In a large saucepan, combine the drained rice and 1 cup of water.Cook for 2 minutes under high pressure, with the cover securely in place.Allow for a natural release of pressure for 10 minutes, then gently and quickly remove any leftover pressure that remains.Season with the seasonings listed above after fluffing with a fork.Brown sushi rice (also known as short-grain brown rice) is made by measuring 2 cups short-grain brown rice into a medium-sized mixing bowl.Fill the saucepan halfway with cold water, just enough to cover the rice, and rapidly swirl the rice about in the water with your hand.
