    Putting the components together

    Combine the flour, milk powder, brown sugar, olive oil, and salt in a large mixing bowl until well combined. Using a slotted spatula, thoroughly combine the ingredients.

    Hydrate the flour

    1. Prepare the water by heating it and dividing it into two equal pieces. To one part of the flour, add one part of warm water. Allow it to sit after mixing with a spatula.
    2. Add instant yeast to the remaining half of the heated water and combine thoroughly. Allow for 10 minutes of resting time, or until the mixture becomes frothy. (If it does not, toss the game and start again.) After 10 minutes, combine the yeast mixture with the flour mixture.

    Kneading the dough

    1. Knead the dough until it is smooth and elastic. I’ve experimented with both manual and machine methods of dough preparation. Dough made by the machine is smoother and softer than dough made by hand, according to my findings. However, because many of us do not have access to a stand mixer, I have decided to forego using my stand mixer in this recipe.
    2. Knead the dough for at least 15 minutes in order to incorporate gluten into the mixture. At the end, when the dough is almost finished, pour some olive oil over your palms and knead the dough for an extra 5 minutes to smooth it out. Spread a thin layer of oil all over the surface of the dough and wrap it tightly in cling film.

    Fermentation

    Rest the dough in a warm location for 90 minutes or longer. As soon as I switched off my oven, I placed the dough on the top rack of my oven and baked it for another 30 seconds at the maximum temperature possible.

    Proofing the dough on a bench

    1. After completing step 5, punch down the dough and knead it for another 2- 3-minute period. Then, depending on the size of the pizza you want to make, split it into three equal pieces (or two equal portions).
    2. Cover with cling film and set alone for another 30 minutes to allow the steam to increase. There is no need to lay the dough in a warm location this time.
    3. After three minutes, you can see that the dough has risen as seen in the photo below.
    4. Remove it from the oven and knead it again. If the mixture becomes too sticky to manage, add a little dry all-purpose flour to the mix. Spread some cornmeal on a work surface, then set one piece of dough on it and form it into a pizza shape for creating pizza.
