What’s the Difference between Tequila and Mezcal?

Mezcal is gaining momentum on tequila in the United States’ bar scene. While the two Mexican liqueurs are both manufactured from agave, the similarities between the two drinks end there. The following are the most significant distinctions between these two spirits.

All tequilas are mezcals, but not all mezcals are tequilas.

Tequila is a kind of mezcal, much as scotch and bourbon are forms of whiskey. Tequila is a type of mezcal. According to John McEvoy, a spirits writer, mezcal is defined as any agave-based alcoholic beverage. Included in this category is tequila, which may only be produced in particular locations of Mexico and must be manufactured from from blue agave (agave tequilana).

They’re made with different kinds of agave.

Mezcal may be prepared from any of the more than 30 different types of agave. For mezcal, the most frequent kinds of agave are tobalá, tobaziche, tepetate, arroqueo, and espadn. Espadn is the most prevalent agave and accounts for up to 90 percent of all mezcal produced. agave-tequila-mezcal-differences-FT-BLOG0417.jpg Photograph courtesy of Omar Torres/Getty Images

                They’re produced in different regions.

                1. Tequila and mezcal are produced in distinct regions of Mexico, despite the fact that they are geographically close to one another.
                2. In accordance with McEvoy, tequila is manufactured in five locations: Michoacán, Guanajuato, Nayarit, Tamaulipas, and Jalisco, the latter of which is home to the town of Tequila.
                3. Mezcal, on the other hand, is made in nine distinct regions of Mexico.
                4. Durango, Guanajuato, Guerrero, San Luis Potosi, Tamaulipas, Zacatecas, Michoacán, Puebla, and Oaxaca are among the states represented, with Oaxaca accounting for upwards of 85 percent of total mezcal production.

                They’re distilled differently.

                1. Both tequila and mezcal are distilled from the pia, or the harvested core of the agave plant, which is used to make both spirits.
                2. The parallels in terms of manufacturing, on the other hand, end there.
                3. It is customary for tequila to be manufactured by heating the agave plant inside industrial ovens before being distilled two or three times in copper pots.
                4. Mezcal, on the other hand, is cooked in earthen pits lined with lava rocks and filled with wood and charcoal before being distilled in clay pots.
                5. Mezcal is made from the agave plant.
                1. However, while some large-scale mezcal producers have switched to more contemporary processes, artisanal mezcal producers have remained true to their more traditional methods, which are the source of the smokiness that has come to be associated with mezcal.

                They’re labeled differently.

                1. After the distilling process is complete, both tequila and mezcal are matured in oak barrels for many months.
                2. The distinct age groups of the two spirits, on the other hand, are characterized in slightly different ways.
                3. For example, tequila is available in three varieties: blanco (silver or plato/0-2 months), reposado (2-12 months), and anejo (aged 12 months or more) (1-3 years).
                4. Aside from that, mezcal is divided into three categories according on its age, including joven (blanco or abacado/0-2 months), reposado (2-12 months), and anejo (older than 12 months) (at least one year).

Acclaimed Tequila and Mezcal Bar Ghost Donkey Arrives Across From Union Station At Last

