In fact, it turns out that the opposite end of the range is where I want to be: bread flour has a protein concentration of roughly 14 percent, which is about 4 to 5 percentage points higher on the protein scale than cake flour. Roll each piece into a ball, then lay on a well-floured surface (allowing a few inches between each one) and cover with a floured cloth to keep the dough from drying out. Alternatively, place each ball of dough in a pint-sized deli container that has been covered. Allow the dough to rise at room temperature for about 2 hours, or until it has doubled in volume.
    3. Start by lighting a huge chimney full of coals (about 5 quarts of coals) and spreading them evenly over half of the grill’s surface area. Place the grill grates in the desired position, cover, and allow to heat for 5 minutes. Brush the grill grates clean with a stiff bristle brush.
    4. Working with two to three balls of dough at a time, stretch each one with your hands into an oblong that is approximately 10-inches long and 6-inches wide (you can use a rolling pin for this as well). Once you’ve spread out two or three pieces, place them on the grill directly over the fire to cook. Cook without moving the pan until the bottom side is scorched in patches and a light golden brown on the bottom. Then flip it over and cook it until the second side is charred and browned, about 3 minutes more on each side. After removing the naan from the grill, brush it with melted butter right away.
