    • Replace the plastic wrap on top of the roll and place the bamboo mat on top of the roll. Tightly push the roll through the bamboo mat until the avocado slices completely round the roll and are no longer visible. Make sure not to break the avocado slices by being too rough with them. Remove the mat and, using a knife, cut the roll into 8 pieces through the plastic wrap it was wrapped in. Using a moist cloth, wipe the blade of your knife after each cut. If the sushi roll becomes sloppy while being sliced, tightly crush the sushi roll with the bamboo mat once more.
