  • 1 1/2 cup Re-fried Black Beans (see recipe below)
  • 1/2 cup sour cream
  • Half a cup queso fresco
  • half a cup Oaxaca cheese (which is comparable to mozzarella)
  • lettuce shredded

  • In a slow cooker, combine the chicken thighs, cumin, coriander, paprika, chili flakes, cayenne, and salsa. Cook on low for 8 hours. Cook for 5-6 hours on high heat, covered with a lid, until the chicken can be easily shredded, depending on your preference. Remove the chicken from the pan and shred it with two forks
  • Preheat the oven to 450 degrees Fahrenheit.
  • Corn tortillas should be placed on a baking pan. Distribute some of the re-friended black beans on top of each tortilla in an even layer. Transfer the tortilla to the oven and bake for approximately 10 minutes, or until it is somewhat crunchy.

Mexican Pizza (Taco Bell Copycat)

  • Corn tortillas are filled with ground beef, refried beans, and cheese and baked until the beef is cooked through.

Mexican Pizza

Taco Bell’s Mexican Pizzas are a favorite of many people. As it turns out, I took that concept and made it much BETTER than I had originally intended! Mexican Pizzas cooked from scratch are excellent and one of those dinners on which everyone can agree. My children like constructing their own, which makes the process much simpler for me, and I enjoy cooking with them!

Ingredients in Mexican Pizza:

  • Ground meat
  • taco seasoning package (or homemade taco seasoning)
  • water
  • corn tortillas
  • refried beans
  • red enchilada sauce
  • shredded cheddar cheese
  • roma tomato
  • sliced olives
  • green onions

How to make Mexican Pizza:

  • Prepare the ground beef. Stir in the taco spice and water until everything is well-combined.
  • Make corn tortillas according to package directions. Lightly pan fry them in a small amount of oil until they are crispy.
  • Assemble.
  • Spread a thin coating of enchilada sauce on the top of one corn tortilla, followed by a layer of refried beans and a spoonful of taco meat. Repeat with the other corn tortilla. Place a second corn tortilla on top of the meat and sprinkle cheese on top of it.
  • Finish with a dollop of enchilada sauce. Cover the tortilla with a thin coating of enchilada sauce, then sprinkle with more cheese.
  • Heat the oven to 400 degrees for approximately 10 minutes, or until the cheese is melted and bubbly.
  • Add olives, tomatoes, scallions, and sour cream to the dish as garnishes. To serve, cut the potatoes into wedges.

Although I believe they are best served fresh from the oven, leftovers can be stored in an airtight container in the refrigerator for up to one week. You may reheat them in the oven, in a pan over medium heat on the stove, or in a microwave.

  • 1 Tablespoon olive oil
  • A total of 20 corn tortillas
  • • 1 can (16 ounces) refried beans
  • 1 can red enchilada sauce (about 10 ounces)
  • 2 cups of shredded cheddar cheese (optional)
  • 1 roma tomato, peeled and chopped
  • Olives (sliced)
  • 1 small container sliced olives
  • 3 green onions, finely chopped
  • Cook the ground beef, crumbling it with a wooden spoon as it cooks, until it is no longer pink in the center. Remove any grease that may have accumulated.
  • Stir in the taco spice and water until everything is well-combined.
  • In a small pan, heat the oil over medium-high heat until shimmering. Cook corn tortillas one at a time, one at a time, until golden and slightly crisp on both sides, flipping halfway during the cooking time. Transfer to a piece of paper towel

Assemble pizzas:

  • One corn tortilla should have a small coating of enchilada sauce spread on top of it. Taco meat should be topped with refried beans and a dab of taco sauce
  • Place a second corn tortilla on top of the meat and sprinkle cheese on top of it.
  • Spread with a thin layer of enchilada sauce and top with more cheese if desired.
  • Bake for about 10 minutes at 400 degrees F, or until the cheese is melted and bubbling
  • Add olives, tomatoes, scallions, and sour cream to the dish as garnishes. To serve, cut the potatoes into wedges.
