We tried take-and-bake pizza from Piggly Wiggly, Kwik Trip and four other stores and ranked them

My mother, who does not typically enjoy non-homemade pizza, participated, as did a friend of my teenage daughter, who told me she is the pickiest pizza eater in her family, my in-laws, who have never met a frozen pizza that contained enough cheese, and an 11-year-old who I heard from a reliable source (her mother) had eaten an entire pizza by herself.

The process

  1. I didn’t want anybody to make the assumption that Sendik’s, the most costly pizza of the lot, would be superior to Aldi, the least priced pizza of the bunch.
  2. In addition, I didn’t want my father and father-in-law, who are huge fans of all things Kwik Trip, to be unfairly prejudiced.
  3. Consequently, I decided that the taste test should be conducted in a blind manner, with only my elder daughter — who could not participate owing to food allergies — and I being the only ones who knew where the pizzas had come from.
  4. I labeled the pizzas with numbers, and everything went smoothly, with the exception of a short moment of fear when I forgot which pizza I had in the oven.
  5. First and primarily a mother who has organized innumerable sleepovers, birthday parties, and family meals, I took the ages of my youngest attendees into consideration and picked the style of pizza from each supermarket that had the lowest common denominator — cheese — when making my selection.

While the Meijer pizza had a lot of cheese and didn’t have as much taste as the Pig pizza, the dough was crisp and tasty, according to the people who commented on the blog. 15-year-old Kassidy Molumby shared her thoughts on the subject ″We like the cheese a lot! I thought it was similar to Pizza 3 (Piggly Wiggly), only there was more white cheese on top. It was fantastic. I couldn’t stop watching it.″ The ″white-cheese″ Meijer pizza was also a favorite among the younger children over the Piggly Wiggly pizza. Dockter, who is dressed casually in trousers and an untucked button-down shirt, takes us on a tour of the Milaca complex, beginning with the conference room and office area.His laid-back demeanor is in keeping with the informal brand, which began in 1989 at Don and Polly Hegedus’ house near Mille Lacs.It all started with the couple’s unsuccessful Anoka pizza business.Heggies began by serving at a friend’s resort on Mille Lacs, then expanded to include other lodges and watering places around the lake.The name ″Heggies″ is a play on Don’s nickname, ″Heg.″ Heggies specializes in tavern-style pizza, which means it’s thin-crust, topping-heavy, and designed to be squared up and shared with pitchers of beer, much like our hard-drinking predecessors.

″I believe that growth worried them.″ This is where Dockter comes in.A South Dakota native, Dockter has inherited his father’s entrepreneurial spirit and his mother’s desire to own a café.His mother also has an electrical contracting firm.After earning a bachelor’s degree in aeronautical engineering from the University of Minnesota, Dockter spent six years working for Lockheed Martin in Denver, followed by stints with a satellite imaging startup and defense contractor General Dynamics.

By the early 2000s, he was ready to make a 180-degree turn.When a friend revealed that Heggies was for sale, Dockter and a group of minority investors purchased the business in 2004 for an amount that Dockter will not disclose..When you hear the story of an aerospace engineer who buys a small pizza company, you might laugh.″I laugh because I went from ordering classified satellite launches at Lockheed Martin — and needing 14 different passwords to get from my car to my office — to working in Onamia, Minnesota,″ Dockter says.However, the guy is dead serious about the pizza, which hasn’t altered much since he took over the restaurant in the first place.

He continues to utilize the same recipe and many of the same suppliers, including a Wisconsin creamery that he would not identify for fear of giving his competition — mid-size regional brands such as Iowa’s Piccadilly Circus Pizza — any ideas about what he is doing.When Dockter first opened, Heggies offered eight different flavors, including all of the classics as well as some surprises like cheeseburger.Today, the count is up to twelve.

Dockter inquired as to whether Frank had sufficient merchandise on his truck to fulfill the request.He went ahead and did it.Dockter was unsure if the account had adequate freezer capacity to accommodate the pizza delivery request.They were successful.″Can you tell me exactly what the problem is here, Frank?″ asked Dockter.

Don had, according to reports, set a daily order limit of $250 for each account.When Dockter discovered this, he immediately disregarded the norm and guided Heggies through a decade of cautious expansion.In 2005, the firm moved into the grocery sector, thanks to the advice of a delivery driver who had been receiving requests from supermarkets.It is now available at a number of gas stations and full-service grocers, as well as Everett’s Meats in Minneapolis, among other locations.″Grocers tracked us down, just like the bars,″ adds Dockter, who prefers to sell to small, family-run businesses rather than large corporations.

