    Get ready to bake

    Starting with a baking steel or stone inside your oven, warm it to 500°F to 550°F (if your oven can go up to 550°F) and a rack in the center of the oven before continuing.Remember to leave at least 8 inches between the rack and the broiler, or otherwise your pizza’s top will burn before the bottom is fully cooked.This is not ideal!Maintain the proper temperature in your oven for at least 30 minutes before baking to ensure that the steel or stone has had enough time to thoroughly warm.Also, if you don’t have a baking steel or pizza stone, don’t give up on your pizza-making ambitions completely.Even if you bake this pie on a dark baking sheet, it will still turn out delicious (like most things covered in cheese).

    Use parchment paper to bake it straight on the grill if you want to save time.

    Stretch and fold the dough

    Upon completion of the second rising, split the dough in half and transfer one half to a lightly floured surface.If your work surface and your hands are not well-floured, you will have a much more difficult time working with this dough than you would otherwise.The dough may be stretched and folded by grasping it at both ends, drawing one end away from the other, then folding it back onto itself.Do the same thing on the other side.Turn the dough 90 degrees and repeat the whole process on the other side of the dough (the side that has not been stretched and folded).Once you have formed a tiny pouch out of the dough by pulling the ends in towards the centre, flip it over and repeat the process.

    Pulling the dough under itself with your fingers will result in a smooth, spherical ball with the seams tucked into the bottom of the ball.Make another smooth ball of dough by repeating the stretching and folding steps with the second piece of dough.Place each ball seam-side down into its own dusted mixing basin to rest.

    Allow the dough to rise for 45 minutes to an hour after covering the bowls with plastic wrap.While the dough is rising, you can begin preparing your peel, if you choose to use one.Flour your wooden peel thoroughly so that it is entirely covered in flour before you begin.If you’re using a metal peel, or if this is your first time making homemade pizza, I recommend putting parchment paper instead of flour on your peel.And, if you’re baking on a dark pan rather than a pizza stone, make sure to line the pan with parchment paper.

    A short word on parchment paper: because we’ll be baking at such a high temperature, it’s critical that we use high-quality, thick parchment paper.Make careful to check the label to see whether it can withstand temperatures up to 500 degrees Fahrenheit.(Many brands are unable to tolerate this level of heat and will just burn.)

    Time to get shaping

    Make a well in the center of your work area and spoon the rising dough into it, seam side down.If your dough appears to be moist, sprinkle a big amount of flour on top; if your dough appears to be dry, use a little less flour.Gentle pressing down on the dough should be done using your fingertips.One key step: take careful not to touch the crust’s outside edge when cutting it.It is important to leave the circle intact here since it results in a wonderful bubble cooked outside crust.You can rely on us.

    Lift the pizza, being careful not to touch the edge of the crust, and gently stretch the dough with your knuckles into a 10″ to 12″ circular with your hands.I keep my hands well-floured for this purpose in order to prevent the dough from tearing or sticking.Make a gentle circular motion with both hands, allowing gravity to do the work of stretching the dough – now is not the time to rush things.

    Pulling will cause the center of the dough to extend more than the edges, so allow the dough to gradually expand into form, primarily due to gravity.If your dough is tough to stretch, allow it to rest for 5 to 10 minutes to allow the gluten to relax before attempting it again.This is my favorite portion of the process since stretching the pizza dough gives me the impression of being an old-school pizza master (which is awesome!).Transfer the dough to a floured peel (or a floured piece of parchment paper) and trim it so that it does not hang over the edge.Ensure that the dough has been well-floured before baking to avoid it sticking to the baking sheet.

    In order to avoid the dough from burning, if you are using parchment paper, remove the extra surrounding the dough.Because the oven is so hot, make sure to trim the parchment paper flush with the dough so that it doesn’t burn (this is a mistake I’ve made on more than one occasion).

    Now for the toppings

    Serve by spreading a thin layer of sauce over the dough (you don’t want it to become soggy from the tomato sauce), then topping with the cheese of your choice and any other toppings that strike your fancy.Authentic ingredients include sliced buffalo mozzarella and San Marzano tomatoes, with fresh basil added after baking to finish the dish off perfectly.While it may not be traditional, I personally enjoy using pesto on my pizza, despite the fact that it is not traditional.Turn on the top broiler in your oven and move the pie to a baking steel or stone that has been warmed.The bottom broiler should not be used if you just have a bottom broiler since there is not enough clearance.No need to panic; even if you are unable to use a broiler, you can just bake your pie for a few minutes longer, and it will come out perfectly fine if you use a steel or stone baking pan.

