs and mix them together.
    • Cook for about a few minutes or until the panko turns golden brown. Stirring constantly.
    • Let the toasted panko cool down.

    Make Tempera California Rolls

    • Wrap the bamboo mat with a piece of plastic wrap on top (to prevent the rice from sticking to the bamboo).
    • Cut the nori sheet in half using a pair of scissors.
    • Place half of the nori sheet on top of the bamboo mat, the shiny side facing down.
    • Take about 3/4 cup of cooked rice and spread it over the nori sheet evenly. You can dip your hands in vinegar water (Tezu water*) before handling the rice. This will prevent sticking.
    • Flip everything so that rice is facing down.
    • Place 2-3 pieces of shrimp tempura and 2 slices of avocado on top of the nori.
    • Place the thumbs underneath the bamboo mat and lift the edge up and over the filling.
    • Roll the bamboo mat away from you and apply some pressure to tighten it up. Keep rolling until the ends meet.
    • Peel off the plastic wrap.

    Assemble the Roll

    • Spoon the toasted bread crumbs on top of the sushi roll. Then place a new piece of plastic wrap on top, and cover with the sushi mat. Squeeze gently to shape the bread crumbs around the roll.
