These Fiestadas are a homemade rendition of a classic high school lunch dish that everyone remembers. Taco meat and cheese are layered on top of a thin handmade pizza dough that has been smeared with a Mexican-inspired sauce. It’s simple and tasty!

Taco or Mexican pizza is what it is in essence, and it was one of just a few delectable and edible dishes provided in my high school cafeteria, along with turkey slop and their beef sticks.Thin crust, enchilada-like sauce, meat, and cheese are the ingredients of this dish.Everything about this dish is simple, yet it is really tasty.As you are aware, I take great pleasure in attempting to recreate my favorite school hot lunch foods from scratch.Just this past weekend, I utilized leftover turkey to create my turkey slop, which is always a hit with my family.

To Make This Fiestadas You Will Need:

  • For the pizzas, you’ll need: pizza dough (either standard or Greek yogurt), ground beef, taco seasoning, medium cheddar cheese, plain nonfat greek yogurt or sour cream, sliced green onions, chopped cilantro, and spicy sauce.

Combine 8 ounces of tomato sauce, 1 tablespoon melted butter, 1/2 teaspoon cumin, 1/4 teaspoon sugar, 1/4 teaspoon ground coriander, and a sprinkle of salt in a medium mixing dish and put aside.Then, heat a deep-sided pan over medium heat and add the ground beef to cook through.Cook until the meat is no longer pink, breaking it up with a wooden spoon.In the meantime, preheat your oven to 450°F and spritz an inverted metal baking sheet with olive oil to prevent sticking.Once the ground beef is fully cooked, drain off the fat and set it aside before seasoning the meat with 1-1/2 tbsp taco seasoning and mixing it in well.

  • Stir until the meat is evenly distributed throughout, breaking it up into even smaller bits.

FOR THE PIZZA DOUGH:

After that, turn the dough out onto a well floured board and divide it into four equal pieces.If you’re using my usual pizza dough recipe, you may need to reduce the amount of dough you use by 50%.Then, one at a time, form each one into a ball with your hands.Making a thin pizza circle with the first dough ball is easy if you start with a little dough ball.Traditionally, fiestadas are hexagonal in shape, but I don’t have the time or patience to make one that way.

  • Place two of the rolled-out discs onto the prepared (inverted) pans and press down firmly to adhere.
  • After that, spread a few spoonfuls of the fiestada sauce all over the dough, being sure to get it all the way to the edges.
  • Using a little amount of the cheese, garnish the dish.

Then add a quarter of the taco meat on top.Finally, a dusting of more cheese.Using the lowest oven rack, bake for 8 to 10 minutes, or until the potatoes are tender.Halfway through the baking process, rotate the pan.I’ll confess that it doesn’t appear to be much, but believe me when I say it is incredible!

FOR THE FIESTADA SAUCE:

  • Tomato sauce (eight ounces), 1/2 teaspoon cumin, 1/4 teaspoon sugar, 1/4 teaspoon powdered coriander, 1 pinch kosher salt, 1 tablespoon melted butter

FOR THE FIESTADA:

  • Taco seasoning (one recipe) and one pound of lean ground beef
  • 12-cup shredded cheddar cheese that has been freshly grated

OPTIONAL TOPPINGS:

  • Green onions, sliced for serving
  • jalapenos, sliced for serving
  • sliced green onions, sliced for serving
  • Cilantro, finely minced, to be used as a garnish
  • For serving, plain nonfat Greek yogurt or sour cream can be used
  • Hot sauce to be used as a condiment

MAKE THE SAUCE:

In a small mixing dish, combine the tomato sauce, sugar, cumin, coriander, salt, and butter. Set aside until needed.

MAKE THE MEAT:

  • Using a large skillet over medium heat, sauté the ground beef until it is thoroughly cooked, then drain the grease from the pan
  • Remove the skillet from the heat and allow the meat to cool for a few minutes before adding the taco seasoning and stirring until evenly distributed.

MAKE THE FIESTADA:

  • Prepare the pizza dough and divide it into four equal amounts for the pizzas. (See the footnote.)
  • Preheat your oven to 450 degrees and gently coat two inverted metal baking sheets with olive oil spray
  • Spread a small layer of oil on a prepared baking sheet and transfer each dough part
  • Put some sauce on the tortilla (making sure to spread it all the way to the borders), sprinkle with some cheese, top with 1/4 of the taco meat and more cheese, and then bake for 10 minutes on the lowest rack of your oven, or until the cheese is melted and bubbling and the crust is golden.
  • Use any toppings your heart desires to finish it off.
