Old Forge pizza is a unique pizza style derived from a small coal-mining town of nearly 9,000 residents in northeastern Pennsylvania (NEPA). Old Forge, the self-described “Pizza Capital of the World,” serves up rectangular “trays” of pizza by the “cut.”
OLD FORGE: PIZZA CAPITAL OF THE WORLD The unique style of pizza, known as ‘Old Forge Pizza,’ is baked on a rectangular metal pan, where there are no ‘slices’ but ‘cuts’ instead, and you order it by the ‘tray’ and not the ‘pie.’ Ask for a ‘pie’ and you might get apple or blueberry!

The Top 10 Old Forge-Style Pizzerias in Northeast Pennsylvania

Jim Mirabelli runs the website NEPAPizzaReview.com, where he writes about and evaluates pizza places in northeastern Pennsylvania. He is also a prominent expert on Old Forge-style pizza, which he specializes in.Old Forge pizza is a distinctive pizza type that originated in a tiny coal-mining town in northern Pennsylvania with a population of almost 9,000 people (NEPA).Old Forge, which bills itself as the ″Pizza Capital of the World,″ sells rectangular ″trays″ of pizza by the ″cut.″ In terms of texture, the crust is similar to that of a Sicilian pie, with the exception that it tends to be a little more thick and sometimes spongy. The sauces are often rather substantial and savory, and they are frequently prepared with onions.

However, it is the top-secret cheese mixes that distinguish these platters as really one-of-a-kind.Pizzeria owners typically keep their cheese blends hidden away, although it is usual to discover combinations of cheddar, American, brick, cooper, mozzarella and other types of cheese in their establishments. With the ultimate result being a unique pizza that adheres to the roof of your tongue, it is a huge hit with both residents and visitors who enjoy pizza.Given that I have spent my entire life living in northeastern Pennsylvania and have visited at least 300 different pizzerias in the region, I have had the opportunity to try practically every Old Forge pie in the Pizza Capital of the World and nearby regions.

Listed below are my own recommendations for the top ten Old Forge pizzerias based on my personal experiences spanning more than three decades: 1.Arcaro and Gennell – The Forge of the Ancients Established in 1962, Arcaro and Gennell has received a great deal of national recognition and praise for its pizza over the years. And with good reason: their pizza is delicious!A&G Pizzeria, located on Main Street in Old Forge and surrounded by a handful other pizzeria competitors within a stone’s throw, constantly produces delicious tray after delicious tray of pizza.

The double-crust white pizza, which can be described as a huge grilled cheese pizza, is also a popular choice among customers.A banquet hall, numerous bocce ball courts, and a covered outdoor sitting area have all been added to the restaurant’s footprint throughout the years, increasing its overall size by orders of magnitude. From fancy dining to pizza and clams, Arcaro and Gennell has it everything, and their Old Forge pizzas are among the best in the region, according to NEPA Pizza Review.Secondly, Anthony’s – Old Forge.Despite the fact that Anthony’s in Old Forge is most renowned for its fine dining and delectable Italian food, those in the know know that the restaurant also provides some of the greatest Old Forge pizzas in the region.Their standard and thin Old Forge-style pizzas are both delicious, and while they are made with the same ingredients, each pie provides a completely distinct taste sensation.

This is a wonderful spot for a romantic supper or a casual drink after work.I really like the seafood fra diavolo, which comes in a large piece and has plenty of spicy shellfish. It’s my favorite non-pizza menu item. You can’t go wrong with anything on the menu at this restaurant, which is similar to many of the other establishments on this top 10 list.3.Samario’s Italian Restaurant – Scranton Samario’s is an Italian restaurant in Scranton, Pennsylvania, which is in close proximity to the Pizza Capital of the World, Napoli.

A variety of pizza varieties are available, including New York-style, Chicago-style and, of course, Old Forge. It just took one piece of their pizza to convince me that I was indeed within the municipal borders of Old Forge—it was that genuine and amazing!Samario’s Chicago deep-dish pizza, as well as the rest of their extensive fine dining and takeaway menus, is also highly recommended. In addition, the rapidly expanding company has opened a second shop in Tunkhannock, Pennsylvania, ensuring that Old Forge pizza is now available in Wyoming County as well!

4.Colarusso’s Cafe in Avoca, California The Colarusso’s name is synonymous with the elites of NEPA’s pizza scene, and the company has many outlets around the region to prove it.All of them have been delicious, and after speaking with hundreds of pizza fans, the consensus is that the Avoca restaurant serves the best and most consistent pizza in all of the city.

