    Hawaiian Pizza

    1. To prepare the dough, do the following: Use a scale to weigh your flour, or measure it by carefully spooning it into a cup and brushing any excess off the top. Knead all of the dough ingredients together by hand, in a stand-up mixer, or in the bread machine until you have a soft, smooth dough.
    2. Allow the dough to rise, covered, for 1 hour at room temperature. The crust’s flavor will be enhanced if it is used immediately or refrigerated for up to 24 hours.
    3. After removing the dough from the refrigerator, split it in half.
    4. Preparation: Lightly oil two 12″ to 14″ circular pizza pans, or a couple of baking sheets, or a couple of pieces of parchment paper (if you’re baking on a stone).
    5. Prepare the pans by pressing each piece of dough into a 10″ to 14″ disk (thick crust versus thin crust) and placing it in the pans.
    6. Refrigerate for 1 to 2 hours, or until the crust is as puffy as you want. Cover with lightly oiled plastic wrap and set aside. While the crust is rising, you may start putting together the filling. Preheat the oven to 425 degrees Fahrenheit toward the end of the rising period.
