- What I can tell you is that gluten-free bread and brownies were launched at a few Subway stores in Texas in 2011 as part of a test program.
- Since then, additional Subways have followed suit and begun stocking the g-free options on their menu.

If not, take stock of the situation at the prep station and place an informed order

- Second, combine all-purpose flour with the water mixture. All of the ingredients (gluten free flour, almond flour, psyllium husk powder, tapioca flour, salt, quick rise yeast, and baking powder) should be combined in a 1:1 ratio.
- Third, thoroughly combine the ingredients, then leave aside for approximately 90 minutes to enable the dough to rise.

About the Ingredients
- Sourdough Discard: For this pizza dish, I’m using my Gluten Free Sourdough Starter recipe, which is gluten free. The sourdough starter has a hydration level of 130 percent. The amount of water you consume may need to be increased if you use a lower hydration discard.
- Gluten Free Flour Blend: For this recipe, I use Bob’s Red Mill 1:1 Baking Flour, which is gluten free. It enhances the flavor of the sourdough and helps to the crisp/chewy texture of the pizza crust.
- Bob’s Red Mill Almond Flour is a brand of almond flour. Super Fine Almond Flour increases the protein content of the dough, which helps to create the earthy tastes that are characteristic of sourdough.
- This high hydration dough benefits from the use of tapioca flour, which contributes to the crisp texture in part and helps regulate the water content.
- In this and other gluten free recipes, I’ve been using Bob’s Red Mill’s psyllium husk powder, which is the brand I’ve been using for a long time. I’ve been using it in this and other gluten free recipes for a long time. As a result, I’ve switched to Terrasoul Superfoods psyllium husk powder and discovered that I needed to lower the amount I was using because it’s a finer powder than what I was previously using. Otherwise, I discovered that substituting one for one made the dough overly thick and sticky (difficult to shape). I’ve discovered that the finer the powder, the less of it is used in the final recipe. If you happen to have any Bob’s Red Mill PHP on hand, I’ve included both quantities in this recipe for you (see notes on recipe card).
- Psyllium husk powder adds to the binding and chewy texture of this egg-free gluten-free pizza dish, thus I do not advocate substituting it for any other ingredient in it. Make careful to use psyllium husk powder rather than entire husks when making this recipe.

Thin Crust or Thick Crust Pizza?
Your choice between a thick or thin crust pizza is determined by how you shape the dough. I want a thinner crust, so I shape the edges a little narrower than I would normally (as shown in the pictures). If you like a thicker crust, though, make the pizza a little smaller and allow for a little more thickness around the borders.
What Kind of Pizza Pan to Use?
To bake the pizza, you can use a pizza stone, the back of a sheet pan, or a combination of the two. The preheating of the pan or stone will aid in the creation of a crispy crust while baking many pizzas at the same time. With sourdough gluten-free pizza dough, you may use either method because the results are comparable in both instances.
Is the Pizza Crust Freezer Friendly?
Yes!There are two methods of freezing: 1.Freeze the dough balls in freezer bags, or freeze the par-baked pizza crust in a single layer.While freezing the dough is easy, it reduces the leavening power of the dough and affects the final texture of the dough.Using frozen dough is not recommended.2.
- Place the par cooked crust in the freezer.
- This is the approach that I favor since it is quite simple to defrost, top, and bake in a short amount of time.
Is Sourdough Pizza Crust Gluten Free?
Both yes and no.It is dependent on the sourdough starter and flours that are used in the baking procedure.In the event that gluten-free flours are employed in the preparation of a starter and pizza dough, the resulting sourdough pizza crust will not contain gluten.If, on the other hand, gluten-containing flours are used to produce the starter and pizza dough, the pizza crust will not be gluten- free.
A Few Recipe Notes
- Preparing the gluten free pizza dough means that it is baked first, before the sauce and toppings are added to the pizza crust. I’ve tried making this recipe without pre-baking the gluten-free pizza dough, but the crust didn’t finish baking in time for the toppings to be added after the crust had finished baking. Consequently, when the dough has been partially cooked, add the pizza sauce or pesto and the toppings to the crust.
- It takes a little skill and finesse to shape the gluten-free pizza dough into the desired shape. For this reason, and since you must moisten your hands in order to form the dough without using flour, the process is similar to trying to mold mashed potatoes into pizza shapes. Don’t be concerned, the extra water will evaporate while cooking.
- Preparing the crust and final pizza by baking them at 550 degrees Fahrenheit results in a crisp outer crust and a chewy inside. At that temperature, the prepared pizza will cook in a short period of time. It should only take seven to nine minutes
- you’ll form and bake the dough on a piece of parchment paper. It should be noted that parchment paper is often rated for usage at temperatures more than 500 degrees Fahrenheit. As a result, at 550 degrees Fahrenheit, the paper will burn and become brittle if there is any overhang.
- In minutes, you can move your gluten-free pizza dough from its formed state (with parchment paper supporting it) to the prepared stone or pan using a pizza peel. It comes highly recommended by me. In the absence of a pizza peel, the pizza dough can be transferred to the warmed stone or pan by sliding it off the back of another pan and onto the stone/pan. Just be cautious since the oven is really hot.