    • The White Fresh Tomato pizza, which is served alongside the normal Old Forge pizza and has thinly sliced tomatoes, garlic and a sprinkle of Romano and other cheeses, is a particular favorite here.
    • 5.
    • Maroni’s — Scranton, Pennsylvania Maroni’s Pizza is a well-known and well-liked establishment in the region.
    1. A bit different from the norm, their Old Forge-style pizza has a little heat to it and the American cheese is frequently burnt on top, which is how many locals want their pizza baked.
    2. I like to get Maroni’s pizza with additional sauce and hand-cut pepperoni, but you may customize yours whatever you like, including adding mozzarella cheese if you want.
    3. 6.

Mary Lou’s – Old Forge & Blacksmith Mary Lou’s Pizza, which is located on Dunn Avenue in Old Forge, is a pizza that does not receive as much attention as the other pizzerias on Main Street do.They are only open three days a week and only serve pizza till they have run out of the day’s supply of pizza. In addition to serving a fresh and colorful Old Forge Red pizza, their Fresh Tomato Pizza is really delectable.I recommend ordering one of everything since Mary Lou will sometimes offer you a bulk discount if you buy two or more of the same item at the same time.

    • The Old Forge is the seventh stop on the list.
    • Elio G’s pizza may be the most distinctive on our list since he puts the most flavor into each slice, due to a rich and powerful sauce that is filled with onions and herbs.
    • Elio G’s pizza is also the most affordable on this list.

This is a takeout-only company, and you must place your order by phone in advance because to the high demand and lengthy wait periods, which often exceed an hour.In order to ensure that you get the time window that you want, it is important to contact as soon as they open to arrange your order.Shrimp and peppers are a popular topping choice at Elio G’s, as well as at all of the other Old Forge businesses.

It may seem like an odd mix, but the people who live in the region swear by its effectiveness!Elio G’s is a great place to go if you want flavor-packed pizza.Revello’s – Old Forge (number 8) If you ask a NEPA resident about Old Forge pizzerias, it’s likely that Revello’s Pizza Cafe will be the first location they mention.Revello’s is well-known in the region for its initial site on the main drag in Old Forge, but the company has swiftly expanded to include other stores in Kingston, as well as the Mohegan Sun Arena, Lackawant to County Stadium, and the Marketplace at Steamtown, among other destinations.Cheesesteak tourism destinations like as Geno’s and Pat’s are located in Philadelphia, while Revello’s is the NEPA pizza equivalent.A brief visit to the rear is highly recommended to witness how their pizzas are created and even more curiously how they are cut—with a gigantic pizza machete, which is also included in their logo!

    • The ninth restaurant is Lou’s Pizza in Olyphant.
    • Located in Olyphant, Lou’s Pizza ″By the Bridge″ is another little pizza that I first discovered by taking a false turn across ″the bridge,″ which is where they are located.
    • Thank goodness I did since their pizza is outstanding and they have a large following of customers.
    • Prebaked and individually wrapped slices of pizza are available at Lou’s pizza restaurants, which can be found throughout NEPA in gas stations and markets, making them easy and quick to consume.
    • However, while there is no alternative for a freshly baked pan of pizza, the room temperature slices make for a nice snack when you’re on the road.
    • Ferri’s Pizza & Pasta – Moscow This third-generation, family-owned business, which began in Old Forge in 1936 and is perhaps best known for its Potato Pizza served during the Lenten season, has been in operation since then.
    1. The restaurant pays homage to the region’s coal-mining heritage by including a little coal museum within the dining room and entranceway of the establishment!
    2. Although the high-quality Old Forge pizza is reason enough to visit Ferri’s Pizza, the opportunity to observe what life was like in the coal mines more than half a century ago makes Ferri’s Pizza a must-see destination in Pennsylvania!
    3. Pizza at Old Forge is certainly a one-of-a-kind experience that should be experienced with friends and family around a table.
    4. In this top ten list, all of the restaurants are family-owned, local enterprises that serve as the backbone of their respective communities, notably in the town of Old Forge itself.

    Signature Pizza

The Lackawant any County town of Old Forge is known for a trademark dish that is considered to be the oddest form of American pizza ever created.Although they bear little similarity to the well-known Neapolitan recipe, Old Forge pizzas are rectangular in shape, and slices are referred to as cuts.Their dough is quite thick and has a faint resemblance to Sicilian pizza in appearance. They are available in red or white, with a single or double crust.Their flavor is more American than Mediterranean, with a bright sweet tomato sauce, mild cheese, and a distinctively puffed-up crust that occurs because the pies are cooked in pans that have been oiled with peanut oil before baking.

