My Favorite Vegan Pizza

Pizza night, how I love thee.It’s something to be treasured.Pizza is something we eat at least once a week in our household.

And if anything terrible occurs during the week (for example, we run out of Netflix episodes), pizza night will be held on Wednesday as well.Because life is short and we enjoy pizza, and we aim to consume it in its entirety.Often.

Making the decision to give up my favourite vegetarian pie has been one of my most difficult challenges since being entirely dairy-free.Despite the fact that I am not a huge cheese enthusiast, pizza would just not be pizza without a generous coating of mozzarella and a sprinkle of parmesan atop the crust.You know what I mean?But, the persistent emotions of pain it would bring made it not worth it to me.Because of this, John and I decided to review our weekly pizza routine and began preparing each other’s pizzas at home – one without cheese for me and one with cheese for John.Thank heavens there is a 1-minute, DIY substitute to parmesan cheese that I can use instead.

  • 1/2 of a Trader Joe’s garlic-herb pizza sauce (or 1/2 of this gluten-free sauce recipe)
  • 2 tablespoons each dried or fresh basil, oregano, and garlic powder
  • 1/4 teaspoon sea salt
  • 1/2 cup each red, green, and orange bell pepper (loosely chopped)
  • 1/3 cup red onion (chopped)
  • 1 cup button mushrooms (chopped)

SAUCE

  • 1-quart can tomato sauce* (organic whenever feasible)
  • 1/2 teaspoon each dried or fresh basil, oregano, garlic powder, and granulated sugar
  • 1 15-ounce can tomato sauce* (organic whenever possible)
  • 1/4 teaspoon sea salt (adjust to taste)
  • Preheat the oven to 425 degrees Fahrenheit (218 degrees Celsius), with a rack in the centre of the oven.
  • Heat a big skillet over medium heat until it is hot. Once the pan is heated, add 1 tablespoon olive oil (amount as specified in the original recipe / modify if the batch size is changing), the onion, and the peppers. Season with salt and herbs, then mix well. Cook for 10-15 minutes, stirring occasionally, until the vegetables are tender and slightly browned, adding the mushrooms in the last few minutes. Remove from consideration
  • Prepare the sauce by combining the tomato sauce and spices in a mixing dish, then seasoning with salt to taste. Season with salt and pepper to taste. Make a mental note to put it away. Take note that if you are using tomato paste, you need thin it with water until you achieve the proper consistency.
  • To make vegan parmesan, first blitz raw cashews, sea salt, nutritional yeast, and garlic powder in a food processor until they are the consistency of fine meal (if you haven’t done so before). Transfer to a jar and store in the refrigerator to keep it fresh
  • Roll out the dough onto a floured surface and move to a circular baking sheet lined with parchment paper. In order to get the crust to crisp correctly, you’ll want to put the pizza directly into the oven WITHOUT the parchment paper. Any round object will do because it’s not going into the oven (I use a wood board for this).
  • Add desired quantity of tomato sauce (you’ll have leftovers, which you can keep in a jar for later use), a sprinkle of parmesan cheese, and the sautéed vegetables on top
  • serve immediately.
  • Making use of a baking sheet, carefully move the pizza (WITHOUT the paper below) onto the oven rack. Because of the parchment, it will be less likely to fall through the crack.
  • Alternatively, bake for 17-20 minutes, until crisp and golden brown.
  • Sprinkle the remaining parmesan cheese, dried oregano, and red pepper flakes on top of the dish. Leftovers stay nicely, and there is no need to reheat them! It’s delicious to eat cold pizza.

  3. Additionally, it enhances the flavor of the dough.
  4. Ensure that the sauce is thoroughly cooked.
  5. This ensures that the cheese is melted and uniformly distributed.
  6. Everything will be cooked thoroughly, including the toppings.