Mix the Dough:
- In a medium-sized mixing bowl, whisk together the gluten-free flour, almond flour, tapioca flour, psyllium husk powder, baking powder, salt, and yeast until the ingredients are well combined and the flour is equally distributed.
- Make a mental note to put it away.
- In a medium mixing basin, whisk together the sourdough refuse, warm water, and olive oil until well combined.
- Using a fork, combine the flour into the wet components before adding them to the wet.
- The batter will start to thicken as it sits.
Scrape the batter off your hands with a fork, then knead it by hand in the bowl for two minutes until it is smooth and elastic.The dough will thicken and stay sticky, resembling mashed potatoes in texture.Using a fork, scrape the extra dough off your fingers and discard it.Scrape the bowl with a silicone spatula that has been dampened with water and smooth the dough on the surface into a dome.Cover the bowl with a moist tea towel and set it on the kitchen counter or in a warm location for 90-120 minutes to allow the yeast to rise.
- I propose baking it in an oven that has been turned off but with the light on.
- The dough should rise to approximately 1 1/2 times its original size and feel fluffy and springy when touched.
- Meanwhile, prepare a sheet of parchment paper for each pizza by generously brushing olive oil on the parchment and setting it aside while the dough is rising.
- This is the base that will be used to shape and bake the crust.
- Prepare a pizza peel or a sheet pan to slide the shaped dough onto for baking before you begin shaping the dough.
- To prepare the oven, place one oven rack in the center and another rack two settings down from the center if you are making multiple pizzas (leaving enough room to slide the pizza on to the pan).
- On racks, place sheet pan(s) and/or pizza stones if desired.
It is possible to bake two pizza crusts or pizzas at the same time.c.Get the ingredients for the pizza ready to go.Preheat the oven to 550 degrees Fahrenheit just before you’re ready to divide and shape the dough, if necessary (288 Celsius).
Divide the Dough:
- At this stage, all you’ll be doing is shaping the dough with water.
- To work with the dough, fill a small dish with water and use it to moisten your hands as you work with it.
- There is no need to use flour in this situation (as traditionally done with glutenous dough).
- Water should be applied to a work surface.
- Turn the dough out onto a damp work surface and press it down.
Pinch the dough together with your fingertips and palms to form a disk, then split it into two equal pieces with a knife.Use your hands to moisten them once again and form each piece into a rough ball by tucking the edges under.Place the dough balls on a work surface that has been dampened with water.
Shape the Dough:
- Place a pizza dough ball in the center of the parchment paper that has been greased.
- Using your palm and fingertips, dip your hand into the water.
- Start pressing in the middle of the dough with both your fingertips and your palms, working your way out to the edges in a circular pattern, leaving an edge all around that is thicker than the base of the crust (you can play with this if you like a thicker crust).
- It will be almost as though you are attempting to form mashed potatoes.
- Some ripping may occur from time to time, in which case moisten your hands/fingertips and smooth such places back together.