    Where to Order

    • Visiting Salerno’s after 5:00 pm is recommended if you wish to order the well-known ″White Pizza.″ If you’re seeking to eat the renowned Old Forge style ″White Pizza″ during lunchtime, you’ll have a difficult time finding it. This pizza is made up of two crusts with a combination of different cheeses between the layers of dough
    • This sort of pizza is exclusively available for supper at popular establishments. Genotti’s, which operates out of a convenience shop, offers their great ″White Pizza,″ as well as other pizzas, throughout the day
    • Pizza Perfect, which operates out of a convenience store, sells their superb pizzas by the cut, exactly like the other businesses on our list. Our favorite of their pizzas was the ″White Pizza,″ which was topped with ham, onions, and double cheese. These Old Forge style pizzas are delicious, thanks to their crunchy crust.

    Genotti’s

It’s the crust that sets Genotti’s pizzas apart from the others in Old Forge, Pennsylvania: it’s as thick as Texas toast, light and airy, and it has a faint crunch to it. Pizza for breakfast is also available. For further information, please see the following link:

    Pizza Perfect

In this establishment, pizza is offered by cut, not by slice, and while it appears to be bargain-basement, don’t be fooled by appearances. It is great; you have to try it to believe it. For further information, please see the following link:

    Salerno’s

Light, airy crust and Italian-American toppings combine to create Salerno’s Old Forge-style white pizza, which is a Pennsylvania speciality available only at the restaurant. Try the double-cruster for a change. For further information, please see the following link:

Pizza Crawling Through the Pizza Capital of the World: Old Forge, Pennsylvania

It should be noted that this content may contain affiliate links. If you purchase something via one of these links, we will receive a small commission at no additional cost to you.One of the things I enjoy about traveling across Pennsylvania is discovering the many types of local delicacies that can be found in different parts of the state.Everyone agrees that the greatest cheesesteaks can be found in Philadelphia, the best pierogies can be found in Pittsburgh, and the best shoofly pie can be found in Lancaster County, despite the fact that they can be found in other places. You might want to include Old Forge pizza on this list as well.

After all, Old Forge is known as the ″Pizza Capital of the World″ for a reason. The borough of Old Forge, located only a few miles outside of Scranton, has a population of only 8,000 people living inside its three-square-mile boundaries. However, with more than 15 pizza eateries located inside the boundaries of the borough, it is definitely a pizza lover’s paradise. To be completely honest, I had never heard of Old Forge pizza until I was invited to test it out for myself.

I, on the other hand, had never turned down pizza before and was eager to see what all the hype was about.Given the abundance of pizza shops within walking distance of one another, a pizza crawl is a fantastic opportunity to sample the many different flavors of Old Forge.Bob Mulkerin, the mayor of Old Forge, served as my tour guide for our excursion within the town.Mulkerin began by pointing out a significant distinction between Old Forge pizza and normal pizza: the vocabulary used to describe each.

Old Forge pizza is primarily divided into two categories: red and white.Red pizza is more conventional in style, yet it has a crisp and airy dough with a light quantity of sauce, as opposed to white pizza. When compared to white pizza, calzones and garlic bread have joined forces and filled themselves full of cheese to create one delicious dish.It is not customary to order a slice of pizza while ordering a cut of pizza (just like Altoona-Style Pizza in Blair County). And, instead of a pie, you opt for a basket of goodies. If you behave in any other way, it is a dead giveaway that you are not a local.

During the evening, we made our first visit at Salerno’s.We ordered multiple cuts of both red and white pizza at each of the four locations where we stopped on the pizza crawl. To be really honest, the red pizza looked a lot like the pizza that I used to get from the cafeteria at my old high school. However, it only took one bite for me to realize that this pizza was nothing like the pizza I used to eat in high school. The pizza itself, in reality, was significantly different from the style of pizza served at the borough’s lone Dominos Pizza location. The white pizza was the next thing I tried.

The garlicky bread that covered the cheese inside was considerably denser than the red pizza, and it was nothing like what you’d expect from a ″pizza,″ either. But it was still rather tasty, and I was looking forward to seeing what the remainder of our visits had in store for us.As we made our way around Old Forge, Mayor Mulkerin told me a little more about the town’s history, as well as about the town’s famed pizza. Many of the families in Old Forge had all come from Felitto, Italy, a tiny town near Naples, and had settled there because of the area’s once-thriving coal industry.

