In a technical sense, absolutely.A zip-locked bag, on the other hand, is more costly, it isn’t as flexible, and it retains air within the bag, which will interfere with your rolling.In order for the mat to adhere to the film, I normally pull off approximately 12 inches of film (without damaging or cutting it) and flick a few droplets of water on it.Then I fold the makisu over while pulling out additional film from the bag.Check to see that the mat’s edge remains straight at all times.

I normally utilize approximately 3-4 layers of the film before taking it off the roll and storing it somewhere safe.The loose ends on either side of the paper will be visible once it has been removed off the roll.I usually fold those over to the rounded side of the mat and use a lighter or a hot surface to partially melt the film, which allows it to cling to the other layers more easily.Finally, fold the mat in half and poke a few holes in the film to enable any excess air to escape before folding it again.In addition, you should clean the flat side of the mat with a moist towel to avoid your ingredients from clinging to the flat side.

I’ve seen some plastic sushi mats. Do those work just as well or better than the bamboo mats?

They perform a respectable job, but I still prefer the bamboo mats over the plastic makisu in most situations. I do appreciate the fact that the plastic mats do not need to be wrapped in plastic film, though.
