  • In my 20 years of preparing for my family’s Thanksgiving dinner, I can honestly say that this is one of the greatest dishes I’ve ever created—even better than the time I managed to convince my fast-food-hating grandmother to try my version of White Castle stuffing. Getting a large Detroit-style pizza with sausage, mushrooms, and pepperoni along with extra sauce the night before Thanksgiving is essential to making this dish successful (or even the morning of).   1. As you accept delivery of your pizza, take a long, hard look at some of the decisions you’ve made in your life. Recognize that you’ve made far worse and less interesting decisions in the past
  2. Remove all of the toppings off the pizza, but leave the sauce on the dough to keep the pizza warm. Prepare the toppings by chopping them into pieces around the size of a 14-inch dice, if not smaller. The following ingredients should be available: around 112 cups of chopped mushroom, 1 cup of sausage, 1 cup of pepperoni, and 12 cup of pineapple (which is completely optional).
  3. Preheat an oven to 350 degrees (or 375 degrees (if using a convection oven) and toast the crust cubes for 40-50 minutes on a sheet pan until thoroughly dry and a light golden brown color. After 35 minutes, take another look. Cubes can be toasted up to a day ahead of time.
  4. You may either place the onion and celery in a food processor and pulse until finely chopped, or you can finely chop everything by hand on a chopping board.
  5. Over medium heat, melt the butter in a large saute pan and sauté the onions and celery until tender, approximately 10-12 minutes. Season with about 12 tsp salt and pepper (or to taste) and set aside. Add in the sage and mix well, then put away.
  6. Preheat the oven to 350 degrees (375 degrees if using a convection oven) and grease a large casserole dish or 9-by-13-inch baking pan with butter.
  7. In a large mixing basin, combine the chicken stock and water. Allow 3-4 minutes for a handful of the bread cubes to soak in the broth before using. Remove the cubes with your hands, then yell ″wring out your bread!″ (joke courtesy of Natalie) as you squeeze the excess broth back into the bowl in your best Monty Python accent.   8. In a large mixing bowl, combine the eggs, all of the toppings, and the cooked veggies
  9. Stir until all of the bread is coated with the mixture.
  10. Season with salt and pepper. Stir. A big tablespoon of the mixture should be microwaved for 30 seconds on high for best results. Taste the stuffing and season with additional salt and pepper if required.
  11. Gently press the mixture into the pan that has been prepared (the pressing will ensure maximum crustiness on the bottom.) Bake for 35-45 minutes, or until the chicken is cooked through and the top is crispy.
  12. Don’t tell anyone about what you’ve done until after they’ve had a chance to taste it themselves. Then let out a guffaw.