You will need to turn the parchment paper as you handle the dough in order to obtain a pizza shape.Pour in more water and smooth the dough with mild pressure as needed to ensure that it does not adhere to your hands.You may shape the dough by smoothing it in circular movements and/or pinching the dough to create the edges, then smoothing with damp fingertips once more.It’s quite OK for the paper to become somewhat damp.I like to make my crust thin on the bottom and aim for an 11″ crust, but you may experiment with the thickness if you like a thicker crust (10″ pizza).
- The bottom of the par baked crust should be *thicker* than the top – more like a 10 inch crust – if you intend to freeze it since it tends to get brittle/fragile in the freezer if it’s *too* thin in some parts.
- Dock the pizza approximately 10 times with the tines of a fork after it has been dipped in water.
- Discard any excess parchment paper, making sure it is flush with the pizza crust and allowing enough overhang to serve as a handle if necessary.
- It should be noted that parchment paper is typically rated for usage at temperatures below 500 degrees Fahrenheit.
- As a result, at 550 degrees Fahrenheit, the paper will burn and become brittle if there is any overhang.
Par-Bake the Dough:
- The formed pizza dough should be transferred to a pizza peel or the back of a sheet pan, using the parchment paper to act as a handle if necessary.
- Open the oven door and remove the rack containing the stone/pan.
- Slide the pizza dough onto a prepared pizza stone or the back of a preheated pan that has been warmed.
- Occasionally, the middle of the cake will swell up a little while baking.
- Bake for 15 minutes longer if the center of the dough has inflated up.
If the center has puffed up, poke a tiny hole in it with a knife to allow some of the steam out from beneath the pizza – use the knife to push the hole down to release the steam.Prepare the dough by prebaking it for 11-13 minutes, or until it is golden brown around the edges and in the center.Remove the baking sheet from the oven.The parchment will be fragile at this stage, and it will need to be removed before the pizza is baked.It may become stuck a little, so be careful when removing it.
- Finish by slapping your preferred sauce and toppings on top of the par-baked crust.
- When to Freeze: At this time, the partially cooked crust may be frozen.
- Refrigerate or freeze the crust once it has been allowed to cool fully before using.
- Allow to thaw at room temperature before continuing.
Bake the Pizza:
- Pre-heat a pizza stone or pan to 550 degrees Fahrenheit (288 degrees Celsius) and bake the prepared pizza for 6-8 minutes, or until the cheese has melted and the sauce is bubbling.
- A small amount of cheese blistering is OK.
- Keep an eye on the pizza while it bakes since it bakes quickly at high heat.
- Remove the dish from the oven and set it aside for five minutes.
- Cut the pie into eight equal pieces.
Store the Pizza:
Pizza leftovers can be kept in the refrigerator for up to three days if they are stored in a covered container. Reheat for approximately 12 minutes at 350 degrees Fahrenheit.
- In the time since I began testing this recipe, the brand of Psyllium Husk Powder that I had been using has been discontinued by Bob’s Red Mill, which is the brand that I had previously used.
- However, I’ve switched to Terrasoul Superfoods Psyllium Husk Powder and discovered that I needed to lower the PHP to 1 3/4 teaspoon because it’s a much finer powder than the one I was previously using.
- Otherwise, the dough becomes excessively thick and viscous, making it difficult to work with.
- I’ve discovered that the finer the powder, the less it is required in the recipe.
- If you happen to have any Bob’s Red Mill PHP on hand, you may use 1 tablespoon of it in this recipe instead of the whole cup.
