Allow for 3-4 minutes of cooking time, stirring constantly to ensure that nothing sticks or burns. Toss in the garlic and heat for another 30 seconds to a minute until fragrant.
    3. SIMMER: Combine the prepared tomatoes with the sugar and salt in a large mixing bowl. Cook over medium heat until the sauce comes to a simmer, then reduce the heat to medium-low and continue to cook for 30 minutes. Taste and adjust spices as needed with extra seasonings if desired. If you like a more intense tomato taste, you can continue to boil the sauce for an additional 15 minutes or until desired. If you want to use the sauce for pizza right away, let it sit at room temperature for a few minutes before using it.