In the 1930s, Ms.Ghigiarelli would prepare pizza for the mine employees who came to her house to play cards, but she didn’t have any circular baking plates at the time.Instead, she made use of a rectangular baking dish and the ingredients she had on hand, and the result was the creation of Old Forge pizza.

    • After that, we went to Cusumano, a more upmarket restaurant on Main Street, for our final stop on the trip.
    • We placed another order for slices of both red and white meat in this location.
    • During our time spent waiting for our pizza, Mulkerin casually revealed that, according to local legend, the hit on Jimmy Hoffa was sanctioned from within this establishment.
    1. This place had a distinct flavor that shocked me at first.
    2. My piece of red was crunchier and served with a sweeter sauce, but my cut of white was topped with onions, which gave a lovely touch of flavor.
    3. A cheesier red was available at our next visit, Arcaro and Genell; their white was enhanced with pepper and rosemary, which was a delightful surprise on a cold night.

Arcaro & Genell restaurant in Old Forge, Pennsylvania, felt like the type of place you’d go for a wonderful night on the town if you were looking for something similar to Cusumano. Our final visit of the evening was across the street at Revello’s, which is consistently rated as the best pizza café in the city.My knowledge of the town of Old Forge grew as I waited for our pizza to be delivered.Despite the fact that there are so many pizza eateries in such a tiny space, they are not actually in competition with one another.

    • While locals have their favorites, you won’t find eateries competing for your business based on your palate.
    • In fact, they have been known to exchange ingredients with other restaurants when they are in need of them.
    • And, to be honest, they aren’t required to compete against one another at all.

A Friday or Saturday night in Old Forge, and you’ll be lucky to locate a parking place much alone a table for your group. It’s fairly unusual to see folks traveling from restaurant to restaurant looking for a place to dine since they can’t find anything. But this does not rule out the possibility of returning customers finding their preferred eatery when they return to the region.

In 2008, while running for the Democratic nomination, Hilary Clinton, who had spent part of her youth in the Scranton region, stopped by Revello’s Cafe Pizza in Old Forge, Pennsylvania, for a couple slices of pizza.Revello’s, in contrast to the other pizza cafes we had visited, had the feel of a 1950s diner, with local images on the walls, some of which featured the proprietors of other local pizza cafés.The red pizza at this location was saltier than the ones I’d had so far, and it had a very thin, crispy crust, but the white pizza here was just as good as it had been at the previous three locations I’d visited.A little painting on the side of Revello’s proclaims Old Forge to be not only the ″Pizza Capital of the United States,″ but also the ″Pizza Capital of the World,″ according to the mural. The term may have been self-proclaimed, but the feeling of community that characterized the town, mixed with their excellent and distinctive pizza, left me with little doubt that it was a very appropriate moniker….The great borough of Old Forge is without a doubt the best spot to come if you’re looking for something different to eat while visiting Scranton, and you shouldn’t miss out on sampling some of the world-renowned Old Forge pizza while you’re there!

    • Note: The Lackawant to County Visitor Bureau provided me with a complimentary meal experience in Old Forge.
    • The thoughts presented, on the other hand, are entirely my own.
    • After all that pizza, do you need something to drink?
    • Visit the Susquehanna Brewing Company for some tasty brews.
    • Alternatively, you might take a trip around Steamtown National Historic Site, Falling Springs Falls, or a visit of the Lackawant to Coal Mine.

Old Forge-Style Pizza Is a Cut Above the Rest

It takes a lot of arrogance for a town of 8,300 people to proclaim itself the ″pizza capital of the world,″ but the pizzeria owners in Old Forge, Pennsylvania, know precisely what they’re doing when they name themselves that.In addition to having a distinct pizza style, they have a strong feeling of community and camaraderie, as well as a solid confidence that their pies are on par with anything you’ll find a couple of hours away in that other pizza hotspot, New York City.A two-word answer from Angelo Genell, proprietor of the famed Arcaro & Genell, when you ask him who makes the greatest pizza in town—and neither Arcaro nor Genell are mentioned in his response—will satisfy your curiosity.″Old Forge,″ he replies, a smirk on his face as he recalls his hometown.″I believe we’re all in terrific shape.

It will be a bit different at each location, but you will not be let down. You won’t find a terrible pizza in this establishment.″

Mary Lou Verdetto (middle) and son Joe Janesko (second from left) of Mary Lou’s Pizza carry on an Old Forge tradition of treating every meal like a family affair. Here, they share a white and red pizza with local airmen.