    If you’re using a wooden peel, bounce the uncooked pizza back and forth on the peel until it slides freely before rapidly moving it to a steel pan.In the case of a parchment crust, gently move the pizza and parchment onto a steel or stone baking sheet.In a standard oven, bake the pizza for 6 minutes on a steel baking sheet and 7 minutes on a stone (give or take a few minutes) until bubbling and browned around the edges.

    If you’re baking in a dark pan, you may want to bake it for a few minutes longer than normal.Remove the pizza from the oven and, if wanted, garnish it with fresh basil leaves before serving.Repeat the process with the remaining dough and toppings to complete the pie.

    In order to better understand each of these preparation procedures, let us look at the Neapolitan pizza recipe.

    1 – The method of making the dough

    Now that we’ve gone through the materials and their quantities, let’s speak about how to make the Neapolitan pizza dough in its traditional manner.Neapolitan pizza is made by producing a direct dough, which is a dough in which all of the components are mixed together all at the same time, rather than using pre-mixes such as biga or poolish.A process known as autolysis may be used to strengthen the gluten basis of dough, however many Neapolitan pizza makers do not employ this method.

    Autolysis is the sole technique that can be used to strengthen the gluten base of dough.When used in a professional setting, flour autolysis is a method that begins with at least half of the water and flour (as contrasted to the whole amount specified by a recipe) and then immediately allows the dough to rest for around half an hour.As long as all of the flour is moistened, autolysis can begin with a long initial pause, which will improve the dough’s ability to be formed, its elasticity, and its toughness.In this case, there is no need for a pre-mix; all that is required is that all of the flour is moistened in order to activate autolysis with a long initial pause.

    The Neapolitan pizza recipe calls for the preparation of a rapid dough that can be produced in the afternoon and consumed in the evening, which is very convenient when creating the pizza at home.It is true that, in addition to producing big quantities, pizzerias must also produce a dough that produces outstanding results even if two or three days pass between the production of the first and last pizza.This is why practically all pizzerias let their dough remain in the refrigerator, controlling the rise by simply altering the temperature at which the dough is allowed to rest.When creating real pizza at home, this isn’t essential, and in fact, the dough is normally only refrigerated for a few hours if it’s the midst of summer and it’s extremely hot; otherwise, when making Neapolitan pizza at home, the dough is always allowed to rest at room temperature.The actual dough preparation is next; as previously said, the Neapolitan pizza recipe demands for a quick dough to be prepared.It is precisely for this reason that one of the distinguishing characteristics of Neapolitan pizza is that the salt and yeast can be added at the same time, but must always be separated.

    • To the contrary, because of this direct touch, yeast becomes weaker, and most pizza doughs are finished with salt, both for the reasons previously stated and because of salt’s ability to draw moisture out of the dough when it is baked.
    • However, because of the speed with which the dough is prepared and the amount of rise it receives, this benefit is not significant for preparing Neapolitan pizza.
    • To be true to the Neapolitan tradition, the handmade pizza dough must be created on a wooden board, beginning with the flour and ending with the salt on one side and the yeast on the other, without allowing them to come into direct contact with each other during the process.
    • Gradually pour the warm water over the yeast-affected region of the flour, and begin to mix only that portion of the flour with your hands.
    • As soon as the yeast has dissolved and you’ve kneaded a good half of the flour, you may finish adding the water and begin mixing in the portion of the flour that contains the salt, always in little increments, until the dough comes together.
    • Once you’ve finished adding the water, start kneading the dough extremely vigorously for at least 10 minutes, turning the dough over itself numerous times with both hands as you go.
    • When preparing dough by hand, one of the most successful methods for building a healthy gluten base is to take the outer sections of the dough and raise them over the core area, forming a series of circular folds that will help you achieve a single huge ball of smooth, homogenous dough.
    • Making the customary three folds, which consist of spreading the dough in two opposed directions and folding it back on itself, is one last technique for strengthening the dough.
    • This technique, which is used to increase the elasticity of the gluten, is carried out after a break of approximately ten minutes from the end of the mixing process, followed by another break of approximately the same length of time before forming the dough balls.
    • It is important to note that this technique is not used for baking.
    • To ensure that the Neapolitan custom is followed to the letter, the latter should be made with around 300 grams of dough per person and should rise in wooden containers.

    2 – The dough spreading technique

    You should avoid making quick movements.If you make a few mistakes here and there, don’t be too concerned.It’s a skill that, as you practice it more and more, you will become better and better at.Isn’t it possible to just roll out pizza dough using a rolling pin?
