    Norrländska Hällakakor, a classic flatbread from Sweden, is a lot of fun to prepare and is quite simple to put together.Unlike the crispbread known as Knäckebröd that is popular in Sweden, Hällakakor is more like a soft, flat, thin cake that is served warm.The attractiveness of this flatbread lies in the manner it is rolled out with a notched or grooved rolling pin, which gives it a unique appearance.While this assists in scoring, it also imparts a distinct texture and aesthetic to the finished product.Because they are created with a little oil and syrup or honey, they should be cooked for only a few minutes to maintain their delicate texture.

    At one time, this form of bread was baked as a thin, flat cake in a skillet or on a scorching-hot flat stone over an open fire, according to tradition.These flatbreads may now be baked in a regular oven on a hot baking stone, if the oven is sufficiently hot.Depending on personal preference, Hällakakor can be prepared with any mix of flours, or just with all-purpose flour.Several recipes available on the internet include wheat, rye, and/or barley.The dough can be seasoned with aniseed and fennel, or with caraway, or it can be left unseasoned entirely.In my version, I used einkorn and semolina, and because I adore the flavor combination of semolina and fennel, I also added some crushed fennel seeds on top.

    Using a kuskavel, a deep, notched pin, or a huge randkavel with wide grooves, the dough for this flatbread is rolled out into a thin, flatbread.I didn’t have any of those tools, so I made due with a tagliatelle cutting roller that I bought up when traveling through Tuscany a few years back.It doesn’t take long to roll out and bake the flatbreads if you’re well-prepared and have everything ready to go ahead of time.I began off by merely using the cutting roller to spread out the dough, but after rolling out the first piece, I discovered that the dough may wind up being chopped into strips.As a result, I determined that rolling them out with a smooth rolling pin first, followed by scoring them with the cutting roller, was the superior alternative.

    When cutting through the bread, it still cut a little bit, but this actually made it easier to rip the loaves when eating them.After a few attempts at rolling out and baking, I was able to master the technique.It was my intention to have one loaf in the oven, another ready to bake on a cornmeal-dusted baking peel, and a third on the work area ready for rolling when I arrived.I was finished in no time and ready to eat some delicious food as a result of this procedure.

    3. Cut the mixture into 85 g parts and roll them into round balls. Lightly flour the surface and let it to rise for about 20 minutes.
    4. With a notched or normal rolling pin, roll out round dough rings to approximately 25cm or 9in in diameter. If you’re using a flat rolling pin, make sure you dock it properly. If you’re using a grooved pin, make sure you follow it up with a notched pin.
    5. Preheat the oven at the maximum temperature possible (about 500oF/260oC), and ideally set the flatbread directly on a baking stone or steel, baking them until golden and tender
    6. Bake for 3-4 minutes at a time until done.

    • Transfer the dough balls to a floured work area and continue to work with them. It will take around 2 hours to thoroughly bring the dough to room temperature if it was refrigerated prior to stretching it. If you made your dough ahead of time and frozen it, take it out of the freezer the morning of your pizza night and let it thaw on the counter until dinner time.)
    • Each dough ball should be stretched out to a 12- to 14-inch circular before being transferred to a floured peel or a baking sheet coated with parchment paper.