For the town’s pizzaioli, the word ″competition″ is nearly a bad word. Many of them grew up together and frequently lunch at the establishments of their friends. As a result of the close-knit nature of the Old Forge pizza community, the proprietors all banded together years ago to develop the ″pizza capital″ slogan, a stroke of marketing genius that draws foodies from all over the country—and the world—to this former coal-mining town in the Appalachian Mountains. In Old Forge, says Jim Mirabelli, who writes about the northeast Pennsylvania pizza scene on his renowned NEPAPizzaReview.com site, ″there’s no better fellowship in the world.″ ″It was all of these pizza entrepreneurs that got together and decided to brand the whole thing. As a result, they came up with the concept of ‘We are known as the Pizza Capital of the World.’ They everyone contributed a few dollars to get the branding process started.

The truth is, I’m sure there was a bit more to it than that, and perhaps a few adult beverages along the way, but that was the core of it.″ ″The key to this dish is the cheese combination.″ A significant portion of it is processed cheese.Coopers, cheddars, American, and even a block will be on display.″I’m only assuming because no one has ever informed me what cheese mix they use,″ says the author.— NEPAPizzaReview.com’s Jim Mirabelli says:

    Similar Yet Markedly Different

Sporting the company T-shirt, Mark Genell of Arcaro & Genell shows off a fresh-made tray of his famous white pizza.

It also doesn’t hurt that Old Forge has a long and illustrious pizza history that dates back to at least 1926, when the matriarch of the Ghigiarelli family, who owned a local tavern, reportedly began serving pizzas baked in rectangular metal pans to coal mine workers who’d come in to unwind and play cards after a long day’s work in the coal mines. When other business owners joined into the act, they took inspiration from Grandma Ghigiarelli’s aesthetic and infused it with their own unique twists.Mirabelli claims that nowadays, every pizzeria in Old Forge serves a pie that is both comparable and distinct from the others.″Some people may get their crust from a local bakery (Agostini’s Bakery), while others will create their own. Some sauces include more onions than others, and some sauces are chunkier than others.″ Old Forge pizza is frequently compared to Sicilian-style pizza, although Mirabelli points out that there are considerable variations between the two styles.

″A Sicilian has a wider bubble pattern, but it’s more compacted and spongier in Old Forge pizza,″ he explains.″Another difference is that the crust is thicker in Old Forge pizza.″ With a bread-like crust, chewy middle, and crispy bottom, the Old Forge style is one of the most popular pizza styles. As Mirabelli explains, ″a lot of them get crisped up right at the end.″ ″They’ll take it out of the pan and place it on the brick, which results in a very small crispness on the bottom.″ When it comes to flavor, the sauce is often a touch sweet and chunky. This is not like the New York-style sauce, which consists solely of minced plum tomatoes, according to Mirabelle.

″It’s more like a chunkier spaghetti sauce that’s normally sweeter and has a stronger onion taste,″ says the chef. It’s a thick and hearty sauce.″You get a taste of it right away.″ Typical toppings for a white Old Forge pizza include a top and bottom layer of dough with large, gooey globs of cheese and other contents in the center of the pie.In reality, it is the cheese that distinguishes each individual restaurant’s pie.

Every business has its own distinctive cheese mix, and it’s the one thing they all have in common: they’re all competitive. In response to a question about their ideal cheese combination, Old Forge’s pizza makers will hem and haw before politely declining to provide an answer.″The key to this dish is the cheese combination,″ Mirabelli explains.″A lot of it is manufactured cheese,″ says the author.Coopers, cheddars, American, and even a block will be on display.Due to the fact that no one has ever disclosed what cheese mix they use, I’m only assuming.

There isn’t a recipe that I’m aware of.It’s most likely something in the owner’s brain. Each mix has its own distinct flavor and delivers a variety of flavors. That’s actually what makes the pie, in my opinion.″

    Some Things Never Change

Old Forge even has its own pizza language, which may be found here.Even if the people in the town are courteous, they will look at you strangely if you request a slice of pizza.″Cut″ is the appropriate term here.A ″tray″ is the term used to refer to a complete pie.The pizzerias, like everyone else, have their own unique idiosyncrasies.

The pies are chopped with a large pizza machete at Revello’s, which was started in 1967 and is owned by Patrick Revello.Elio G’s, on the other hand, is most renowned for its shrimp and pepper mix of toppings, which is strangely enough. In Arcaro & Genell, friends and family members typically enter through the kitchen entrance at the back of the store.Additionally, Old Forge pizzerias enjoy tremendous success even beyond the borders of northeastern Pennsylvania.

