All of your sushi rolls will be the same size if you use the same quantity of sushi rice for each roll.

    5. Nori (Seaweed)

    I just use half of a sheet of nori for my recipe, and that is plenty to roll everything up. If you find that the nori is a bit too short, you can shorten the filling a little. Continue to practice, and you should be able to determine the optimal rolling ratio.

    6. Spicy Mayo

If you aren’t going to serve the sushi roll straight away, I recommend squeezing a lemon over the avocado to keep it from turning brown.. Repeat the process with the remaining avocado halves.
    • Using plastic wrap, line the bamboo mat and set half of the nori sheet on top of it with the glossy side down. Place one-and-a-half cups sushi rice on top of the nori sheet after dipping your hands in the tezu (vinegar water).
    • Turn the nori sheet over so that the rice is on the other side. Using the nori sheet nearest to you, place two pieces of shrimp tempura, two cucumber strips, and some tobiko at the bottom end of the sheet closest to you
    • Start at the bottom and roll the nori sheet tightly and firmly over the filling with the bamboo mat until the bottom edge of the nori sheet touches the bottom edge of the filling. Remove the bamboo mat from the floor and roll over the leftover nori.
    • Place the bamboo mat over the top of the roll and tightly push the roll together.
    • Remove the bamboo mat and plastic wrap from the sushi roll and set them aside for later use. Lift the avocado slices from one half of the bread and arrange them on top of the roll, using the side of the knife to help. If you want to use unagi, alternate avocado and unagi slices and place them on top and sides of the roll to cover the top and sides.
    • Replace the plastic wrap on top of the roll and place the bamboo mat on top of the roll. Tightly push the roll through the bamboo mat until the avocado slices completely round the roll and are no longer visible. Make sure not to break the avocado slices by being too rough with them. Remove the mat and, using a knife, cut the roll into 8 pieces through the plastic wrap it was wrapped in. Using a moist cloth, wipe the blade of your knife after each cut. If the sushi roll becomes sloppy while being sliced, tightly crush the sushi roll with the bamboo mat once more. Removing the plastic wrap from the top of the sushi and placing the sushi pieces on a serving dish are the next steps. Make the rest of the rolls in the same manner.
    • Place some tobiko on each piece of sushi and drizzle with spicy mayo before finishing with a sprinkling of black sesame seeds. As an optional extra, you may put some unagi sauce on the dish so you can dip the sushi. Enjoy!
