FIESTADA- School Lunch Series

  • I believe I’ve accomplished my goal!
  • The following is my first effort to reproduce one of my childhood faves, in collaboration with Carrie David, who commented about her favorite school lunch!
  • I suppose the hamburger, and I use the term loosely, that was on it was really good, so of course mine wasn’t nearly as good as it might have been.
  • I recall that there was only a small amount of meat and cheese.
  • When I saw the price of a pre-made crust at the store where I was shopping, I decided against it.
  • I usually make my own dough, but for the sake of expediency, I bought a package of Jiffy dough from Walmart.

This entire dish was made up of convenience products, so don’t be offended by my ingredient selections.I considered it my goal to attain the desired taste, regardless of the ingredients used, and I want everyone who want to duplicate these dishes to be able to do it swiftly and with products readily available to them!To summarize, my crust consistency is not as great as the original Fiestada, but the flavor is so close to perfection that I wanted to DIE after taking my first mouthful. It was just fantastic!I could have cooked my hamburger and then zip zapped it in my processor to make it a more fine consistency, but I chose not to do so in order to reduce the number of dishes I had to wash.Let alone, leave me alone today since I’m feeling sluggish.

Despite the fact that I did not even attempt to replicate the original form, I do not believe you will be disappointed after tasting these delectable mini Mexican pizzas! So, Carrie, here is everything you’ll need to get your Fiestada up and running!Fiestada 1 box Jiffy Pizza Crust Mix (about 1 pound) (prepared according to package direction) 1/8 – 1/4 tsp cumin (optional) 1/2 cup pizza sauce (optional) 1 cup hamburger meat (ground) (flavored) 1 package taco seasoning mix (optional).mild cheddar cheese (about 1 1/4 cup) a dash of seasoning Season hamburger with spice package before browning and draining.Prepare 2 tiny pizza crusts using the dough that you previously prepared.I turn a big baking sheet over and spray it with nonstick spray before placing my crusts on top.

Bake for 3 minutes at 450 degrees before removing from the oven.Prepare the sauce by placing 1/2 cup of the sauce in a mixing dish, adding the cumin and salt, and mixing well.Distribute evenly between the two pizzas and spread to cover.Burger and cheese should be sprinkled on top.Bake for 10-12 minutes at 450 degrees, or until the crust is golden brown and the cheese has melted! You know you won’t be able to stop yourself from producing these.

If you attended Ord Elementary or Ord Junior/Senior High, you are forced to try these!I couldn’t believe how close it was to being perfect in terms of flavor!Obsess over the form of yours all you want; I have enough to worry about now, so I’ll leave it to you!Don’t forget to let me know how they come out!

Fiestadas

These Fiestadas are a homemade rendition of a classic high school lunch dish that everyone remembers. Taco meat and cheese are layered on top of a thin handmade pizza dough that has been smeared with a Mexican-inspired sauce. It’s simple and tasty!

Please tell me you’ve experienced the deliciousness that is- the fiestada.

Taco or Mexican pizza is what it is in essence, and it was one of just a few delectable and edible dishes provided in my high school cafeteria, along with turkey slop and their beef sticks.Thin crust, enchilada-like sauce, meat, and cheese are the ingredients of this dish.Everything about this dish is simple, yet it is really tasty. As you are aware, I take great pleasure in attempting to recreate my favorite school hot lunch foods from scratch.Just this past weekend, I utilized leftover turkey to create my turkey slop, which is always a hit with my family.

  • These fiestadas are quite similar to the original and are really simple to prepare, making them an excellent choice for a fun midweek supper option.
  • However, my husband was the true measure of whether or not they were a success with my children, who were utterly unaware of what a fiestada was.
  • When Pat finished his meal, he said, ″Wow, Laur!

″These taste just like the ones I remember.″ Win-Win.Now all I have to do is figure out how to create the beef sticks, which appear to be as awful as they sound but, from what I recall, are actually rather tasty.

To Make This Fiestadas You Will Need:

  • TO MAKE THE SAUCE, combine tomato sauce, melted butter, ground cumin, sugar, coriander, and kosher salt in a mixing bowl.
  • For the pizzas, you’ll need: pizza dough (either standard or Greek yogurt), ground beef, taco seasoning, medium cheddar cheese, plain nonfat greek yogurt or sour cream, sliced green onions, chopped cilantro, and spicy sauce.

Combine 8 ounces of tomato sauce, 1 tablespoon melted butter, 1/2 teaspoon cumin, 1/4 teaspoon sugar, 1/4 teaspoon ground coriander, and a sprinkle of salt in a medium mixing dish and put aside. Then, heat a deep-sided pan over medium heat and add the ground beef to cook through.Cook until the meat is no longer pink, breaking it up with a wooden spoon. In the meantime, preheat your oven to 450°F and spritz an inverted metal baking sheet with olive oil to prevent sticking.Once the ground beef is fully cooked, drain off the fat and set it aside before seasoning the meat with 1-1/2 tbsp taco seasoning and mixing it in well.

  • Stir until the meat is evenly distributed throughout, breaking it up into even smaller bits.
  • After then, move the pan to one side to allow it to cool somewhat.

FOR THE PIZZA DOUGH:

After that, turn the dough out onto a well floured board and divide it into four equal pieces. If you’re using my usual pizza dough recipe, you may need to reduce the amount of dough you use by 50%.Then, one at a time, form each one into a ball with your hands.Making a thin pizza circle with the first dough ball is easy if you start with a little dough ball.Traditionally, fiestadas are hexagonal in shape, but I don’t have the time or patience to make one that way.

  • Place two of the rolled-out discs onto the prepared (inverted) pans and press down firmly to adhere.
  • After that, spread a few spoonfuls of the fiestada sauce all over the dough, being sure to get it all the way to the edges.
  • Using a little amount of the cheese, garnish the dish.

Then add a quarter of the taco meat on top. Finally, a dusting of more cheese.Using the lowest oven rack, bake for 8 to 10 minutes, or until the potatoes are tender.Halfway through the baking process, rotate the pan.I’ll confess that it doesn’t appear to be much, but believe me when I say it is incredible!

  1. It’s now time to put these fiestadas on the table!
  2. When I was in high school, I ate these fiestadas just as they were — simple.
  3. Toss in a sprinkling of green onion, cilantro, diced jalapenos and plain nonfat yogurt, along with a dash or seventeen of spicy sauce, and you’ve got yourself a tasty appetizer.
  4. With just one taste, I’m transported back to high school.
  5. Let’s go back to the days when wearing my father’s baggy pants (yes, I said father’s) with cropped tees and a flannel knotted around the waist was considered ″cool.″ Oh my goodness.

My fashion sense may have been lacking in the mid-1990s, but at least the school food was delectable!Enjoy! And do let me know if you decide to give these fiestadas a try!Take a picture and share it with me on Twitter or Instagram!
