    In a small microwave-safe bowl, whisk together the rice vinegar, sugar, and salt until smooth.Microwave for about 1 minute, or until the sugar and salt are completely dissolved.Pour the sauce over the rice and continually toss the rice for 5-7 minutes, or until the rice is cool to the touch, before serving.

    Allow to sit for 30 minutes covered with a moist towel before using.

    To Make the Rolls 

    Wrap a sushi rolling mat with plastic wrap before using it (this will help keep it clean).Lay a sheet of nori on the rolling mat and roll it up.As you press the rice into the mat, be sure to get all the way to the edges on three sides, but leave approximately 1 inch of exposed nori on the side that is furthest away from you.Put some carrot, cucumber, and avocado slices on the nori on the side nearest to you to make a colorful salad.Begin wrapping the Nori up over the filling, starting from its closest side, and continue rolling (as tightly as you can) until you reach the end of the rice.

    However, in Japan, we do not traditionally gather with family and relatives for Christmas, preferring instead to do so on New Year’s Day or during the first few days of the New Year’s celebrations.As a child growing up in Japan, I was never a huge lover of Osechi Ryori (Traditional Japanese New Years Meal, ), therefore I was shocked to get so many requests for traditional New Year’s cuisine dishes from the readers.A couple of my favorite meals are Sweet Rolled Omelet (Datemaki) and Mashed Sweet Potatoes with Candied Chestnuts (Kurikinton), but my favorite is my mother’s Saikyo Miso O-zoni (KYOTO-STYLE SHIRO MISHI SOUP FOR NEW YEARS), which she makes every year.

    While the holidays and New Year’s Eve are still a few weeks away, I thought I’d offer these Cucumber Wrapped Sushi, which may be served as an appetizer for your holiday party or any other get-together.In Japanese, this style of sushi is referred to as Gunkan or Gunkan Maki.Gunkan () is a Japanese word that means ″battleship,″ and the term stems from the oval form of the ship.Gunkan sushi is often made up of nori seaweed wrapped around a variety of toppings such as salmon roe (ikura), sea urchin (uni), and broiled eel (unagi).

    To Prepare Fillings

    • Prepare the tuna by dicing it and gently marinating it with scallion, soy sauce, and sesame oil
    • Cucumber should be sliced into long, thin strips with a peeler.

    To Assemble

    • Place the shiso leaves on a serving plate and set aside. Place a cookie cutter on top of a shiso leaf after dipping it in a dish of water (to prevent the rice from sticking to it). Sushi rice should be stuffed halfway into the cookie cutter, and the cutter should be removed carefully. Using one strip of cucumber slice, roll the sushi cylinder to determine the diameter of the circle.
    • Knife through the end of the cucumber slice, making incisions as seen in the photo below. You may now interlock the strip of paper around the rice.
    • Fill the cucumber-wrapped sushi with your preferred toppings and serve immediately. I use a cucumber cup to hold amaebi (sweet shrimp), and I arrange a few of pieces from the outside corners to the center so that it resembles a flower.
    • Sashimi-grade fish should be sliced perpendicular to the muscle (the white line seen on the fish) and placed a few pieces in the cucumber cup.
    • Fill the cucumber cup halfway with the tuna mixture. Add lemon slices and kaiware daikon radish sprouts to finish the meal. Serve as soon as possible.

    I don’t advocate storing sashimi-grade fish and shrimp for more than 24 hours in the refrigerator. Keep them refrigerated until you’re ready to serve them.