Revello’s is one of numerous pizza restaurants that transport their pizzas overnight to customers all throughout the country. The Revellos have been doing it for the past five years, according to Revello. For only one week over the Christmas holiday season, we mailed out over 150 orders, averaging around three trays each purchase.″There isn’t a single state where we don’t transport pizza.″

A white Old Forge pizza might consist of a top and bottom layer of dough with big, gooey globs of cheese and other fillings in the center.

In other words, the eateries are slow to adapt to new situations. Some, such as Arcaro & Genell, have minimal or no presence on social networking platforms.″It’s something we’re trying to combat,″ Genell adds with a grin. Some of the better-known Old Forge-style shops in nearby communities, such as Lou’s Pizza in Olyphant (whose cuts can be found in gas stations and stores in the area) and Ferri’s Pizza in Moscow (which has been in business since 1936), use Facebook but do not have a website, as do some of the smaller shops in Moscow.Another feature that will (hopefully) never change is the sense of belonging that exists among the proprietors of Old Forge’s pizzerias.

The owner of Revello’s restaurant, which has images of himself with fellow restaurateurs such as Genell, adds, ″At one point or another, we all lived above our restaurants.″ I remember going to sleep to jukebox music, or completing homework while sitting at a booth, and it was just the way I grew up.Mary Lou Verdetto, owner of Mary Lou’s in Old Forge since 2001, agrees with this assessment. As she puts it, ″we truly don’t compete.″ ″They’re someone we know.″ Everyone’s pizza is unique, with a variety of cheeses and sauces to choose from.″There isn’t any competition,″ says the author.

The American pizza capital you’ve never heard of

The first place that comes to mind when you hear the phrase ″Pizza Capital of the World″ is…Is it possible to go to Naples, Italy?Brooklyn?According to some, the little community of Old Forge, Pennsylvania, is the answer.(You’re forgiven for wondering, ″huh?″ at this point.) Despite the fact that the claim was made by the establishment itself, Old Forge has earned a solid reputation for its pizza.

Located in Lackawant any County (five miles from Scranton) in Northeast Pennsylvania, the old mining town of around 8,000 people has a long history of coal mining and textile mills, but what it is most known for current days is its distinctive type of pizza.Instead of New York-style, Neapolitan, or deep dish — or any other style you may be familiar with — they have developed their own form of pizza that is truly unique.Ghigiarelli’s is widely regarded as the birthplace of the kind of pizza today known as Old Forge pizza.Apparently, in 1926, Grandma Ghigiarelli served a rectangular pizza to the miners who used to congregate at the tavern she and her husband owned and operated with their son.

It was an immediate success.Old Forge pizza is now available at more than a dozen pizza cafés (as they’re known in the area) along Main Street in the town.Old Forge pizza is distinguished by a few significant characteristics.First and foremost, a full pizza is not referred to as a pie but rather as a tray – the pizza is baked on rectangular metal pans rather than pieces, and there are no slices, only cuts.

Since 1962, Angelo Genell’s family has owned Arcaro & Genell, one of the town’s most well-known pizza shops.″Sometimes people call and order a pie, and we ask ‘Do you want apple or blueberry?’″ laughs Angelo, whose family has been in the pizza business since 1962.Old Forge pizza has a dough that is lighter than a conventional thick crust, crispy on the bottom with a chewy interior, and made with fresh ingredients.Pizza at Old Forge is available in two varieties: red and white. In the case of red sauce, the sweetness is enhanced by the addition of sliced onions sometimes.Based on the restaurant, the cheese blend includes mozzarella, American, and cheddar cheeses as well as other varieties.

A white pizza is stuffed and has a layer of dough on the top and bottom to hold it together.Ordinarily, herbs and thin slices of onion are used to cover the top layer of the pizza crust. There is no sauce on the inside; instead, there is a mountain of cheese and whatever other fillings you desire, such as spinach or broccoli. With so many places to get pizza you’d think the cafes would be competitive. Not so.“All the places make really good pizza,” says Genell.

“You’ll have people buy pizza on Friday from one person, on Saturday from somebody else, and on Tuesday from somebody else. There’s not a bad pizza in Old Forge.” Get a sneak peek inside some of Old Forge’s best pizza cafes in the gallery above, and celebrate more of the country’s pizza capitals below.