                1. After months of anticipation, Ghost Donkey opened its doors on Thursday, May 27 in a small but exquisitely appointed facility across from Union Station, bringing with it a visionary environment that is in keeping with the over 65 mezcal and 25 tequila selections that drive the experience.
                2. JavaScript is required to see this slideshow.
                3. As soon as Ghost Donkey’s first New York location opened its doors in 2016, it gained nearly immediate acclaim, and it went on to win Imbibe’s ″Cocktail Bar of the Year″ award in 2020.
                4. There have already been three iterations, with the most recent ones taking place in Auckland and Las Vegas.
                5. In terms of layout, each individual site follows a relatively same model, with just minor variations in the interior and beverage programs at each new location.
                1. Nothing about Ghost Donkey will remain static, however, as current bar director Maxime Belfand will continue to engage with both Auckland’s Jonny Park and Denver’s Dust Fox in order to provide a genuinely international perspective to the brand’s diverse menus and drinks.
                2. While Ghost Donkey Denver presently offers a menu that is similar to those of its predecessors, local specialities are scheduled to be added to the menu in the near future.
                3. It should come as no surprise that Ghost Donkey is built around a positively bewitching aesthetic, given that it was initially developed by the AvroKO Hospitality Group, which included founding partners Kristina O’Neal, William Harris, Greg Bradshaw, and Adam Farmerie.
                4. Because of its success since its beginning in 2001, the business has gained national recognition for its ability to design places that connect each individual component to create an overall feeling of both physical and emotional continuity.
                1. In particular, Ghost Donkey may be seen to be representative of the method.
                2. It doesn’t take long to realize that the space is a world unto itself, with each seemingly disparate characteristic working in perfect harmony with the others.
                3. Despite the fact that the company is multinational, AvroKO has already cooperated on some of Denver’s most famous interiors, including the Halcyon Hotel, Quality Italian, Local Jones, The Cooper Lounge, and the recently-opened Clayton Members Club, to name a few.
                4. With the help of the Flagship Restaurant Group, which includes Nick Hogan, Tom Allisma, Anthony Hitchcock, and Tony Gentile, the decision to bring Ghost Donkey to Denver was made.
                5. Flagship — which has restaurants throughout the Midwest, South, and Southwest — was previously responsible for bringing the Blue Sushi Sake Grill to the 16th Street Mall in Kansas City, Missouri.
                • Despite the fact that the ambience is enough of an incentive to attend, the beverages are tackled with the same zeal.
                • Featuring Koch espadin, Cynar, Cocchi Torino, Rabarro Zucca, and a house-made mole bitters, the Mole Negroni ($16) displays a level of complexity that may justify the two-hour daily procedure necessary to produce the spice combination.
                • The Highland Picnic ($16), which includes Sombra espadin, Terralta reposado, fresh lime juice, yuzu juice, agave, and egg white, is a similarly deceitful sipper that is made even more deceiving by its appearance.
                • All of Ghost Donkey’s beverages not only go down smoothly and carry a punch, but they also inspire a particular type of celebration, with each sip virtually insisting that consumers slow down and be enthralled by what they are drinking.
                • Everything has been meticulously planned and performed to produce a compact totality in which the sensory overlap culminates in something truly magnificent.
                • The devil, as they say, is in the details.

For those who prefer to get right to the point, the massive mezcal selection includes both well-known brands and lesser-known ones, including Sombra, Vago, Koch, La Venenosa Raicilla, Nuestra Soledad, Mezcales de Leyenda, Fabriquero Sotol, and Fidencio Clasico, among others.Sombra, Vago, Koch, La Venenosa Raicilla, Nuestra Soledad Ghost Donkey’s limited menu is centered on five nacho dishes created by Michelin-starred chef Brad Farmerie, who is also the chief chef at Saxon + Parole, another of AvroKO’s New York-based hotspots, as well as other AvroKO employees.Mole chicken nachos ($16) — which are constructed with minced chicken, house-made mole, red cabbage, and jalapenos — are a wonderful way to begin. But it is the truffle nachos ($23), which take what is typically considered a very plain snack and dress it up with truffle sauce, chives, and surprisingly thick slices of black truffle, that best demonstrate the restaurant’s cheeky elegance. While the food selection is limited, it is treated with the same zeal as the rest of the menu, with classic dishes being pushed just far enough into foreign terrain to produce something that borders on hallucinogenic.

                1. As the globe begins to reopen, it is possible that atmosphere may become even more vital than before.
                2. Ghost Donkey is all about the atmosphere, and it is diametrically opposed to everything that might be considered humdrum.
                3. It is located at 1750 Wewatta St.
                4. Suites 140 and 160 in Denver, Colorado.

                Mezcal worm – Wikipedia

                1. In Oaxaca, Mexico, a mezcal worm is an insect larva that may be discovered in specific varieties of mezcal manufactured there.
                2. The larvae of the Comadia redtenbacheri moth are often either a gusano rojo (″red worm″) or a chinicuil (″maguey worm″), the caterpillars of which are both red in color.
                3. The red worm is often believed to be tastier than the white worm.
                4. On a bachelorette party in Mexico, it is customary for the maid of honor to consume the worm, which dates back centuries.
                5. This is referred to as representational symbolism, and it occurs when the prospective bride delivers the torch to her closest loved one, much like a bouquet is thrown during the reception.

