- Cooked to al dente large pasta shells (about 12 ounces)
- 16 ounces 90 percent lean ground beef
- 1 medium onion, chopped
- 1 medium green bell pepper, seeded and chopped

- Garlic cloves (about 2 medium-sized ones) minced
- One 14.5-ounce can chopped tomatoes with liquids
- one cup shredded cheese
- 1 1.25-ounce packet taco seasoning

- 4 ounces shredded cheddar cheese

TOPPINGS:
Sour cream and salsa are served with shredded lettuce and sliced tomatoes and red onion (as desired)
- Cook the pasta until it is al dente, following the directions on the package. Drainage should be adequate.
- Preheat the oven to 375 degrees Fahrenheit. Prepare a 9×13-inch casserole dish by spraying the interior with nonstick cooking spray.
- In a large pan, cook the meat, onion, bell pepper, and garlic over medium-high to high heat until the beef is browned. Prepare the meat until it is browned, about 5 minutes, stirring regularly to ensure that the flesh is not broken up.
- Combine the chopped tomatoes (with liquids), taco seasoning, and water in a large mixing bowl. Cook, uncovered, for approximately 10 minutes, or until the liquid has thickened somewhat, stirring periodically. Allow the meat to cool somewhat so that it is not too hot to handle.
- Spread half of the salsa in the bottom of the casserole dish that has been prepared.
- Place the meat mixture into the cooked pasta shells and put them in the casserole dish that has been prepared before. Distribute the remaining salsa over top. Sprinkle the cheese on top of the pasta.
- Cover the dish with aluminum foil and bake for approximately 20 minutes, or until the shells are hot all the way through and the cheese has melted. In order to brown the top a little, remove the foil and place the pan on the broiler for a couple of minutes.
- Serve while still warm with chosen toppings.
