  • Personal preference: I prefer to split my pizza dough recipe into three portions since I prefer thin crust pizza.

  • You may serve supper on your own schedule instead of following ours by ordering parbaked pizzas. We will prepare half of your order here, and you will complete the baking at home! Orders must be picked up prior to 5 p.m. or after 7 p.m. to avoid our dinner rush.
  • Pies that have been par-baked are best consumed on the day they are ordered.
  • ON THE CHARCOAL GRILL Preheat your gas or charcoal grill to 400 degrees Fahrenheit before you begin. Because your pizza will be baked directly on the grate, there is no need to oil or prepare the surface. Close the oven door and bake the pizza for 4 to 5 minutes longer. Examine the pizza after 4 minutes. It’s done when the cheese is melted and the crust is golden brown (bake time will vary depending on your grill). Garnish your pizza with any of the toppings we’ve given (a list of pie-specific instructions is below). After that, just slice, serve, and enjoy! THE OVENPreheat your oven to 500 degrees Fahrenheit. Par Baked Pizza Crusts

It’s going to be a busy weekend!It will be my pleasure to speak at the Knights of Columbus Hall in St.Charles on Friday, where I will deliver a talk titled, ″What Kind of Bread Shall We Be?″ -an excellent approach to begin your pre-Lenten introspection (see the events page for more details and a contact person).Next, I’ll be presenting a pizza demo and sample at the K of C in Godfrey, Illinois, on Saturday, September 22nd (also on the events page).

Ticket availability for both events is still available, so I hope to see some of you there!It is necessary for me to pre-bake pizza crusts if I host a pizza gathering for more than a dozen or so people—I pre-baked 10 crusts on Tuesday night and will make another dozen or so today.I thought Breadheads would be interested in learning more about the approach, so I’m including a little excerpt from my book Thursday Night Pizza to share with you (Reedy Press, 2010, get it from St.Bede Abbey Press HERE).Also, par-baked crusts make a fantastic item for a bake sale, by the way.

Partially-baked crusts are made with the same dough as the other pizzas in this book, but because the more moist Italian-style dough tends to keep the crust from drying out during the baking process, they are less commonly used.I’ll mix an American-style dough with a little additional water and turn the entire batch into par-baked crusts every now and then to save time.Because the crusts are basically cooked twice, a moist dough helps to avoid an excessively dry crust from forming on the bottom.The dough should be docked once it has been formed according to the specifications and placed on a peel lightly sprinkled with cornmeal.

  • Allow for a 10-minute resting period after delicately brushing the top of the dough with olive oil on all sides.
  • Then bake for 7 to 10 minutes at 350 degrees Fahrenheit on a pizza stone that has been warmed, or until the dough is just beginning to color faintly.
  • Remove the dish from the stone and place it on a cooling rack to cool.
  • If huge air bubbles appear on the crust while the pie is baking, poke them with a fork to release the air and deflate them.
  • Double wrap the crust in plastic wrap and store the finished product in the freezer until it is absolutely cold.

Par-bakes may be kept in the refrigerator for up to three months, although mine seldom last that long.When ready to use, remove the crust from the freezer and allow it to defrost for at least 15 minutes before adding the toppings.After that, bake as usual.Even while the crust will be crispier than with new dough, you could decide that you prefer it that way.

When I’m cooking a pizza with a lot of toppings, such as the Muffaletta from the Pizza Diavolo, I prefer a par-baked dough since it stands up better to the toppings.Using pre-baked pizzas is also a terrific technique to serve a large number of pizzas in a short amount of time.Two culinary students and I once worked together to make 54 pizzas in an hour and a half for a fundraising event, using a combination of fresh and par-baked crusts.