According to shop manager Nancy Klatke, Heggies is the most popular Minnesota-made pizza at Everett’s, with the Shirk’s and Chanticleer brands coming in second and third, respectively.It is because Heggies is a ″wonderful Minnesota company that comes in line with what we do,″ according to Festival Foods vice president Jason Herfel, that the firm’s products are now available at Festival Foods locations in the Twin Cities.″Plus, it comes with a built-in fanbase,″ says the author.Herfel further points out that sales of Heggies have increased year after year since they first appeared in his stores three years ago.

Retail demand for Heggies expanded to such an extent that the firm was compelled to relocate to Milaca in 2008, a move made even more appealing by tax breaks from Mille Lacs County and a $1 parcel of land from the city of Milaca.According to Dockter, the factory currently produces ″thousands of thousands of pizzas every day,″ with room to accommodate additional clients both within and outside of the state (Heggies began appearing in border towns in Wisconsin circa 2005, then Iowa and the Dakotas in 2012.).When the tour group arrives at the assembly area, Dockter expresses his satisfaction in his employees, who number around 50 full-time employees and a small number of part-time employees.When he adds, ″We’ve developed this company with fantastic people and amazing customer service,″ it might seem corny, but the assembly team looks to be having a good time, laughing about while they add toppings and run massive blocks of cheese through industrial shredders.The human touch is then applied to each pizza before it is boxed, tagged, and flash-frozen before it is sent down the assembly line to a big cooler where it will be picked up by one of eight delivery vehicles.

Dockter would not disclose Heggies’ revenue figures, but he will state that the company has seen ″high, double-digit percentage sales growth″ since 2004.His pizza is now available in stores and restaurants throughout the five-state region, with prices ranging from $6.99 to $10.99 in stores and up to $14 in bars and lodges.Dockter makes no apologies for charging such a high price for a pre-made frozen pie.

The question then becomes: Do high pricing at high-end food shops have the potential to erode Heggies’ mystique and reputation?Predictably, the organization’s president disagrees.″We’ve taken precautions with our expansion,″ he says.″When I first started out, I wanted Heggies to be as successful as Tombstone, another frozen pizza that got its start in bars; in fact, practically every frozen pizza gets its start in bars,″ says the owner.

But I ultimately recognized that when you reach that level of success, you have to make quality sacrifices.″ It’s not as if he hasn’t been seduced by giants before.Dockter has been approached by both Wal-Mart and Target, but he has turned them down because he prefers to work with smaller businesses who are his bread and butter.According to him, ″we don’t want to lose sight of our primary clients.″ There is evidence that this growth approach is effective.Dockter claims that he receives calls from potential new clients every day of the week.In the case of the Modern Climate hire, the company will upgrade its website, which now appears to be trapped in the 1990s and provides very little information beyond the Milaca location.

Expect a section of it to be devoted to customer input gathered from social media platforms.No ″locations″ page will be available – Dockter isn’t interested in informing you where you can locate Heggies, and if that means displeasing a few hungry customers along the road, so be it.″During my first year at Heggies, the websites of rivals served as my finest training tool,″ Dockter recalls.The location where everyone else’s pizza is served has been revealed to me.Photographs of their meeting halls have been made available to me.

That is not something we do.I don’t want to lay out a road plan for where we’re going so that other people may compete with us in the future.Our success is largely due to the fact that we do not follow the herd — that we make the greatest pizza and that we allow people to talk about us.″ Anita Nelson admires Dockter’s decision to establish his firm in a low-key manner, according to her comments.Nelson is the president and creator of IN Food and Marketing & Design, a creative agency located in Minneapolis that works with customers in the food industry ranging from General Mills to Cargill.

″That is not an approach that everyone can get away with,″ she explains.″To accomplish it successfully, you really do need a fantastic product with a cult following.″ One of the difficulties Heggies may face is that, as the company expands, things that have worked in the past may no longer work in the future — they may decide that it is worthwhile to begin informing consumers where they can get it.″ While waiting for it to happen, Heggies will adopt the Ray Kinsella marketing strategy: It doesn’t matter how good your pizza is; people will come.According to Dockter, a young couple was on a road vacation when they decided to stop by the Heggies plant so they could have their photo shot in front of the structure.The James Beard Award-winning chef Doug Flicker of Piccolo in South Minneapolis is also a fan of the dish.Four years ago, Flicker walked into a shop and purchased his first pair of Heggies.

Described by the chef as ″a mix between my two favorite pizza shops: Dulono’s and Red Savoy’s,″ the dish was ″like a cross between my two favorite pizza locations.″ ″I appreciate the fact that it is a tiny, local firm that is focused on doing one thing really well.″ Dockter had visited Piccolo a couple of years earlier, and Flicker remembered him being there.In fact, I was more apprehensive than I would have been if I had been serving a celebrity chef when the waitress informed us that pizza royalty had come.Flicker’s affection for Heggies goes to the heart of the company’s success: Even as they grow, Minnesotans prefer to value and patronize businesses that have a strong sense of connection to their home state.
