    The Good Stuff

    My first meal at Zack Bruell’s was 40 years ago, when I dined on many plump Jumbo Sea Scallops served in a perfect circle above an extraordinarily rich and delectable Raspberry Beurre Blanc sauce.I recall savoring the meal as if it were yesterday in my mind.It was one of the pleasures of my job as a server in one of Cleveland’s best and most popular luxury restaurants at the time, and it was something I appreciated.Vegas!It was a pleasure to work at Hugo’s Cellar in Las Vegas in the mid-1980s, and there were some advantages to it as well.(That’s me, elegantly assembling a Caesar Salad at the tableside of the restaurant.) There’s nothing quite like a plate of grilled Chilean Sea Bass, Rack of Lamb, and Escargot en Croute to please one’s taste buds.

    And what does any of this have to do with the fact that I haven’t had pizza in 30 years?Please continue reading.

    My Palate

    My taste buds are incredibly snobbish and judgmental.Not because I was raised by well-paid nannies who were enthusiastic about cooking (I wasn’t).But it wasn’t because I was eating meals cooked by Chef Angelo, who worked on our family’s little boat (kidding).On the contrary, the reason I have ″uppity″ taste buds is that I have worked in numerous excellent high-end restaurants over my career.That means I was able to sample dishes that a lot of others would never have the opportunity to try.Likewise, when I have a need for some delectable mushrooms on a pizza, I never go to Domino’s.

    I prefer to make my own.I’m sorry, but I can’t.To my taste, their pizza is far too ″commercial.″ To put it another way, my taste buds would be at a loss for what to do.

    Pizza is Good!
