    • This cheese ramen dish, which is a spin on the classic Mac & Cheese, calls for genuine cheddar cheese, a package of instant noodles, and a really simple method for thickening milk to produce a creamy, decadent cheese ramen.

Cheddar is a smooth, creamy, salty cheese with a tiny tang to it that is delicious. Adding this cheese to a pan to melt is fairly simple, and I prefer to turn off the heat before doing so.
    • Cheese with a mild flavor, mozzarella has a stretchy cheese pull and a slight chewiness to it, which makes it a good choice for grilled cheese sandwiches. I normally avoid adding too much of this since, as it cools, it becomes hard and hardens, resulting in the loss of the creamy texture of the dish. In addition, it requires a little more heat to melt, so I generally have to keep the heat on for 30 seconds while I’m attempting to melt it into the sauce.
    • Add a spoonful or two of cream cheese to give it a little creamier texture.
    • Cotija is a salty cheese with a little of gooeyness to it. This is something I’ve utilized in the past since I enjoy the saltiness that this cheese gives. The sauce becomes a little mushy as a result of this addition.

    • Thicken the sauce using a corn starch slurry – I like using a corn starch slurry to thicken my cheese ramen sauce since it is silkier and creamier than using a flour roux to thicken my cheese soup. It is critical that you use cold water to mix the corn starch with, or else the corn starch slurry will become clumpy
    • otherwise, the corn starch slurry will become clumpy.
    • Remove the pan from the heat before adding the cheese – The leftover heat from the hot milk and noodles should be used to melt the cheese. When the pan is quite hot, this will prevent the cheese from clinging to the bottom of the pan and being melted. All that is required is that the thickened milk be boiling and extremely hot before turning off the heat and stirring in the shredded cheese.
    • Don’t overcook the noodles – I’ve found that when the noodles aren’t overdone, the flavor is the tastiest. You’ll notice that the texture is a little more chewy and less mushy. Preventing your noodles from becoming overdone may be accomplished by subtracting 1 to 1 and 1/2 minutes from the cooking time specified on the package directions.
    • Is it possible to make this cheese ramen soupier? – The answer is yes, you absolutely can. Make this thinner and soupier by skipping the corn starch slurry thickening stages and instead using plain ramen noodles.

Stir in the corn starch slurry you made earlier (the starch settles to the bottom of the bowl), and then pour that corn starch slurry into the pot

    • Continue to whisk until the milk has thickened somewhat.
    • Once the milk has thickened and begun to bubble, remove it from the heat and whisk in the cheese until it has melted and become well-combined with the creamy milk mixture.
    • Fill the serving bowl halfway with the cheese, and put it aside

    • It’s time for a confession: there are moments when I truly enjoy instant ramen.
    • You know, those cheap tiny packets of salty noodles that you can get for 30 cents on the dollar?
    • My cravings for quick noodles aren’t often, perhaps once or twice a year, but when I do have a hankering, I’m not beyond grabbing a package of instant noodles and going to town on them.
    • Over the years, I’ve discovered 6 simple methods to elevate instant ramen, to the point that it can really qualify as a legitimate dinner, while also utilizing the leftovers in my kitchen.

    And so, if that’s all you’ve got, here’s what you can do with it!

    6 Ways to Upgrade Instant Ramen

    1. Use Your Own Broth

    • Instead of using a seasoning package, make your own broth using whichever flavorings you choose.
    • Although I prefer to use vegetable or chicken flavored Better Than Bouillon (I use half broth and half water to keep the salt content down), any handmade bone broth, dashi, or even just some miso combined with water will work well in this recipe.
    • Not only does this allow you to have greater control over the salt and other components, but it also provides you with a plethora of taste possibilities!

    2. Add Aromatics

    • The addition of fresh aromatics to your soup really helps to bring out the taste of the broth.
    • Fresh garlic, ginger, and green onion are some of my favorite additions.
    • This is a no-brainer for me because I always have all three of these ingredients on hand (I store my ginger in the freezer).
    • In addition, fresh ginger imparts a wonderful medicinal aspect to the soup, which is particularly beneficial when you’re feeling under the weather.
    1. TIP: Grate the ginger and mince the garlic before using.
    2. Sauté both ingredients for a minute or two in a small amount of oil before adding your broth to the saucepan.
    3. It is possible to use the green onion either as a garnish at the end or sautéed with the ginger and garlic, or even both!

    3. Sauce it Up

    • It’s likely that you have at least 20 half-used sauce bottles in your refrigerator if you’re anything like me.
    • Instant ramen, on the other hand, is a fantastic way to use up some of those sauces.
    • You may add extra flavor to your broth by stirring in sambal, chili garlic sauce, sriracha, oyster sauce, hoisin sauce, fish sauce, gochujang, soy sauce, or any number of other sauces, such as sriracha or sriracha.
    • Alternatively, sprinkle them on top of the final dish as a type of table seasoning.
    1. TIP: Adding sauces typically results in an increase in salt content, so keep this in mind when selecting your broth.

    • But there are a plethora of other alternatives!
    • Whatever you want: tofu cubes, sliced tempeh, rotisserie chicken, ground pork (browned), shelled edamame, pulled pork, shrimp…
    • whatever you want.
    1. You may crack an egg directly into the boiling soup and let it cook for about 6 minutes, or until it is cooked through.
    2. Make sure the broth is not aggressively boiling, otherwise the egg will break apart into a million pieces and cause the soup to become opaque instead of translucent.
    3. When it came to making the egg in the photo above, I boiled it separately using my simple 6-minute Soft Boiled Egg technique before adding it to the completed dish.

    6. Top it Off

    • It’s time to let go!
    • Add a variety of colorful and tasty toppings to your ramen bowl to give it more taste, color, and texture.
    • Here are a few amusing suggestions: sriracha, kimchi, sesame seeds, crumbled bacon, nori (dried seaweed), fresh herbs (cilantro, Thai basil, chives), a drizzle of toasted sesame oil, crushed chilies, furikake, or a slice of lime are all excellent additions to sushi.

    • What to do when all you have (or desire) is one of those small inexpensive packs of noodles? Here are six simple ways to enhance instant ramen and turn it into a legitimate dinner. Preparation time: 10 minutes Time allotted: 10 minutes 1-2 1/2 tablespoons frying oil, 1 clove chopped garlic, 1/2 teaspoon grated fresh ginger, 1 handful sliced mushrooms, 1 cup vegetable broth, 1 cup water, one package instant ramen (seasoning discarded), one handful fresh spinach, one big egg, one green onion, sliced, Sriracha to taste
    • In a small sauce saucepan, heat the oil, garlic, and ginger over medium heat for approximately one minute, until the garlic is fragrant.
    • Add the sliced mushrooms and cook for another minute or so until the mushrooms are soft.