                History

                1. Despite the fact that the practice is relatively new, larvae are commonly utilized by numerous brands of mezcal to enhance the flavor of the drink.
                2. A full larva is placed in the bottle, which is usually done after it has been treated in pure alcohol for a period of time.
                3. In its Gusano Rojo mezcal, Nacional Vinicola (NAVISA) was the first firm to use a worm into the recipe.
                4. With the creation of Gusano Rojo and Dos Gusanos, the first time the practice of adding larva to mezcal was introduced was by Andres Paniagua and Jacobo Lozano.
                5. The Patron brand is one of the several that are doing this now.

                Other kinds of worms

                1. The other type of ″worm″ found in mezcal is the larva of a weevil known as picudo del agave, also known as the agave snout weevil, which infests specific species of yucca and maguey and is known as the agave snout weevil.
                2. They are not related to the edible maguey worms (which are, in actuality, the larvae of two other species of moth or butterfly) found in the central Mexican region.
                3. The agave weevil is an insect that may cause significant harm to agave plants by eating the plant from the inside out, killing it.
                4. Even if just a few pests infest the plant, they can still transport and infect the plant with deadly germs, which can result in the plant’s demise.
                5. Weevil infestations have been responsible for the loss of up to 40% of a maguey yield in some instances.
                1. The plant is being bred to be resistant to infection, and new kinds are being created.
                2. Picudo larvae can be roasted and eaten; they are a seasonal delicacy of markets in southeastern Mexico, where they are available in small quantities.

                1. What is Tequila if it is not distilled in Mexico?
                2. In the central western Mexican state of Jalisco, tequila (blue agave) is a regional distilled beverage and type of alcoholic drink made from the blue agave plant.
                3. It is produced primarily in the area surrounding the city of Tequila, 65 km (40 mi) northwest of Guadalajara, as well as the highlands (Los Altos) of the state.
                4. Aside from regional distinctions in origin, tequila is a kind of mescal that is produced in Mexico (and the regions of production of the two drinks are overlapping).
                5. The difference is that tequila can only be made from blue agave plants, rather than any other sort of agave plant.
                1. Mexicans like to drink their tequila neat, whereas the rest of the world prefers to take a shot of the liquor with salt and lime.
                2. – Tequila is a kind of liquor (Wikipedia) The following are some of the tequila words that are used in Mexico: The Difference Between Tequila, Mezcal, Bacanora, Raicilla, and Sotol: What’s the Difference?

                4. Here’s a short summary of that range, as well as an examination of what distinguishes each of the several categories of agave spirits: Tequila In Mexico, tequila is a form of mezcal that must be created in accordance with rigorous guidelines as to how and where it may be produced.
                1. Tequila is made from a single kind of agave plant, Agave tequilana Weber blue, which is fermented and distilled.
                2. It is not smokey because the agave hearts are steamed or kilned during manufacturing; tequila can only be manufactured in Jalisco and authorized locations in four other Mexican states; it is not available in the United States.
                3. The greatest tequilas are made entirely from blue agave, which is clearly stated on the label of the bottle.
                4. Tequila made from blue agave cultivated in highland regions, which tends to be fruitier, and tequila made from blue agave grown in lowland regions, which tends to be earthier, are frequently distinguished.

                • Bottles branded ″mezcal″ are typically found in the state of Oaxaca and have a smokey flavor.
                • Bacanora This mezcal variation is named after the town of the same name in Sonora, and it is created from wild plants of the agave Pacifica.
                • Despite the fact that the agaves are also pit roasted, Bacanora is often lighter and less smokey than most other mezcals.
                • Raicilla Raicilla, like tequila, is produced in the state of Jalisco; but, unlike tequila, it is produced from two different types of agave, lechuguilla and puta de mula.

Raicilla is often sweeter and fruitier than most other mezcals, and it has a fruitier finish.Sotol Despite the fact that a gringo may mistake it for agave, sotol is derived from a different succulent plant known as Desert Spoon. The technique of making desert spoon is similar to that of making mezcal, with the hearts of Desert Spoon being roasted in volcanic rock-lined pits.It is mostly produced in the Mexican states of Chihuahua, Durango, and Coahuila.According to connoisseurs, the flavor varies according on the geography; floral notes prevail, as do eucalyptus, pepper, and chocolate, with milder smoke accents, according to the experts.
